| | Directions | | In a small bowl, combine all ingredients except roast. Rub mixture all over roast; place in a large plastic zipping bag. Refrigerate 8 hours or overnight, turning often. Place roast fat-side up in a lightly greased large roasting pan; pour mixture from bag over roast. Cover with aluminum foil; bake at 350° for 1-1/2 hours. Uncover and bake for an additional 1-1/2 hours, or until roast reaches desired temperature on a meat thermometer, between 150° and 160° for medium. Let stand for 15 minutes before slicing. Serves 6 to 8. |
