Slice onion & green pepper into strips.

In a large skillet add vegetable oil, turn stove to medium heat. Add pork chops, onion & green pepper to heated skillet, salt & pepper. Cook until pork chops are golden brown on both sides.

Add diced tomatoes and rice; cover and simmer until rice is fully cooked.

-1 onion
-1 green pepper (large)
-1 tablespoon vegetable oil
-4 butterfly pork chops (6 ounce )
- salt and pepper
-2 cans diced tomatoes
-3 cups instant rice
