| Directions | Mix sugar and flour; add egg yolks; add milk. Cook in heavy boiler until thick. Stir in butter and vanilla and 1 c. coconut to custard. Pour into baked pie shell. Beat egg whites with 6 T. sugar, 1/4 tsp. cream of tartar and a pinch of salt to make meringue. Stir in a little coconut and spread over pie custard. Sprinkle more coconut over the top of the meringue. Bake at 375°F until golden brown. |
