| | Directions | | Preheat oven to 350° F. Beat the eggs in a large mixing bowl. Beat in remaining ingredients (except sweet potato), stir in sweet potatoes. Pour into a buttered 2 quart soufflé or baking dish. Bake until firm and golden brown, about 2 hours. Let stand 20 minutes before serving. |
