| | Directions | | Bring water or broth to a boil. Add quinoa to boiling liquid; reduce heat and simmer, covered, for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Cool to room temperature. Combine ingredients for dressing in small bowl and mix well. Stir into quinoa. Within 2 hours before serving, add peas, peppers, and scallions or onions to quinoa. Mix gently to combine. Serves 4. |
