Mock Egg Salad (Tofu) (Vegetarian) - Recipe

Note: All measurements are approximated or adjusted to taste.

Combine tofu, carrot, parsley, and walnuts. Set aside.

Mix mayonnaise, tahini, olive oil, and tamari (can be processed in a blender). Add seasonings (lemon pepper, salt turmeric, sweetener) to taste.

Mix tofu mixture with dressing.

If mixture is very dry, add a small amount of Cider, Apple Juice, or other Creamy Dressing.


Add Mustard, Basil, or Yeast Flakes.

Other creations: Add Celery (finely cut) or Olives.

-8 ounces firm tofu (finely chopped or coarse-mashed)
-1 pound carrot, grated
-1/4 cup finely chopped parsley
-2 tablespoons chopped walnuts
-3 tablespoons mayonnaise
-2 tablespoons tahini
-1 tablespoon olive oil
-1 teaspoon Tamari (Soy Sauce)
-1/2 teaspoon lemon pepper
-1/4 teaspoon crazy salt
-1/8 teaspoon ground turmeric
-1/2 teaspoon sugar or honey
