Macaroni Taco Casserole - Recipe

A simple casserole for all you taco-lovers. This can be made in advance and refrigerated until ready to bake. Great for weeknights. The whole family will enjoy this casserole. Serve with lettuce on the side.

Macaroni Taco Casserole Recipe
Directions
Preheat oven to 350.

Cook pasta in a large pot of boiling water until al dente; drain.

In a large skillet, cook ground beef and onion over medium heat until brown; drain.

Mix in tomato soup, diced tomatoes and taco seasoning mix.

Stir in pasta.

Spoon beef mixture into a 9x13 inch baking dish. Sprinkle crumbled taco chips and grated cheese on top.

Bake for 30-35 minutes, until the cheese is melted.

Serve with chopped green onions and sour cream, if desired.

-8 ounces macaroni
-1 pound ground beef
-1/2 cup onion, diced
-1 can condensed tomato soup (10.75 ounce can)
-1 can diced tomatoes (14.5 ounce can)
-1 packet taco seasoning mix
-1 cup crushed tortilla chips
-2 ounces shredded cheddar cheese
-2 ounces shredded monterey jack cheese
-1/2 cup sour cream (optional)
-1/4 cup green onions, chopped
