| | Directions | | Place jalapenos on a sheet pan. Bake at 350° for 10 minutes, on middle rack. Remove from the oven and cool. Turn broiler on medium. In a medium sauté pan, heat the oil. Add the sausage and cook for 5-7 minutes. Add the onions, peppers and garlic; cook to soften, about 5 minutes. Remove and place in a large bowl. Cool to room temperature, then add cream cheese and Parmesan. Mix ingredients thoroughly and season with salt and pepper. Place about 1 T of mixture into each jalapeno half and top with 1/2 tsp Mozzarella cheese. Place sheet pan of stuffed jalapenos in oven and broil until cheese melts. Also great for stuffed mushrooms. |
