The inner portion or heart of the stem from the cabbage palm tree, which is grown in tropical regions and temperate climates. It is off-white in color, firm in texture, and mildly flavored, tasting much like the meat of an artichoke. Hearts of palm are often used in salads or as an ingredient in cooked dishes. They are available fresh only in the areas where they are grown, otherwise they can be purchased canned in food stores. Hearts of palm may also be referred to as "swamp cabbage."
