Italian Pot Roast - Stracotto Recipe

Ingredients
  • 10 cloves garlic, 1 minced, 9 peeled and left whole (use more if desired)
  • 1/4 cup parsley leaves, finely chopped
  • 2 teaspoons lemon zest (zest from 1/2 lemon)
  • 3 tablespoons olive oil, divided
  • 3 1/2 pounds chuck roast
  • 1 large onion, finely chopped
  • 1 stalk celery, finely chopped
  • 1 large carrot, finely chopped
  • 2 cups dry red wine
  • 3 tablespoons tomato paste
  • salt and pepper
  • OPTIONAL SEASONING:
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
Directions
  • Mash together the minced clove of garlic, parsley, lemon zest, 1/2 teaspoon salt and 2 teaspoons olive oil. Make narrow slits, about an inch deep, in the surface of the meat and pack the parsley mixture into the slits. Salt and pepper the meat.
  • Heat remaining olive oil in a heavy skillet or Dutch oven and brown the meat on all sides. Remove meat to a plate and add onion, celery and carrot to the pan. Cook 5 minutes, stirring occasionally. Add peeled garlic cloves and cook another minute or two. Add these vegetables to the plate with the meat.
  • Add wine to browning pan, raise the heat and boil until reduced by half. If using optional seasonings, add to the browning pan along with the wine. Stir in tomato paste. Return vegetables and meat to pan. Cover and adjust heat to maintain a very low simmer. Cook until tender, 2 - 3 hours, checking periodically to add water if  liquid level gets too low (should be at least an inch). Turn meat once or twice as it cooks.
  • Taste for seasoning, adding salt and pepper as needed. Slice thickly and serve hot, with sauce spooned over. Serve with polenta, noodles, rice or potatoes.

Directions
  • Preheat oven to 350 degrees.
  • Clean potatoes and cut in half. Place on baking sheet lined with foil or parchment paper.
  • In a small bowl, combine melted butter, garlic, lemon juice and salt.
  • Pour mixture over potatoes, stir to coat. Top with parmesan cheese.
  • Cover sheet with foil. Bake covered for 30 minutes. Uncover and bake 10-15 minutes longer, until light golden brown and tender.

  • 4 pounds sweet potatoes - peeled and cut into 3/4 inch cubes
  • 1 red onion - small and cut into thin wedges
  • 1/4 cup olive oil - plus 3 tablespoons
  • salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 cup pecans - slightly chopped
  • 1/2 cup golden raisins
  • 1/4 cup craisins
Directions
  • Combine sweet potatoes and 3 tablespoons of olive oil on a large baking sheet.
  • Toss to coat all pieces.
  • Spread them out on the baking sheet in an even layer.
  • Season with salt and pepper.
  • Bake at 450° for 35 minutes or until nicely browned, stirring occasionally.
  • Combine 1/4 cup of olive oil, vinegar and mustard in a medium bowl. Whisk to combine.
  • Place roasted potatoes and onions in a large serving bowl.
  • Add crasins, raisins and pecans.
  • Toss to combine.
  • Pour dressing over the top and toss gently.
  • Serve warm or cool.

  • CAKE:
  • 7 eggs - separated
  • 1 cup sugar
  • 1 cup flour
  • 2 tablespoons unsalted butter - melted
  • PASTRY CREAM:
  • 1 tablespoon butter
  • 2 cups milk - whole, 1% or 2%
  • 2 cups half-n-half
  • 1/2 cup sugar
  • 3 1/2 tablespoons cornstarch
  • 6 eggs
  • 1 teaspoon rum (optional)
  • 2 tablespoons honey
  • CHOCOLATE ICING:
  • 6 ounces semi-sweet chocolate
  • 2 tablespoons warm water
  • 4 ounces sliced almonds
Directions
CAKE:
  • Preheat oven to 350 degrees F.
  • In 2 medium bowls, separate egg yolks and whites. Add 1/2 cup sugar to each, beat whites until stiff peaks form then beat yolks until peaked. When stiff, fold whites into yolk mixture. Gradually add flour, mixing with wooden spoon.
  • Mix in butter.
  • Pour mixture into greased cake pan. Bake for approximately 20 minutes or until spongy and golden.
  • Remove from oven, cool for 5 minutes in pan, then turn out on rack or plate to cool completely.
PASTRY CREAM:
  • In saucepan, bring butter, milk and cream to boil. While mixture is coming to boil, whisk together sugar, cornstarch and eggs. Whip with electric mixer for 5 minutes. When milk boils, whisk in egg mixture and bring to boiling. Boil for 1 minute, whisking continuously. Pour into medium bowl and cover surface with plastic wrap. Chill overnight or until well chilled.
  • Once chilled, whisk to smooth out. Add rum and honey, mix well.
TO ASSEMBLE:
  • Cut the sponge cake into 2 layers. Spread pastry cream over first layer, spreading thick.
  • Top with second cake layer. Spread chocolate icing on top. Spread extra cream around sides of cake. Gently place sliced almonds around the sides of the cake, sticking to the sides.
CHOCOLATE ICING:
  • Place chocolate squares in medium saute pan over medium heat. Add water, stirring occasionally until melted and combined.
  • Spread over the top of the cake.

Spaghetti Pie Recipe

Old southern favorite that includes all you need in one piece. Kids will love it. This is also a great dish to make in advance and cook later.

Ingredients
  • 6 ounces spaghetti
  • 2 tablespoons butter
  • 1/2 cup Parmesan cheese, shredded
  • 2 each eggs
  • 1 pound ground beef
  • 1/2 cup onion, diced
  • 1/2 cup green pepper, diced
  • 1 can diced tomatoes (14.5 oz can)
  • 1 can tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1 cup cottage cheese
  • 1/2 cup Mozzarella cheese, shredded
Directions
Preheat oven to 350 degrees F. Butter a 9-inch pie plate.

Cook spaghetti according to package; drain.

Stir together cooked spaghetti, butter, Parmesan and eggs. Spoon the mixture into prepared pan. Press the mixture on bottom and sides to form a crust. Bake 10 minutes.

Meanwhile, brown beef in a skillet; drain fat. Stir in onion, green pepper, tomatoes, tomato paste, sugar, oregano and garlic powder.

Spread the cottage cheese on the spaghetti and then spread on the meat mixture. Bake 30 minutes.

Sprinkle mozzarella on top and bake 5 more minutes.

Cool 10 minutes.

Cut in pie wedges and serve.

VARIATION: Skip the layering and mix in large bowl and pour into pan to bake.


Ranch Garlic Bread Recipe

Ingredients
  • 1 cup butter, softened
  • 2 tablespoons Ranch salad dressing mix
  • 1 teaspoon garlic powder
  • 3 tablespoons Parmesan cheese
  • 1 loaf French bread or pizza crusts
Directions
Beat together, butter, dressing mix, garlic powder and cheese until well blended.

If using a loaf of bread, cut bread in half horizontally. Spread some of the butter mixture on each half of bread. If using pizza crust, spread some of the butter mixture on the top of the crust.

Put bread on ungreased cookie sheet, butter side up. Broil 4-6 inches from heat until brown. Watch carefully, it doesn't take long. Cut into pieces.

VARIATION: Slice whole French loaf into 1" slices; spread butter mix on each slice of bread, wrap sliced and buttered loaf in foil and heat in 350° oven for 10 minutes.

NOTE: You will have plenty of butter mix left over but it keeps well in the refrigerator for another time. Let soften before using.

  • 2 pounds cabbage
  • 3 carrots (medium size)
  • 1/4 cup sour cream
  • 1/2 cup mayonnaise

Directions
  • Remove the wilted, discolored and thick outer leaves of the cabbage and cut the remaining head into quarters. Remove the hard inner core from each quarter.
  • Thinly shred the cabbage to produce approximately 8 cups. Shred carrots and set shredded cabbage and carrots aside.
  • Combine sour cream, mayonnaise, vinegar, sugar, salt, and pepper in a large bowl and whisk until well blended.
  • Add shredded cabbage and carrots. Toss until cabbage and carrots are evenly coated.
  • Let the coleslaw stand at room temperature, uncovered, until cabbage is wilted, approximately 25 to 30 minutes. Toss 1 or 2 times while it is standing.
  • After it is wilted, place in the refrigerator to chill.
  • The coleslaw can be made the day before and refrigerated until ready to use.(A sprinkle of paprika perks up the appearance of the slaw.)

  • Blend into cooked rings. Chill 1 hour.

  • Place chocolate chips, sugar, water and cinnamon in a large measuring cup.
  • Microwave for 2-3 minutes or until the chocolate is melted.
  • Stir to combine completely.
  • Allow to cool.
  • Whip the cream in a small mixing bowl until stiff peaks form.
  • Slowly add the chocolate mixture to the cream, whipping as you go.
  • Chill in the refrigerator for 1/2 hour.
  • Pour a mug full of milk and add 2 heaping tablespoons of the chocolate mixture to it.
  • Stir until combined.
  • Microwave until hot, not boiling, and stir.
  • Top with mini marshmallows if desired.
  • The chocolate mixture can be refrigerated for up to one week in a covered container.

  • 12 eggs, hard boiled
  • 3/4 cup salad dressing (not mayonnaise)

  • Peel eggs and slice with an egg slicer; place in a bowl or on a plate.
  • Add the remaining ingredients and mix everything together with a fork, smashing the eggs a little more as you are mixing.
  • Chill and then spread on white, rye, wheat, or your family's favorite bread.
Note: To salt and pepper to taste, I sprinkle the eggs as if I am salt and peppering 12 individual fried eggs so that I don't over do it. You can always taste test and add more.

  • 5 cups shredded sharp cheddar cheese
  • 1 cup Asiago cheese
Directions
  • Cook pasta according to directions on the package.
  • In a large saucepan, melt the butter and then add the minced garlic; cook until tender.
  • Add the flour, salt, and pepper; stir until well blended.
  • Continue to cook this mixture until lightly browned; stir constantly.
  • Gradually add the milk, whisking mixture until smooth.
  • Continue to cook unit it comes to a boil; allow to boil until it thickens, approximately 2 minutes.
  • Remove the boiled mixture from the heat and add all of the cheese except for 1 cup of the cheddar cheese. Stir until it is all melted.
  • Add the cooked pasta and stir until well mixed.
  • Grease a 9 x 13 baking dish and the pour the pasta and cheese into the dish.
  • Sprinkle the top with the remaining cup of cheddar cheese. Bake uncovered in an oven preheated to 350 degrees F. Bake for 40 minutes or until the top is lightly browned.
  • Allow to stand for 5 - 10 minutes before serving.

    • 3 pounds beef roast (chuck, blade, rump)
    • 2 pounds potatoes
    • 1 pound carrots
    • 2 large onions
    • 2 tablespoons canola or other oil
    • 1 cup dry red wine (substitute tomato juice)
    • 1/2 teaspoon pepper
    • 2 teaspoons salt
    • 1 teaspoon paprika
    • 1 teaspoon turmeric
    • 2 bay leaves
    • 1 1 inch piece stick cinnamon (optional)
    Directions
    • Trim off any large pieces of surface fat.  Mix together salt, pepper, paprika and turmeric and  rub this all over the meat.
    • In a dutch oven or large skillet with a domed lid, heat (medium-high) 2 tablespoons canola or other oil and brown the meat. Add more oil if needed.  Don't rush this step as browning is important for a rich deep flavor.
    • Reduce the heat and add 1 cup dry red wine (or tomato juice) and 1 cup water, the bay leaves, and, if using, the cinnamon stick. Regulate the heat to maintain a slow simmer. Cover the pot.
    • Scrub or peel potatoes and carrots and cut into large pieces. If using egg-sized or smaller potatoes, leave them whole. Cut the onions into large chunks.
    • After the meat has cooked for an hour, turn it over and add the cut up vegetables. If the vegetables don't all fit in your pan, remove some of the cooking liqiud to a second pan and cook some of the vegetables in it. Continue to simmer, covered, until the meat is tender, about an hour and a half.  The actual time will depend on the size and shape of the meat.
    • When the meat is done, remove meat and vegetables to a warmed platter and cover loosely to keep warm while you prepare the pan juices. To thicken, raise the heat and boil down the liquid to your desired consistency, or remove 1/2 cup pan juice and thoroughly mix with 1/4th cup flour. Whisk this back into the pan and cook for about 5 minutes. Correct the seasoning, if necessary.
    • Slice the meat across the grain, arrange with the vegetables and drizzle with some of the pan juice. Serve, with the remaining juice in a separate bowl.

    • 1 can crushed pineapple (large can)
    • 1 3 oz. package of instant pistachio pudding
    • 1 8 oz. container of whipped topping
    • 2 cups minature marshmallows
    Directions
    • Empty the can of pineapple into a medium size bowl. Do not drain.
    • Sprinkle the package of pudding mix over the pineapple and stir to mix thoroughly. Allow this mixture to sit for about 5 minutes so it thickens a little.
    • Fold in the whipped topping and marshmallows. Fold in until the pudding and pineapple mixture is evenly mixed with the whipped topping. Do not over stir.
    • Place in the refrigerator until ready to serve. This salad keeps well in the refrigerator for 2 or 3 days.

    • 18 graham cracker squares, crushed
    • 1/4 cup sugar
    • 1/3 cup butter, melted
    • 8 ounces cream cheese, room temperature
    • 1/2 cup sugar
    • 1 cup sour cream
    • 2 teaspoons vanilla
    • 8 ounces Cool Whip
    Directions

    For crust, preheat oven to 350° F: Combine crushed graham crackers, sugar and butter. Bake in oven for 6 to 7 minutes. Cool completely.

     
    For cheesecake:
    •  Beat cream cheese and sugar together until smooth.
    • Add sour cream and vanilla. Beat until mixed well.
    • Add Cool Whip and beat on low until well blended. Do not overbeat.
    • Pour into cooled crust and refrigerate until well chilled.
