For marinade: combine first five ingredients in a mixing bowl. Add vegetables to marinade and toss to coat. Cover and chill; add rice and toss lightly to combine. Makes 8 servings.
-3 teaspoons Heinz apple cider vinegar

-2 tablespoons chopped parsley
-1/2 teaspoon sugar
-1/2 teaspoon Salt
-1 cup quartered cherry tomatoes
-1/2 cup sliced ripe black olives
-1/3 cup chopped red onion
-1/2 cup chopped cucumber
-1 cup feta cheese
-2 cups white or brown cooked rice, (no added butter or salt), cooled to room temperature
