Separate skins and pulp. Cook skins tender. Add some sugar while cooking. This might take about 45 minutes. Cook pulp tender. This does not take as long. Strain pulp. May be put in a food mill or through cheese cloth. Cook strained pulp and cooked skins together. Add rest of sugar. Add 1 tablespoon vinegar, cinnamon and nutmeg. If desired, add allspice and cloves. Pour into clean Mason jars.
-5 pounds Concord grapes (purple)
-3 pounds sugar
-1 tablespoon vinegar
-1/2 teaspoon cinnamon
-1/4 teaspoon nutmeg
-1/8 teaspoon allspice (optional)
-1 clove optional) (1/8 teaspoon cloves)
