Shred or slice very thinly the first 4 ingredients, or use a food processor.
Boil the remaining ingredients together and pour the hot liquid over the shredded veggies and press down with a weighted plate. Drain in colander before serving. Any leftovers can be returned to the liquid and kept several weeks in the refrigerator.
