Slice and layer vegetables in a gallon jar or large glass bowl with a lid. Sprinkle Celery Seed over the vegetables.

In another bowl, stir together sugar, vinegar and salt until the sugar dissolves. Pour over the vegetables, cover and refrigerate. They are "cured" & can be served after 3 days. The vegetables will shrink so that they are all in the brine.
