Tailgate Chicken Recipe

This simple beer can chicken recipe is perfect for tailgating at your next sporting event. It has minimal preparation and creates a juicy grilled chicken that so flavorful. It will disappear as soon as you take it off the grill!
Tailgate Chicken Recipe

Ingredients
  • 1 whole chicken (3 to 4 3 lb )
  • 1 can beer (12 to 16 12 ounce can)
  • Garlic salt
  • Pepper
Directions
  • Clean out the inside of the chicken and rinse the inside and outside of the chicken. Pat dry and sprinkle with garlic salt and pepper inside as well as outside.
  • Lay down some aluminum foil on your grates which will prevent flare ups plus make it a bit easier to clean up.
  • Open the can of beer and pour out (or drink) about 1/4 of the beer. This will just help prevent spilling it when working with it. Place the open end of the beer can into the cavity of the chicken. Once it is inserted the chicken's legs should support it so it will stand up.
  • If you're using a charcoal grill, just place the chicken in the middle of the grill over evenly spread white ashes. With gas, turn one burner on at medium heat and place the chicken over the burner that is turned off.
  • Cover your grill and just let it go. The heat from the grill will make the beer start to boil, cooking the chicken from the inside out.
  • When all done the chicken will be all but falling apart, about 90 minutes.
  • If making two chickens, repeat process with second chicken and put both of them along with the beer cans inside of them into an aluminum pan. This will keep everything sturdy and you can baste the chickens with the juices collecting at the bottom of the pan.

  • 5 pounds potatoes
  • 12 extra large eggs
  • 1 jar salad dressing (30 oz.)
  • 2 tablespoons mustard
  • 3 tablespoons sugar
  • 1/2 large onion , finely chopped
  • 1/2 teaspoon pepper
  • Salt, to taste
  • Radishes, sliced (optional)
Directions
  • Cook the eggs to a hard boil. Cool completely.
  • Peel and boil potatoes; cool completely. Slice the potatoes and put in a bowl large enough for mixing the potato salad.
  • In a separate bowl, combine the salad dressing, mustard, sugar, onions, pepper, and salt together; stir to mix together thoroughly.
  • Peel and cut eggs in half; remove the yolk and place in a bowl. Slice egg whites and add them to the bowl containing the sliced potatoes.
  • Mash egg yolks thoroughly and add them to the dressing mixture.
  • Add the dressing and egg mixture to the potatoes and egg whites; stir and mix thoroughly.
  • Stir in sliced radishes, if desired.
  • Best to refrigerate the salad for several hours before serving. This recipe can be made one or two days ahead of when you need to serve it.

Directions
  • Combine vegetables, soup, 1/2 cup cheese, sour cream, pepper, and 1/2 can onions.
  • Bake for 30 minutes at 350 degrees.
  • Remove from the oven and top with the remaining cheese and onions; bake for an additional 5 minutes or until fried onion rings are lightly browned.

  • 1 package frozen strawberries (10 ounce pkg)
  • 2 bananas, sliced thin or diced
  • 1 cup sour cream
  • 2 1/2 cups boiling water
  • 1/2 cup pecans, finely chopped (optional)
Directions
Empty Jello into large bowl and dissolve in boiling water.

Add partly thawed strawberries and bananas. Refrigerate until almost firm.

Pour 1/2 of mixture into dish or casserole and spread layer of sour cream over mixture. Pour remaining Jello mixture over sour cream. Refrigerate until ready to serve.

If desired, sprinkle nuts just before serving.


Apple Pecan Bread Recipe

  • BREAD:
  • 1 cup brown sugar
  • 1 cup sour cream
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups peeled and finely diced Granny Smith apples ( or your favorite in season apple)
  • 1 cup chopped pecans
  • DRIZZLING SAUCE:
  • 1/4 cup brown sugar
  • 1/4 cup butter
Directions
BREAD:
  • Preheat oven to 350 degrees F. Grease the bottom and sides of the loaf pan.
  • Prepare apples, cover and set aside.
  • Combine 1 cup of brown sugar with the sour cream, eggs, and vanilla in large mixing bowl; beat on low speed until well blended.
  • Add the flour, baking powder, baking soda, and salt; beat on low until all ingredients are mixed evenly.
  • Add the apples and half of the pecans to the dough; fold in until evenly distributed.
  • Pour the dough into the grease loaf pan; pat down evenly. Sprinkle the top with the remaining pecans; press the pecans slightly into the top of the dough.
  • Place in the preheated oven and bake for 50 to 60 minutes or until a toothpick poked in the center comes out clean.
  • Remove from the oven and allow to cool for 20 minutes before removing from the loaf pan. Place on a wire rack to finish cooling.
DRIZZLING SAUCE:
  • Combine the brown sugar and butter in a small saucepan. Over medium heat, bring the mixture to a boil.
  • Once it is boiling, turn the heat to low and let the sauce simmer for about one minute until it thickens; stir constantly.
  • Remove from the heat and drizzle over the top of the bread. The bread does not have to be cooled before drizzling the sauce over it.
  • Drizzle all of the sauce evenly over the top of the loaf. Some sauce will drizzle down the sides but try not to let much drizzle off onto the counter. If it does, try spooning it up and drizzle it back over the bread.
  • Once all the sauce has been drizzled on the bread, allow it to cool completely before slicing.

  • 1 packet dry Italian salad dressing mix (1 ounce pkg)
  • 1/4 cup orange juice
  • 1/4 cup oil
  • 2 tablespoons soy sauce
  • 1 pound pork loin, cut into strips
  • 1 package frozen oriental vegetable blend, thawed (16 ounce pkg)
  • 2 1/2 cups cooked rice
  • 2 green onions, sliced (optional)
Directions
Mix together dressing mix, juice, oil and soy sauce.

Combine one tablespoon of dressing mixture and pork strips in a large skillet over medium heat. Cook and stir for 4-5 minutes, or until meat is no longer pink.

Add vegetables and remaining dressing mixture; cook and stir until vegetables are crisp/tender.

Serve over cooked rice and top with green onions, if desired.

  • 1/4 cup white or yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups uncooked long-grain white rice
  • 2 1/2 cups vegetable stock (canned)
  • salt and pepper to taste
Directions
  • Rinse 1-1/2 cups long-grain white rice in cold water; then soak the rice in cold water for 30 minutes and drain well.
  • In a large saucepan or covered skillet, heat 2 to 3 tablespoons olive oil over medium-high heat. Add 1/4 cup finely chopped white or yellow onions to the pan and saute quickly (1 to 2 minutes).
  • To the onions, add 2 cloves of minced garlic and cook for an additional 30 seconds.
  • Add the 1-1/2 cups of soaked and drained long-grain white rice and stir-fry for about 3 minutes.
  • Pour in 2-1/2 cups water or vegetable stock and bring to a boil.
  • Reduce the heat to low, cover the pan, and simmer for 15 to 18 minutes or until the rice has absorbed the liquid. Do not stir the rice during the cooking time. Leave the pan covered and do not check the rice until the suggested cooking time has elapsed.
  • Serve the rice immediately. Use the rice pilaf as a side dish; as a bed for grilled chicken, turkey, or fish; or as an accompaniment for stir-fried beef or pork dishes.

  • 2 teaspoons scallions - minced

  • 8 ounces crab meat
  • 32 wonton wrappers
  • 1 cup vegetable oil

Crab Filling Preparation
  • Soften cream cheese to room temperature
  • In a bowl, combine cilantro, scallions, ginger, sugar, jalapenos and lime juice with softened cream cheese.
  • Add crab mixture and lightly mix with other ingredients.
    Wonton Wrapper Preparation
  • Using wonton wrappers approximately 4 inches square will work to make smaller dumplings for appetizers. However, if a larger dumpling is preferred, a 4 x 6 inch rectangular wrapper can be made from spring roll dough sheets. Use an 8 inch square spring roll dough sheet to begin. Cut two rectangles from each 8 inch dough sheet and there will be 2 inches of dough as excess.
  • Lay wonton wrappers on a flat surface and add a teaspoon of crab filling in the center of the wrapper or adjust amount depending on size of the wrapper. Lightly and evenly spread the filling into a coin-shaped portion making sure to keep it well away from the outer edges.
  • Dampen the edge of each wrapper with water and fold in half, resulting in a rectangular shape to the wrap.
  • Dampen the edge of each wrapper with water or a lightly beaten egg and press the edges together so they seal the contents. As they are sealed, press the excess air out of the wonton to keep the wonton from puffing up as it cooks.
  • Fold the wonton lengthwise in half again, creating a somewhat narrow rectangular shape to the folded dough.
  • Moisten the edges again if necessary so they adhere better. Fold each end in toward the center of the wrap, allowing half of the end to remain in a vertical position while the other half is folded over on top of and overlaps the opposite side end piece, like the end corners of an envelope.
  • Press the ends together that overlap, so they adequately seal.
  • Keep the filled wontons covered with a damp cloth to retain the moisture in the dough while others are being filled.
  • When ready to cook, place the filled wontons on a baking sheet layered with parchment paper.
  • Pour cooking oil in a skillet and heat on medium high to 350° F
  • Fry wontons in small batches for 3 to 4 minutes each until they are light golden brown.
  • Remove and place on paper toweling to absorb any excess grease.
    Dipping Sauce
  • Use a sweet and sour sauce and a hot mustard sauce to provide two choices for personal tastes.

    • CREAM CHEESE FROSTING:
    • 4 ounces cream cheese, softened

    Directions
    • Preheat oven to 325 degrees F. Grease a 10x15x1 cookie sheet.
    • Combine the sugar, oil, and eggs together in a large mixing bowl. Beat until well blended.
    • Add the flour, soda, cinnamon, and salt; beat until well mixed. Beat in carrot baby food until evenly mixed.
    • Pour into the greased cookie sheet and bake for 25 to 30 minutes.
    • Remove from the oven and allow to cool completely before frosting with the cream cheese frosting.
    CREAM CHEESE FROSTING:
    • Blend the cream cheese and butter together until smooth.
    • Add the powdered sugar and vanilla; beat until smooth and creamy. If frosting is too thin, add more powdered sugar a tablespoon at a time until it reaches the desired consistency.
    • Spread evenly over the carrot bars. Refrigerate to store.

    • 1/4 cup onion, diced
    Directions
    Spread each flour tortilla with 2 tablespoons cream cheese.

    Bake at 400° for 12 minutes or until golden brown, turning once half-way through heating.

    Spanish Rice Recipe

    • 3 cups water
    • 2 cups (uncooked) long grain white rice
    • 1 tablespoon chicken base (or 3 chicken bullion cubes)
    • 1 cup bell pepper, diced (red, yellow, green, or any combo you like)
    • 1/2 onion, diced small
    • 1 medium tomato, diced small
    • 1/4 cup fresh cilantro, finely diced
    • 1 teaspoon ground black pepper
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 2 tablespoons butter
    • 1 teaspoon kosher salt (to taste)
    • 2 tablespoons lime juice (to taste)
    Directions
    • Preheat oven to 425 degrees F.
    • In a Dutch oven, add the water, rice, chicken base, vegetables, seasonings and butter, except the salt and lime juice. Bring the water to a boil stirring very little.
    • Cover the pan and place it in the preheated oven for 15-20 minutes, or until almost all of the water is absorbed.
    • Remove the pan from the oven but leave it covered and sitting for 5 minutes.
    • In a small bowl, combine the salt and lime juice.
    • Remove the lid long enough to stir in the salt and lime juice; recover the pan and let sit another 5 minutes.
    • Serve and enjoy.

    • 24 cups skinned and chopped tomatoes
    • 4 cups chopped onions
    • 4 cups chopped green peppers

    • 5 tablespoons salt
    • 1 tablespoon pepper
    • 2 tablespoons chili powder
    • 1 cup vinegar
    • 2 cans tomato paste - 6 oz. can
    Directions
    • Remove the skins and chop the tomatoes.
    • Chop the onions, green peppers, and jalapenos into small pieces. Be sure to remove the seeds from the jalapenos before chopping.
    • Mince the garlic cloves.
    • Place these vegetables and all the rest of the ingredients into a large pot.
    • Cook over medium high heat until the salsa mixture comes to a full rolling boil.
    • While the salsa is cooking, prepare canning lids and rings by placing in a saucepan, covering with water, and bring water to a simmer. Once lids have come to a simmer, turn heat off but leave saucepan with lids on the burner and allow lids to remain in the hot water until ready to use.
    • After the salsa comes to a full boil carefully pour the hot salsa into canning jars.
    • Wipe any salsa off the rim of the jar that might have spilled when filling the jars; seal with canning lids and rings.
    • Set the jars aside and allow the salsa to cool completely. The jars should seal while they are cooling.

    • Stir until well blended.
    • Pack the mixture into a greased, 9 x 5 loaf pan and smooth the surface. Spread the ketchup on the top of the meatloaf.
    • Bake in a preheated, 400º degree oven for approximately 1 hour. The internal portion of the meatloaf must be cooked to a minimum temperature of 160º as indicated by a meat thermometer.

    • 4 baking potatoes
    • 1 tablespoon vegetable oil

    Wash and clean potatoes. Prick each potato with a fork. Grease each potato with oil. Wrap individually in foil. Bake at 450° directly on wire rack in oven. For smaller potatoes, bake for 1 hour. For larger potatoes, bake 1 1/2 to 2 hours.

    When baked, cut in half and fluff pulp with a fork. Serve with butter, sour cream, cheese, bacon bits, salt and pepper.

    NOTE: If you want to speed up the process, you can put the potatoes in the microwave on high for 2 minutes after you prick them and before greasing with oil. This will take about 20-30 minutes off your baking time.

    • Mix the flour, pecans and butter together; press into the bottom of a 9 x 13 baking pan. Bake for 15 minutes at 350 degrees F.
    • Allow the crust to cool while blending the cream cheese and powdered sugar together.
    • Once the cream cheese and powdered sugar are well blended, add 1 cup of cool whip. Spread over the cooled crust.
    • Follow the directions on the pudding package for making the pudding except only use 2 1/2 cups of milk for both packages of pudding.
    • Spread the pudding over the cream cheese layer and then top the pudding layer with the remaining Cool Whip.
    • Sprinkle the top with a little chopped pecans. Refrigerator overnight or for several hours so that it is chilled completely before serving.
