Pour croutons into a 9 inch pie pan. Slice tomatoes and layer on top of the croutons. Mix together green pepper, eggs, milk, salt, pepper, paprika, basil, and mustard and pour over tomatoes and croutons. Sprinkle cheese on top. Bake at 350 degrees for 40 minutes or until browned and puffy.
NOTE: You can add ham, chicken or bacon (chopped and cooked) to this to make it more substantial. Just mix the meat in with the croutons then follow the directions the same as before.
