Preheat oven to 400 degrees. Put some extra virgin olive oil on baking sheets. Beat eggs in a bowl and add a drop of milk. Clean chicken, then pound it out as you cut it up. When done, put it in the bowl with the eggs. Put the crushed crackers on a plate to coat the chicken. Push down hard to get the chicken coated on both sides. Put coated chicken on baking sheet and bake 20 minutes.
