| Directions | Pour vinegar over roast, top with salt and pepper. Cover and place in refrigerator for a few hours. Place in roasting pan and cover top with Dijon mustard, sprinkle with olive oil. Cover with aluminum foil and bake at 350 degrees for 2 hours. |
