Marinara Sauce (Sweet and Satisfying) - Recipe

Sauté onion in oil very, very slowly, 7-8 minutes. Add an ounce of water or 1/2 C. wine to create a liquid for the dry spices to absorb. Add dry oregano and dry Italian seasoning, rub between palms to bring out oils.

Increase heat slightly to medium low. Add tomato paste, crushed tomatoes, salt, pepper, sugar and stir. When sauce just starts to simmer, stir in garlic and remove from heat.

Check for seasoning. Drizzle in another Tablespoon of olive oil to finish.

To bring up to temperature, reheat sauce in microwave just before serving.

Notes: * Do not let onion get brown, it will make it bitter.

* The secret for a sweet sauce is to cook it as little as possible.

-28 ounces crushed tomatoes

-3 cloves minced garlic
-1/2 cup wine, chianti or white, optional
