| | Directions | | In a large bowl sift the flour, baking powder, baking soda, salt, and cinnamon. Set aside. In a separate medium-sized bowl, cream the butter/margarine and sugar using fingertips. Add the eggs and mix until smooth. Then, add the milk and mashed bananas. Mix well. Fold in the liquid ingredients into the flour mixture until well combined. Line muffin tin with paper liners. Fill the batter two-thirds of the way for each muffin. Bake in a preheated 345 degree oven for 20 to 25 minutes. Yields about 12 muffins. |
