| | Directions | | Mix oil and flour in iron skillet to make roux. Cook until medium dark brown, stirring mixture constantly. This takes approx 40-50 min.on top of stove. When done put roux into 4 qts water on med heat. Stir til roux dissolved. Add all other ingredients except rice and cook for 1-2 hrs, til meat is tender. Serve over steaming rice. |
