Directions
Mix oil and flour in iron skillet to make roux. Cook until medium dark brown, stirring mixture constantly. This takes approx 40-50 min.on top of stove. When done put roux into 4 qts water on med heat. Stir til roux dissolved. Add all other ingredients except rice and cook for 1-2 hrs, til meat is tender. Serve over steaming rice.

-3/4 cup cooking oil
-1 cup flour
-4 quarts water
-2 onions chopped
-2 stalks celery, chopped
-1 cup bell pepper
-1 cup green onions chopped
-2 pounds sausage
-1 chicken,squirrel, or venison
-1 tablespoon red pepper
-1 tablespoon Black Pepper
-2 tablespoons salt
-3 tablespoons File gumbo seasoning or season to taste
- rice, cooked
