Potato Gateau (Italian Potato Cake) - Recipe

Bring water and 2 sticks margarine or butter to a boil in a large saucepan on top of stove. Shut flame and add potato flakes and mozzarella. Stir well. Add beaten eggs, parsley and cheese next. Stir well again. Add salt and pepper to taste.

Next, butter well and bread crumb the bottom and sides of a 9" x 13" oven proof baking pan or dish (ex. pyrex). Add mixture, flatten out. Sprinkle top with more bread crumbs. Dot top with remaining butter or margarine. Bake in 375° oven for 45-50 minutes till golden brown on top. Serve hot. Enjoy!

-1 box instant mashed potato flakes (14 ounce box)
-3 sticks Butter or Margarine
-2 pounds mozzarella cheese (cubed)
-5 eggs (large)
-2 tablespoons chopped parsley
-1/2 cup grated Romano cheese
