Classic Turkey Pot Pie Recipe

Classic Turkey Pot Pie Recipe

Ingredients
  • 6 tablespoons unsalted butter
  • 3 pounds leftover turkey or boneless turkey breast to be cooked - cut into bite sized pieces
  • 1 teaspoon salt
  • fresh ground pepper to taste
  • 1 tablespoon fresh thyme - chopped
  • 1 tablespoon fresh rosemary - chopped
  • 1 onion - diced
  • 2 medium carrots - peeled and cut into 1/4 inch thick rounds
  • 2 cups mushrooms - sliced
  • 4 cups chicken stock - homemade or canned
  • 2 tablespoons fresh parsely - chopped
  • 1/4 cup flour
  • 1 large egg
  • 1 tablespoon water
  • 1 frozen pie crust - thawed or can use homemade
Directions
FILLING:
  • In a large skillet, melt 2 tablespoons of butter.
  • If using raw turkey breast, add to butter and season with salt and pepper.
  • Cook, turning once until lightly browned, approximately 10 minutes. Remove the turkey from the skillet.
  • If using leftover turkey, skip the above steps.
  • To the skillet add the onion, carrots and mushrooms.
  • Stir and cook until slightly tender. (Approximately 5 minutes)
  • Add 2 cups of stock, thyme, rosemary and parsley.
  • Bring to a boil, then reduce heat to low and add back into the skillet the turkey or leftover turkey.
  • Simmer for 10 minutes.
  • Meanwhile, in a small saucepan, melt the remaining 4 tablespoons of butter on medium high heat, whisk in flour to combine, then slowly add in 2 cups of chicken stock, whisking continuously, adding more liquid as the sauce thickens until all is used.
  • Add this roux to the turkey and vegetable mixture.
  • Transfer to the souffle or baking dish.
  • Allow to cool completely before putting on the crust.
  • This filling can be prepared a day ahead, cooled and covered in the refrigerator.
CRUST:
  • Preheat oven to 375°.
  • Roll out pie crust to a 12 inch circle or 1 inch larger than your baking dish.
  • You can use pastry scraps to make cut outs to decorate the top of the pie if you desire.
  • Beat egg and milk and brush around the edge of the baking dish.
  • Top with the crust and press the pastry, crimping the edges, around the dish.
  • Brush lightly all over with the egg mixture.
  • If using, place decorations on top and brush with egg mixture.
  • Using a sharp knife, cut 2-3 slits 1/2 inch long in the center of the pie for the stem to escape.
  • Bake until the top of the pie is golden brown. (40-45 minutes)
  • Serve immediately.

Cranberry Salad 10 Recipe

  • 1 package strawberry jello
  • 3 cups hot water
  • 1 can jellied cranberry sauce
  • 1 package lemon or orange jello
  • 1 cup whipped cream
  • 3 ounces soften cream cheese
Directions
Dissolve strawberry jello in 1 1/2 cups hot water, then add jellied cranberry sauce. Mold. Then dissolve lemon or orange jello in 1 1/2 cups hot water. Cool until slightly jellied. Fold in whipped cream and cream cheese. Spread over cranberry mold and chill.

  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup firmly packed brown sugar
  • 1 cup molasses
  • 2 eggs
  • 1 cup boiling water
  • Creamy Gingerbread Frosting (recipe follows)
Directions
1. Preheat oven to 350° F. Grease and flour 2 (9-inch) round cake pans. Mix flour, baking powder, ginger, baking soda and cinnamon in medium bowl; set aside.

2. Beat butter, brown sugar and molasses in large bowl with electric mixer on medium speed until well mixed. Add eggs; beat well. Add flour mixture alternately with boiling water, beating on low speed after each addition until smooth. Pour into prepared pans.

3. Bake 18 to 20 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans; cool completely on wire rack.

4. Fill and frost with Creamy Gingerbread Frosting. Refrigerate cake until ready to serve. Creamy Gingerbread Frosting: Pour 1 cup milk into medium bowl. Add 1 package (4-serving size) vanilla instant pudding mix, 1/2 teaspoon McCormick® Ground Ginger and 1/8 teaspoon McCormick® Ground Cinnamon . Beat with wire whisk 2 minutes. Gently stir in 1 tub (8 ounces) frozen whipped topping, thawed.

  • 1/2 cup butter, melted and divided
  • 3 cups cheddar cheese, grated
  • 2 cups corn flake crumbs
Directions
  • Preheat oven to 350º F.
  • In a large bowl, mix frozen hash browns, sour cream, soups, onion, seasonings, and cheddar cheese. Add 1/4 of melted butter to potato mixture. Spread into prepared baking dish.
  • Combine corn flake crumbs and 1/4 cup of melted butter and spread over top of casserole.
  • Bake uncovered for 1 hour. Serve hot.

  • 2 pounds cabbage
  • 3 carrots (medium size)
  • 1/4 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
Directions
  • Remove the wilted, discolored and thick outer leaves of the cabbage and cut the remaining head into quarters. Remove the hard inner core from each quarter.
  • Thinly shred the cabbage to produce approximately 8 cups. Shred carrots and set shredded cabbage and carrots aside.
  • Combine sour cream, mayonnaise, vinegar, sugar, salt, and pepper in a large bowl and whisk until well blended.
  • Add shredded cabbage and carrots. Toss until cabbage and carrots are evenly coated.
  • Let the coleslaw stand at room temperature, uncovered, until cabbage is wilted, approximately 25 to 30 minutes. Toss 1 or 2 times while it is standing.
  • After it is wilted, place in the refrigerator to chill.
  • The coleslaw can be made the day before and refrigerated until ready to use.(A sprinkle of paprika perks up the appearance of the slaw.)

  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika, regular or smoked
  • SANDWICH:
  • 4 hoagie rolls or 8 slices of your favorite bread
  • 6 ounces sliced turkey
  • 6 ounces sliced ham
  • leftover cranberry jelly - optional
  • 8 slices swiss, provolone or cheddar cheese
  • thin dill pickle
  • 1/2 cup soft butter
Directions
  • In a small bowl, stir together olive oil, mustard, cumin, paprika and a pinch of salt.
  • Split rolls or cut desired bread into slices (8).
  • Butter the outsides of the bread and lay out of a piece of tin foil or waxed paper.
  • Spread the inside of each roll or bread with mustard mixture.
  • Layer meats and cheese on bottom halves of rolls or bread.
  • Spread a layer of leftover cranberry jelly on top of the meat if desired.
  • Add a cheese layer and top with pickles.
  • Cover with the top halves of the rolls or bread.
  • Place on a hot skillet or pannini press.
  • If using a skillet, cover the sandwich with foil and set a heavy pan or pot on top to press down the sandwich. (Even a brick wrapped in foil makes a great press.)
  • Grill, pressing constantly and turning once, until the sandwiches are browned and crisp on both sides. (5-6 minutes per side)
  • Cut in half and serve warm.

Cook macaroni; drain and set aside.

For the cheese sauce: melt butter over low heat. Blend in flour, salt and oil stirring until smooth. Allow to cook for 1 minute. Remove from heat and slowly add milk. Return to heat and bring to boil until thickened. Add cheese and cook on low until cheese melts.

Stir cheese sauce into macaroni.

Directions
  • Preheat oven to 375° F.  If you prefer a crisper cookie, preheat to 350° F.
  • In a medium bowl, whisk together flour, baking soda, and salt; set aside. With an electric mixer, cream butter and sugars until light and fluffy.
  • Add eggs and vanilla; beat until combined, scraping down sides of bowl as needed. Add flour mixture; beat until just combined. Add oats, raisins, and chocolate chips; beat until just combined.
  • Drop 32 heaping tablespoons of batter, approximately 1 1/2 inches apart, onto baking sheets.
  • Bake, rotating sheets halfway through, until cookies have spread and are golden brown and soft to the touch.

    Bake 10-12 minutes in 375° F oven.
    Bake 16-20 minutes in 350° F oven.
  • Cool 5 minutes on sheets; transfer to a wire rack to cool completely.

Directions
1. Preheat oven to 350°F. Mix Seasoning and bread crumbs in shallow dish. Moisten chicken lightly with water. Coat evenly with bread crumb mixture.

2. Heat 2 tablespoons of the oil in large nonstick skillet on medium heat. Cook 1/2 of the chicken pieces 3 to 4 minutes per side or until golden brown. Transfer chicken to foil-lined 13x9-inch baking pan. Repeat with remaining chicken, adding remaining 1 tablespoon oil if necessary. Spoon sauce evenly over chicken. Sprinkle with mozzarella cheese.

3. Bake 5 to 10 minutes or until heated through and cheese is melted. Serve with pasta, if desired.

  • 1/4 cup butter
  • 1 cup heavy cream
  • 2/3 cup Parmesan cheese, freshly grated
  • 12 ounces fresh fettuccine, or 8 oz. dried
  • salt and pepper
  • Parmesan cheese, freshly grated for serving
Directions
  • Melt the butter in a large saucepan over medium heat and then add the cream.  Bring butter and cream to a boil, reduce heat and simmer for 5 minutes, stirring while it simmers. After simmering, add the Parmesan cheese and salt and pepper to taste. Turn off heat under pan and begin preparing the pasta.
  • Add water to a large saucepan and bring to a boil. Just before water begins to boil, add salt. When the water comes to a full boil, add the fettuccine and bring water to a boil again, stirring occasionally.
  • Turn heat down so water is just at a steady boil. Check fettuccine package for the length of time to boil. Cook until the pasta is al dente. (Check for doneness before the full cooking time is up to ensure that the pasta does not overcook.) Drain well when done.
  • Turn the burner under the sauce back to a low setting. Either: 1) add all the fettuccine to the sauce and toss until all pasta is well coated, or 2) top the fettuccine just before serving and allow it to be tossed at the table.
  • Serve immediately and garnish if desired with fresh Parmesan grated on top and/or chives cut into small bits.

  • 2 packages Romaine lettuce or 1 large head iceberg lettuce
  • 1 red onion, sliced
  • 2 cups flavored croutons
  • DRESSING:
  • 3/4 cup Oil
  • 1/2 cup Mayonnaise
  • 1/3 cup vinegar
  • 1/3 cup sugar
  • 1 teaspoon mustard
  • 1 teaspoon soy sauce
  • 4 cloves garlic, minced
  • 1/2 teaspoon Salt
  • 1/4 cup water
  • 1/2 cup shredded Parmesan cheese
Directions
  • Tear the lettuce into bite size pieces and place in a bowl. Add the onion slices and Parmesan cheese (reserve a little cheese to sprinkle on top); toss to mix in with lettuce.
  • Blend the dressing ingredients together; pour over combined lettuce and onion. Top with croutons and reserved Parmesan cheese.

  • 1 head lettuce - washed, dried and torn into bite size pieces
  • 1 pound ground beef - browned and drained
  • 8 ounces Cheddar cheese - grated
  • 15 ounces kidney beans - drained and rinsed (optional)
  • 1 onion - large, chopped
  • 4 tomatoes - medium, chopped
  • 1 bag of taco flavored chips
  • 1 package taco seasoning - divided
  • SALAD DRESSING
  • 8 ounces Thousand Island dressing
  • 1 tablespoon taco sauce
  • 1/4 cup sugar
Directions
  • Brown hamburger, draining off excess fat.
  • Add taco seasoning to the browned meat. Reserve 1 Tbsp for the salad dressing.
  • In a large bowl, add the torn lettuce first, then layer the hamburger, cheddar cheese, kidney beans, onion, and tomatoes.
  • To make the dressing, mix thousand island dressing with the sugar, taco seasoning and taco sauce, until blended. Pour over top of layered salad.
  • Cover with plastic wrap and refrigerate until ready to serve. Just before serving crush the chips and add them to top of the salad.

  • 24 cups skinned and chopped tomatoes
  • 4 cups chopped onions
  • 4 cups chopped green peppers
  • 2 jalapeno peppers - add more for hotter salsa
  • 6 cloves garlic, minced
  • 5 tablespoons salt
  • 1 tablespoon pepper
  • 2 tablespoons chili powder
  • 1 cup vinegar
  • 2 cans tomato paste - 6 oz. can
Directions
  • Remove the skins and chop the tomatoes.
  • Chop the onions, green peppers, and jalapenos into small pieces. Be sure to remove the seeds from the jalapenos before chopping.
  • Mince the garlic cloves.
  • Place these vegetables and all the rest of the ingredients into a large pot.
  • Cook over medium high heat until the salsa mixture comes to a full rolling boil.
  • While the salsa is cooking, prepare canning lids and rings by placing in a saucepan, covering with water, and bring water to a simmer. Once lids have come to a simmer, turn heat off but leave saucepan with lids on the burner and allow lids to remain in the hot water until ready to use.
  • After the salsa comes to a full boil carefully pour the hot salsa into canning jars.
  • Wipe any salsa off the rim of the jar that might have spilled when filling the jars; seal with canning lids and rings.
  • Set the jars aside and allow the salsa to cool completely. The jars should seal while they are cooling.

  • 2 cups sugar
  • 3 tablespoons buttermilk or sour milk (or add a few drops of vinegar or lemon juice to regular milk)
  • 4 eggs
  • 2 teaspoons vanilla
  • 4 cups sifted flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons orange juice or orange extract
  • 2 cups chopped apples
  • 4 teaspoons sugar
  • 2 teaspoons cinnamon
Directions
  • Preheat the oven to 350°F. Grease the bottom and sides of two loaf pans.
  • Combine the shortening, sugar, sour milk, and eggs together in a mixing bowl and beat with an electric mixer until well blended.
  • Add the vanilla, sifted flour, soda, salt and orange juice. Mix until evenly combined.
  • Add the chopped apples and stir into the batter.
  • Pour the batter into the greased loaf pans.
  • Combine 4 tsp. of sugar and 2 tsp. of cinnamon and sprinkle over the top of the loaves.
  • Place the pans into the preheated oven and bake for 45 minutes to 1 hour. Check doneness after 45 minutes by inserting a toothpick in the center of the loaf. If it comes out clean, the bread is done. If not, bake another 5 minutes and check again.
  • When the bread is done remove it from the oven and allow it to cool for 10 minutes while still in the pan. Then remove from the pan and allow it to cool completely on a cooling rack.

Slow Cooker Beef Stroganoff 5 Recipe

Ingredients
  • 2 pounds beef top sirloin steak, cut into thin strips
  • 3 tablespoons olive oil
  • 1 cup water
  • 1 packet beef stroganoff seasoning (1 1/2 ounce pkg)
  • 1 pound mushrooms, sliced
  • 1 onion, chopped
  • 3 tablespoons butter
  • 1/4 cup port wine or beef broth
  • 2 teaspoons ground mustard
  • 1 teaspoon sugar
  • 1 1/2 cups sour cream
  • egg noodles, cooked
  • fresh parsley, minced (optional)
Directions
Brown meat in oil.

Add water and seasoning mix. Stir to loosen browned bits from pan. Transfer meat and drippings to a 3-quart slow cooker.

Sauté mushrooms and onion in butter until tender. Combine the wine, mustard and sugar, stir into mushroom mixture. Add to slow cooker. Cover and cook on low for 6-8 hours or until meat is tender.

Stir in sour cream. Serve with noodles. Sprinkle with parsley if desired.

Cottage Spinach Salad Recipe

Ingredients
  • 1 pound fresh baby spinach, washed and torn into bite size pieces
  • 1 pound cottage cheese
  • 1/2 cup pecans, chopped
  • 1/2 cup sugar
  • 3 tablespoons cider vinegar
  • 1/2 cup sour cream or yogurt
  • 3 teaspoons horseradish, or to taste
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt
Directions
  • Wash and dry the spinach leaves; then tear the spinach leaves into bite size pieces and place them in a large salad bowl.
  • Add the cottage cheese and toss.
  • In a small bowl, mix together the sugar, vinegar, sour cream, horseradish, dry mustard, and salt. Stir until well blended.
  • Pour the dressing over the top of the spinach and toss.
  • You may garnish the salad with the pecans for added flavor and texture.

Spaghetti Bake Recipe

Ingredients
  • 16 ounces spaghetti noodles
  • 3 cups mozzarella cheese - shredded
  • 3/4 cup parmesan cheese - grated or shredded
  • 1 cup romano cheese - grated
  • 3 eggs - beaten
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 1 pound ground beef
  • 1 small white onion - diced
  • salt and pepper to taste
  • 62 ounces your favorite spaghetti sauce
Directions
  • Cook spaghetti according to package directions; drain.
  • Meanwhile, brown ground beef and onions. Cook until the ground beef is no longer pink and onions are translucent. Drain off any excess fat drippings.
  • Add the spaghetti sauce to the meat and heat through.
  • When the pasta in done, add one cup of the mozzarella cheese, the parmesan and romano cheese, eggs, oil, garlic powder and salt and pepper.
  • Press this into a greased 13x9 inch baking dish.
  • Pour spaghetti sauce and meat mixture over the pasta.
  • Cover and bake at 350° for 20 minutes.
  • Uncover and sprinkle the remaining mozzarella cheese on top.
  • Bake uncovered for an additional 10 minutes.
  • Allow to cool slightly before serving.
  • May add mushrooms, black olives, green peppers, etc.
  • Freezes well.

  • 1 cup water
  • 3/4 cup sugar
  • 1 1/2 teaspoons McCormick® Root Beer Concentrate
  • 1 bottle (1 liter) cold club soda or seltzer
  • 1 pint vanilla ice cream
Directions
1. Bring water to boil in medium saucepan. Add sugar; stir until dissolved. Add Root Beer Concentrate; stir until well mixed.

2. Refrigerate until ready to serve. Slowly pour soda into root beer mixture. Place 2 scoops ice cream in each of 4 tall glasses. Slowly pour root beer between ice cream and side of glass. Serve immediately.Test Kitchen Tip: Try making root beer the old-fashioned way with Homemade Root Beer.
