Boil water and butter in saucepan, add sifted flour and stir mixture constantly until smooth. Cook over medium heat until mixture leaves sides of pan clean, beat 2 minutes, stirring constantly. Remove from heat and allow to cool slightly. Add eggs 1 at a time, beating well after each addition. Add grated rind and blend. Drop by tsp. on ungreased cookie sheet 2 inches apart and bake in 350° oven till puffs are light (about 30 minutes). Remove from oven, cut opening in middle of top, cool thoroughly and fill. Decorate tops with candied cherries.

-1/2 teaspoon gr lemon rind
-1/2 teaspoon gr orange rind
-24 candied or maraschino cherries
