| Directions | Bring 3 C. water and 1/2 T. salt to a boil. Add orzo; cook until tender. Drain, rinse and cool. In a large bowl, combine orzo, feta, spinach, onion and tomato. In a small bowl, mix olive oil, lemon juice and pepper. Add dressing to pasta mixture. Chill. Serves 8 - 10. |
