Directions
Preheat oven to 375.

In a large mixing bowl, combine ground beef, cheeses, eggs, oil, cracker crumbs, green peppers, garlic, salt and pepper and 1 cup marinara sauce. When mixed, add mushrooms if desired. Put in loaf pan or glass baking pan and cover with remaining marinara sauce.

Bake uncovered in preheated oven for 60-75 minutes. Let sit 10 minutes before slicing, serve hot.

-2 pounds ground beef or meatloaf mix of beef, pork, and veal
-1 cup freshly grated Parmesan or pecorino Romano cheese
-1 cup Mozzarella cheese, shredded
-2 Eggs
-2 tablespoons olive oil
-1/2 cup cracker crumbs or plain bread crumbs
-1/2 cup green peppers, diced
-1 teaspoon garlic, minced
- salt and pepper, to taste
-1 jar marinara sauce, divided
-1 cup mushrooms (optional)
