Melt in double boiler and keep warm, caramels and evaporated milk. Combine apples, quick tapioca, lemon juice, water, sugar, and butter for apple filling. Cook 10 to 15 minutes. Put apple filling in pastry lined pie pan. Bake for 15 minutes. Take from oven. Cover with carmel sauce over filling. Return to oven for 20 minutes. Cool. Combine cheddar cheese and cream cheese for cheddar fluff sauce. Beat until light and fluffy. Serve with pie.
-1/2 14 ounce pkg carmels
-1/2 cup evaporated milk
-6 cups apples, sliced thin
-2 or 3 T quick tapioca
-3 tablespoons lemon juice
-1 cup water
-1 cup Sugar
-1 tablespoon butter
-1 cup Cheddar Cheese, grated
- 3 oz pkg cream cheese
