  • 1 whole chicken
  • 2 tablespoons butter
  • 1 teaspoon sage
  • 1 clove garlic, minced
  • 1/8 teaspoon pepper
  • 1 teaspoon dried rosemary
  • 1 onion, quartered
  • 2 cups chicken broth
Directions
Preheat oven to 375°.

In a small bowl, combine butter, sage, garlic and pepper.

Carefully loosen skin from the chicken breast. Spread half of the butter mixture under the skin and rub the rest on top of the skin. Sprinkle rosemary on chicken. Place the onion inside the chicken, then tie the legs together.

Place on a rack in a roasting pan, pour broth into pan and cover with foil. Roast for 1 hour.

Uncover, roast another 40 minutes, until pierced chicken juices run clear.

  • 1/2 pound rutabaga
  • 1/2 pound carrots
  • 1/2 pound parsnips
  • 1 zucchini, cut into 1
  • 1 head cauliflower, trimmed into florets
  • 1 pound potatoes
  • 1 tablespoon butter
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons fresh thyme
  • 2 teaspoons fresh sage
  • 1/8 teaspoon nutmeg
  • salt & pepper, to taste
  • 1/4 cup balsamic vinegar
Directions
Preheat oven to 450&76;.

Peel rutabaga, carrots and parsnips; chop into 1" pieces.

Place vegetables on a baking sheet pan.

In a small saucepan, melt butter. Stir in oil, thyme, sage and nutmeg. Drizzle butter mixture over vegetables and toss to coat them completely. Season with salt and pepper. Pour the balsamic vinegar over the vegetables; toss lightly.

Cover tightly with foil and bake for 30-40 minutes.

Remove foil, toss the vegetables and continue to bake until the vegetables can be easily pierced with a knife, 20-30 minutes. Place roasted vegetables on a platter around your meat or by themselves and serve.

  • Replace bread top; wrap in foil.
  • Place on baking sheet. Bake at 350 degrees for 15-20 minutes or until heated through. Let stand for 10 minutes.
  • Cut into wedges.

Directions
Cook macaroni according to package directions. Drain; set aside.

Heat milk in a large saucepan over medium heat to almost boiling.

Reduce heat to low and gradually add cheeses, stirring constantly for about 5 minutes until all cheese is melted.

Place cooked macaroni in a 4 quart casserole dish or individual ovenproof dishes. Pour cheese sauce over pasta and stir until well blended. Top with bread crumbs.

Bake for 50-60 minutes or until browned and bubbly.

Combine cake mix, oil, water and pudding mix; beat 2 minutes.

Add eggs 1 at a time, beating thoroughly.

Pour into prepared pan. Bake 40 minutes.

While cake is still warm, flip onto serving platter and prick entire top with a toothpick.

For the glaze, combine powdered sugar, orange juice, butter and water. Pour glaze over entire cake while warm.

  • 8 ounces taco sauce

Directions
  • Cook shells; rinse in cold water and set aside.
  • Cook ground beef until no longer pink.
  • Add 1/2 taco sauce, cream cheese, chili powder, and 3/4 cup Mexican cheese.
  • Stuff shells with mixture and place in a greased 9 x 13 baking pan.
  • Drizzle remaining half taco sauce on top.
  • Bake at 350° for 35 minutes. Uncover, spread 3/4 of remaining cheese over top and then bake for 10 more minutes.
  • Sprinkle last bits of cheese over final dish. Serve immediately.

  • Add the corn and beans; toss to evenly distribute.
  • Combine the salsa, sour cream, and salad dressing in a small bowl.
  • Drizzle half to three-quarters of the mixture over the salad and gently toss to evenly coat. Add remaining dressing mixture if desired, depending on how much dressing you prefer.
  • Serve immediately with extra salsa and taco sauce on the side for those who prefer the extra flavor.

  • 3 cups mozzarella cheese - shredded

  • 3 eggs - beaten

  • 2 teaspoons garlic powder
  • 1 pound ground beef
  • 1 small white onion - diced
  • salt and pepper to taste
  • 62 ounces your favorite spaghetti sauce
Directions
  • Cook spaghetti according to package directions; drain.
  • Meanwhile, brown ground beef and onions. Cook until the ground beef is no longer pink and onions are translucent. Drain off any excess fat drippings.
  • Add the spaghetti sauce to the meat and heat through.
  • When the pasta in done, add one cup of the mozzarella cheese, the parmesan and romano cheese, eggs, oil, garlic powder and salt and pepper.
  • Press this into a greased 13x9 inch baking dish.
  • Pour spaghetti sauce and meat mixture over the pasta.
  • Cover and bake at 350° for 20 minutes.
  • Uncover and sprinkle the remaining mozzarella cheese on top.
  • Bake uncovered for an additional 10 minutes.
  • Allow to cool slightly before serving.
  • May add mushrooms, black olives, green peppers, etc.
  • Freezes well.

Heat up the broiler. Use a broiling pan and cover with aluminum foil.

Cut the broccoli into florets. Place broccoli on prepared pan. Pour the olive oil on the broccoli. Sprinkle with garlic salt, pepper and Parmesan cheese. Mix until everything is coated. Put in the oven in the top rack for 8-12 minutes.

NOTE: The cheese has to melt and the broccoli gets a bright green color. If you like, keep it in the oven for few extra minutes until starts getting light brown and the broccoli will get crunchy.

  • Core the apples and cut into triangles; add to the grapes.
  • Slice bananas and add to the bowl.
  • Add the whipped topping and stir gently to coat everything evenly.
  • Add the marshmallows and fold into the mixture.
  • Refrigerate until ready to serve.
Note: If very young kids will be eating this salad you may want to peel the apples. Otherwise the apple peel adds nice color.

  • 5 potatoes peeled and quartered (I use more potatoes if I want leftovers)
  • 1 package mini carrots (No peeling!) or one pound of carrots peeled and cut up. (large bag)
  • 2 onions peeled and quartered
  • 1 can French onion soup (large can)
  • 1 can cream of mushroom soup
  • Salt and pepper
Directions
  • Pour both cans of soup in crock pot and stir until mixed. Do not add water.
  • In a skillet, salt and pepper roast; brown in melted butter.
  • Place roast into soup. Salt and pepper vegetables and arrange around and on top of roast.
  • Cook 8 to 10 hours on low setting or until roast is fork tender.
Leftovers: Cut remaining roast into chunks and place back in pot with leftover vegetables and broth. Heat and serve with rolls. It's even better the next day!

  • 1 whipped topping - 16oz. container
  • 8 ounces cream cheese
  • 2 packages instant French vanilla pudding - 3.5 oz. pkgs.

  • Crush the Oreo cookies into finely ground crumbs. If using a plastic bag when crushing the cookies, you may have to scrape out the inside of the bag to remove the crumbs that stick to the bag. Set crumbs aside.
  • Have cream cheese softened to room temperature and then beat until smooth. Add in the whipped topping and beat until well blended.
  • In a separate bowl, whisk together the pudding, milk and vanilla for 1 to 2 minutes, until smooth and thickened.
  • Begin layering the three separate mixtures in the following order: pudding, cookie crumbs, cream cheese, and ending with cookie crumbs on top. If you are using a trifle bowl, you should be able to repeat these layers. Be sure to end with the cookie crumbs on top.

  • 1/2 cup flour
  • 1 pint heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/4 cup butter - chilled and diced
Directions
  • Preheat oven to 450° F.
  • Place prepared pie crust into an 8 or 9 inch pie plate. Mold it to the bottom of the plate and crimp the edges.
  • In a mixing bowl, combine the sugar, flour, vanilla and cream. Mix until smooth.
  • Pour into the unbaked pie crust.
  • Dot with diced butter.
  • Sprinkle with nutmeg and cinnamon.
  • Place the pie plate onto a cookie sheet to catch any drippings and place in the preheated oven for 15 minutes.
  • Reduce oven temperature to 350° F and continue baking for and additonal 45-50 minutes or until the center is just somewhat jiggly.
  • You may need to cover the pie loosely with aluminum foil if it begins to brown to much.
  • Remove from the oven and allow to cool and then place in the refrigerator until ready to serve.
