Meanwhile, in a medium bowl, combine remaining ingredients.
When hashbrowns are done, turn down oven to 350 degrees F.
Pour egg mixture on top of hashbrowns.
Bake for additional 25-30 minutes.
Let set for 10 minutes before serving.
