A fish that is not actually a mullet but a member of the goatfish family. It has mild flavored, firm white meat and few bones. Characteristic of other goatfish, the red mullet has long chin barbels that look like the whiskers on a goat, which they use to locate food. Sea bass or trout can be used as a substitution for red mullet. To check the fish for doneness, use the tip of a sharp knife and cut through the thickest part of the fillet. If the fish has been properly cooked, the meat will appear opaque but will still be moist.
