Roast Beef with Peppers - Recipe

A slow cooked roast beef that is cooked in a broth for a long time to tenderize the meat. Then green peppers are added the last 30 minutes of cooking for just the right touch.

Brown roast in 450 degrees F oven for 30 minutes.

Mix remaining ingredients except green peppers. Pour over roast. Lower oven temperature to 350 degrees F, cover and cook for 3 hours.

Add green peppers last 30 minutes of cooking time.

Best if sliced and refrigerated overnight.

-4 pounds boneless rump roast
-3 beef bouillon cubes
-3 cups water
-1 1/2 teaspoons salt
-1/2 teaspoon pepper
-1 1/2 teaspoons oregano
-1 dash garlic powder
-1 bay leaf
-2 green peppers, sliced
