Mix and knead above ingredients for 5 minutes. Seal and store in refrigerator. Knead 5 minutes daily for 3 days (day of mixing counts as first day). On the fourth day knead for 5 minutes and shape into 3 long rolls and bake on a broiler pan at 160°F for 9 hours. Use the broiler pan so the grease goes to the bottom of the pan. When done, let cool and wrap, then refrigerate.

-4 tablespoons curing salt
-2 1/2 teaspoons coarse pepper
-2 1/2 teaspoons mustard seed
-2 1/2 teaspoons liquid smoke
-1 teaspoon garlic powder
