| | Directions | | Cut turkey cutlets from half a turkey breast or purchase already cut. Sauté the mushrooms in a little margarine till soft; set aside. Coat the cutlets with seasoned flour. Heat oil and a little margarine in a large skillet. Fry cutlets on medium heat about 5 minutes per side. Don't overcook; they will dry out. Place a ham slice on each cutlet. Spoon on a layer of mushrooms; season with pepper. Sprinkle on a bit of parsley. Cover with a slice of cheese. Pour some hot stock on cutlets, cover the pan and cook on low heat till cheese is melted. Sprinkle with parsley and serve. |
