  • 2 1/2 pounds pork roast
  • 2 tablespoons Dijon mustard
  • 1 tablespoon stone ground mustard
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 6 slices bacon
Directions
Preheat the oven to 350 degrees F.

In a small bowl, mix together the Dijon mustard, stone ground mustard, honey, garlic, thyme and rosemary.

Place pork in a baking pan. Spread the honey mustard mixture all over the pork. Starting at one end of the pork, arrange the bacon slices over the pork, slightly overlapping one after the other. The pork should be covered entirely with bacon. Tuck the ends of the bacon underneath the pork.

Place the pan in the oven and roast for 50-55 minutes until a meat thermometer reads 160 degrees F in the center.

Remove pan from the oven and allow the meat to rest for 10 minutes.

Slice the pork into 1/4-inch thick slices. Arrange slices on a platter and serve.

  • 2 sweet potatoes, peeled, quartered
  • 1 cup milk
  • 1/2 cup butter
  • 1/2 cup sour cream
  • 2 tablespoons green onions, finely chopped

  • 1 dash nutmeg (optional)
Directions
Bring potatoes and sweet potatoes to boil and cook until tender, approximately 20 minutes; drain.

Mash potatoes until smooth. Gradually add milk and butter. Stir in sour cream, onion, salt and nutmeg.

TIP: The potatoes will be even creamier if you warm the milk and butter before adding it to the potatoes.

NOTE: These can be made up to a day in advance and baked in the oven for 45 minutes.

  • 2 packages cream cheese - 8 oz. pkgs.
  • 2/3 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 teaspoon almond extract
  • 16 vanilla wafers
Directions
  • Preheat oven to 325 degrees F.
  • Beat the cream cheese and sugar together in a large mixing bowl until smooth and fluffy.
  • Add the eggs, vanilla, and almond extract; beat until mixed well.
  • Place a cupcake liner in each muffin cup and place a vanilla wafer in the bottom of each one.
  • Fill each cup 2/3 full with the batter.
  • Bake in preheated oven for 25 minutes or until edges are just starting to brown. Leave in the pan and allow the cheesecakes to cool. The centers will fall as they cool.
  • Once completely cooled, refrigerate for at least 4 hours. They can be refrigerated overnight.
  • Garnish with desired fruit. You can garnish with just fruit but they are best if you make a little sauce from the fresh fruit and add about a teaspoon of sauce first; then add the fruit on top. Or make up some lemon curd and place a teaspoon of that on first and then the fruit.
SUGGESTED FRUITS: Strawberries, raspberries, blueberries, kiwi, and mandarin oranges. Or you could use blueberry or cherry pie filling for an easy topping.

  • Place a skillet over medium-high heat and allow to heat up.
  • Add the sandwich to the skillet, buttered side down. While the sandwich is being browned on the first side, generously butter the unbuttered side while it is in the skillet.
  • When the first side is nicely browned flip the sandwich over and brown the other buttered side.
  • Once both sides are browned, remove from the skillet, cut in half and serve.
  • Continue to make as many sandwiches as needed to serve your family. You can cook more than one sandwich at a time if the skillet is large enough.

Cook and drain pasta as directed on package

Place drained pasta back in saucepan. Add butter, milk, cheese, salt, mustard and pepper. Stir until mixed.

  • 1 bunch broccoli
  • 3 tablespoons olive oil
  • 1/2 teaspoon garlic salt, or to desired taste
Directions
  • Preheat oven to 375° F (350° F for a 12" Dutch oven).
  • Cut broccoli florets leaving a portion of the stem with each floret. Place in baking dish or 12" Dutch oven.
  • Coat broccoli with olive oil and sprinkle with garlic salt. Place the cover on the baking dish or cover with foil.
  • Place covered dish in the oven and cook for 20-30 minutes. Check for doneness after 15 minutes to be sure you do not overcook the broccoli. It should be crisp-tender when done. Cooking time will vary depending on the amount of broccoli and your personal taste.
  • Remove from heat and transfer to serving dish.
NOTE: This is the easiest side dish to make and I have people devouring large quantities who say they would never touch broccoli. Be sure when you are adding the garlic salt to use your own judgment on how much to use. That will also depend on how much broccoli you are actually preparing.

For the sauce, mix all the ingredients. Add more water to reach desired consistency. Bring to a simmering boil.

For the meatballs, mix the ingredients and form into balls, and drop into the boiling sauce. Stir frequently.

Cook for 1 1/2-2 hours on low simmer.

Serve over desired cooked pasta.

  • 3 large sweet onions

  • 1 1/2 cups flour
  • 1 3/4 teaspoons salt
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons sugar
  • 2 eggs
  • 1 1/4 cups milk
  • 1/4 cup vegetable oil
Directions
  • Peel whole onions and then cut crosswise into 1/4 inch thick slices. Separate the slices into individual rings. Dry rings thoroughly with paper towels.
  • Dredge rings in flour until well coated and then place on a large baking sheet. (Rings can be dredged in flour placed on a plate or the flour can be placed in a plastic bag. If using a plastic bag, several rings can be dredged at a time.) After all rings are coated, set them aside and mix batter.
  • Combine all dry ingredients and stir until evenly mixed.  Set aside.
  • Blend eggs, milk and oil and then add the dry ingredients. Beat until all ingredients are well blended.
  • Add 1 inch of oil to a deep pan and heat to 375° F. Dip flour coated rings into the batter and allow excess batter to drip off.
  • Place batter coated rings into the hot oil. Avoid overcrowding so that they can cook evenly. Fry until golden brown on the first side and then turn to cook second side.  When both sides are golden brown, remove from the oil and place on a baking sheet lined with paper towels to allow oil to drain off.
  • Finished onion rings can be placed in an oven preheated to 300°F to keep warm until all onion rings are done and ready to serve.

  • 1 cup barbecue sauce
  • 1 package of your favorite taco seasoning
  • 1 package boneless, skinless chicken breasts (4-5 breast)
Directions
  • Mix the barbecue sauce and taco seasoning in the small bowl. Stir until well blended.
  • Combine chicken breasts and barbecue mixture in large plastic bag; seal. Gently turn bag to coat chicken breasts with marinade.
  • Place on a plate and put in the refrigerator for an hour.
  • Remove from refrigerator and place on (pre-heated) grill on medium. Grill each side for about 10 minutes or until chicken is done or no longer pink in the center.
  • Remove from heat and serve with your favorite side.

Ingredients
  • 3 cups water
  • 2 cups (uncooked) long grain white rice
  • 1 tablespoon chicken base (or 3 chicken bullion cubes)
  • 1 cup bell pepper, diced (red, yellow, green, or any combo you like)
  • 1/2 onion, diced small
  • 1 medium tomato, diced small
  • 1/4 cup fresh cilantro, finely diced
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons butter
  • 1 teaspoon kosher salt (to taste)
  • 2 tablespoons lime juice (to taste)
Directions
  • Preheat oven to 425 degrees F.
  • In a Dutch oven, add the water, rice, chicken base, vegetables, seasonings and butter, except the salt and lime juice. Bring the water to a boil stirring very little.
  • Cover the pan and place it in the preheated oven for 15-20 minutes, or until almost all of the water is absorbed.
  • Remove the pan from the oven but leave it covered and sitting for 5 minutes.
  • In a small bowl, combine the salt and lime juice.
  • Remove the lid long enough to stir in the salt and lime juice; recover the pan and let sit another 5 minutes.
  • Serve and enjoy.

  • Place into serving bowls. Top with non-dairy whipped topping and a cherry or any other sundae toppings that you desire.

  • 1/2 pound shrimp, medium-sized, deveined, peeled

  • 4 tablespoons lemon juice

Directions
Marinate raw shrimp in melted butter and lemon juice mixture for an hour, coverer and in the refrigerator.

Skewer the shrimp on wooden skewers.

Place on the grill and sprinkle shrimp with seasoning salt, Old Bay and pepper. Grill for 2-3 minutes on each side.

NOTE: Be sure to soak the wooden skewers in water for about an hour prior to grilling. If not, they will burn up on the grill because they will be dry wood.

  • 1 package frozen, cubed potatoes
  • 8 ounces sour cream
  • 1 package shredded cheddar cheese, divided
  • 1 can cream of mushroom or chicken soup
  • 1 stick butter, melted
Directions
In a 9x13 baking dish mix together potatoes, sour cream, soup and half the cheese. Mix in melted butter. Top with remaining cheese. Bake at 350 for 30 minutes.

VARIATION: Make it a one dish meal, add cubed ham and peas.

Grandmothers Southern Style Green Beans Recipe

Ingredients
  • 6 slices bacon, diced
  • 1 onion, minced (optional)
  • 2 quarts green beans, snapped into 1-inch pieces
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon garlic salt
Directions
Render bacon in an iron skillet, reserving the bacon.

If using onion, fry in the bacon drippings in skillet.

Add green beans to the skillet. Add seasonings and enough water to almost cover green beans. Bring to a rolling boil then turn heat down to simmer for 8-10 minutes or until doneness you desire. Remove lid at the end of cooking time and cook down to a very low liquid.

Serve with reserved bacon pieces.

VARIATION: Add some diced country ham which makes this Southern dish even more delectable.

  • 5 cups broccoli florets
  • 5 cups cauliflower florets
  • 2 cups shredded cheddar cheese (8 ounce pkg)
  • 2/3 cup onion, diced
  • 1 cup mayonnaise
  • 1/2 cup sugar
  • 2 tablespoons red wine vinegar
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup sunflower seeds (optional)
Directions
In a large bowl, toss broccoli, cauliflower, cheese and onion.

In a small bowl combine mayonnaise, sugar and vinegar. Pour over salad; toss to coat. Cover and refrigerate for 1 hour.

Sprinkle with the bacon and sunflower seeds, if desired.

VARIATION: Add 2 cups spiral macaroni may be added if you want a pasta salad.

  • CAKE:
  • 1 1/2 cups flour
  • 3 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 9 tablespoons butter - at room temperature
  • 1 1/2 cups sugar
  • 3 eggs - large and at room temperature
  • 1 teaspoon vanilla
  • 1/2 cup sour cream - at room temperature
  • 1 pound strawberries - fresh
  • 4 tablespoons sugar
  • FROSTING:
  • 16 ounces cream cheese - at room temperature
  • 1/2 cup butter - at room temperature
  • 4 cups powdered sugar
  • 1 teaspoon vanilla
Directions
  • Sift the flour, cornstarch and salt together.
  • Cream the butter and sugar on medium speed with an electric mixer.
  • Add in the eggs one at a time making sure that each is incorporated before adding the next.
  • Add in the vanilla and sour cream.
  • Slowly add in the sifted dry ingredients into the mixture until well combined.
  • Pour into a buttered and floured cake pan.
  • Bake in a preheated 350° oven for 45-50 minutes or just until it is set. You don't want to over bake it because it will dry out.
  • Meanwhile, clean the strawberries and dice them.
  • Place them into a bowl and add in the 4 tablespoons of sugar. Place into the refrigerator until ready to use.
  • Remove the cake from the oven and allow it to cool on a cooling rack. Remove the cake from the pan and slice the cake in half horizontally.
  • Mix together the cream cheese, butter, powdered sugar and vanilla with an electric mixer until nice and creamy.
  • Spread half of the strawberries over the top of the bottom layer of the cake.
  • Take the top half of the cake and frost the TOP of the cake and then place the frosted side on top of the bottom half. This will give you a nice flat topped cake when finished.
  • Spread the remaining strawberries over the top of the cake and then frost the entire cake. You may not need to use all of the frosting. You should be able to see pieces of the strawberries showing through the frosting.
  • Place in the refrigerator until ready to serve.
