| | Directions | | In a large kettle combine beef shanks, water, beef bouillon cubes & bay leaves, Bring to a boil reduce heat, simmer covered for 1 1/2 hours or until meat is tender. Remove shanks & bay leaves. Cool stock, skim fat from surface, cube meat. Add meat, tomatoes, vegetables & thyme. Simmer covered for 20 minutes. Add macaroni cook an additional 10 minutes or until macaroni is tender. |
