| | Directions | | Put the wine vinegar, lemon juice, salad oil, salt and pepper to taste in a jar and shake well and chill. Meanwhile, tear fresh, washed spinach leaves into bite size pieces (save stems for the horses). Soak spinach pieces in ice water for 1/2 hour. Drink the wine. Drain the spinach pieces and place in deep bowl then toss with the chilled dressing. Add minced hard-boiled egg, crisp crumbled bacon and Romano cheese; toss again. Feed the spinach stems to the horses. Serve chilled salad to family or guests. |
