Grilled Greek Steak Recipe

Ingredients
  • 1/2 cup fresh lemon juice
  • 2 teaspoons Greek seasoning
  • 2 cloves garlic, minced
  • 1 pound flank steak, trimmed
Directions
To prepare marinade, combine lemon juice, Greek seasoning and garlic in a large zipper plastic bag; add flank steak and seal. Marinate in refrigerator 1-2 hours, turning once.

Remove steak from bag; discard marinade.

Place steak on grill rack or broiler pan coated with cooking spray; cook 4 minutes on each side or until desired degree of doneness.

Let stand 5 minutes before cutting. Cut steak diagonally across grain into thin slices.

NOTE: Do not marinade longer than 2 hours or texture of steak will change due to the acidic nature of lemon juice.

  • 1 head green cabbage, coarsely shredded
  • 1 sweet red pepper, cut into julienne strips
  • 1/2 cup Kalamata olives, quartered
  • 1/2 cup parsley, chopped (more if desired)
  • 8 ounces feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • fresly ground black pepper (2-3 grinds)
  • 1/4 cup vinegar (wine or cider)
  • 2/3 cup oil (combination of olive and canola oil)
  • splash of balsamic vinegar (opt.)
  • 1 teaspoon ground oregano (adjust this amount to your taste)
  • fresh oregano, minced, if desired
Directions
  • It's a good idea to make the dressing ahead of time to help blend and enhance the flavors.  In a bowl, add the minced garlic, salt, pepper, vinegar, oils, and oregano; whisk until blended.
  • Shred cabbage coarsely (it has more crunch when coarsely shredded). Red cabbage may be used along with the green to add more color. May prepare the cabbage early in the day and store in the refrigerator (the size of the cabbage head will determine the number of servings.)
  • Cut the sweet red pepper into julienne strips, quarter the olives, chop parsley and crumble feta cheese.
  • Combine all the ingredients in a large salad bowl and toss gently right before serving.  
  • Pour dressing over all the salad ingredients right before serving.

  • 2 teaspoons olive oil

  • 1/4 cup almonds, dry roasted (optional)
Directions
In a large skillet, combine green beans and broth. Steam until tender, approximately 8-10 minutes.

Drain any liquid off green beans.

Wipe skillet and place over medium-high heat. Place beans in dry skillet. This will dry the beans before seasoning.

Once dry, add olive oil and garlic; cook, stirring 1 minute.

Remove from heat and season with salt and pepper. Stir in almonds, if desired.

  • 1 cucumber, peeled, finely diced
  • 1/2 teaspoon coarse salt
  • 1 cup plain Greek yogurt
  • 1 clove garlic, crushed
  • 2 teaspoons lemon juice
  • 1 teaspoon fresh mint
Directions
  • Peel cucumber; quarter lengthwise and remove seeds. Dice thinly and place in shallow bowl with coarse salt. Weigh down with plate. Refrigerate for an hour or more. Ring out liquid.
  • Mix cucumber and garlic in yogurt. Add lemon juice and mint. Salt to taste. Serve with pita bread.
NOTE: If you can't find Greek yogurt, drain regular plain yogurt through a coffee filter over a bowl overnight.

Cut bread halves into wedges.

  • 1/3 cup sugar

  • 1 1/2 cups rolled oats (quick or regular)
  • 1/2 cup brown sugar, packed firmly
  • 1/3 cup chilled butter or margarine, cut into small pieces
Directions
  • Preheat oven to 375° F.
  • In a large container, mix prepared apples and raspberries together. Make sure the apple variety selected is a baking apple that will not become mushy when cooked.
  • In a separate container, combine cornstarch, sugar, salt, and cinnamon. Stir into apple and raspberry mixture. Pour into baking pan.
  • In a separate container, combine oats, brown sugar, and chilled butter or margarine. Sprinkle mixture over the top of apples and raspberries.
  • Bake at 375º F for 30-45 minutes, until the topping has browned and the apples are tender. Can be served warm or cold, plain or with ice cream.

  • 1 1/2 cups flour - sifted
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • a few grinds of fresh black pepper
  • 1 teaspoon cayenne pepper
  • 1 cup monterey jack cheese - shredded
  • 1 cup colby jack cheese - shredded
Directions
  • Preheat oven to 400°.
  • In a mixing bowl, stir the dry ingredients and then cut in the butter to resemble the consistency of cornmeal.
  • Blend in the cheeses with a fork until well blended.
  • Shape into 1 1/2 to 2 inch rolls.
  • Chill for 30-40 minutes in the refrigerator and then slice each roll into slices approximately 1/4 inch thick.
  • Bake on an ungreased cookie sheet for approximately 10 minutes.
  • Remove from cookie sheet and let cool.
  • Store the cooled crackers in an airtight container.
  • Freezes well.
  • *These crackers can be made crispier by slicing them thinner before baking.

  • 1/2 cup butter, softened
  • 3 eggs, divided
  • 8 ounces cream cheese, softened

Directions
In a mixing bowl, blend dry cake mix, butter and 1 egg. Press into a 9x13" ungreased pan.

Beat cream cheese until smooth. Gradually blend in the powdered sugar. Stir in lemon peel and lemon juice until smooth. Reserve 1/2 cup of this mixture and refrigerate for later use.

Beat remaining 2 eggs. Add vanilla. Beat this mixture into the cream cheese mixture until well blended. Spread over the cake mixture. Bake at 350° until set, approximately 25-30 minutes.

Cool completely.

Spread the reserved cream cheese mixture onto the bars. Refrigerate until firm, cut into squares and serve.

  • 3 cups broccoli florets
  • 3 carrots, peeled, sliced
  • 2 teaspoons oil
  • 1 pound beef sirloin steak, cut into strips

  • 1/4 cup teriyaki sauce
  • 1 teaspoon ground ginger
  • 1/2 cup dry roasted peanuts, crushed (optional)
Directions
Cook pasta as directed on package, adding broccoli and carrots to the cooking water for the last 2 minutes of the pasta cooking time; drain.

In a large nonstick skillet, add meat and cook until browned on all sides, stirring occasionally.

Stir in dressing, teriyaki sauce and ginger to the browned meat. Cook until sauce thickens, stirring occasionally.

Toss pasta and meat mixtures in large serving bowl. Sprinkle peanuts just before serving, if desired.

NOTE: You could substitute 1 tablespoon freshly grated ginger root for the ground ginger.

  • 1 head cabbage, thinly sliced

  • 1 bag shredded carrots

  • 1 tablespoon fresh ginger, grated
  • 1 pound ground pork (chopped left over pork works well too)
  • 6 scallions, thinly sliced
  • 16 egg roll wrappers
  • 1 bottled or homeade sweet-n-sour sauce and spicy mustard for dipping
  • salt and peper
Directions
  • In small bowl combine soy sauce, vinegar and sugar.
  • In large skillet heat olive oil over medium heat. Add cabbage, carrots, garlic and ginger. Season with salt and pepper; cook, tossing vegetables until tender (about 3 5 minutes).
  • Raise heat to high, add pork and soy mixture. Cook until pork is no longer pink, 7-10 minutes.
  • Remove from heat, transfer to bowl to cool.
  • Lay wrappers flat on work surface and assemble one at a time.
    DEEP FRYING:
  • Heat 6 cups of vegetable oil until it reaches 250° F. Cook in batches of 4, fry until golden brown, turning accasionally. Drain on paper towels. Serve with sauce.
    BAKING:
  • Preheat oven to 400° F, lightly oil a baking sheet, place egg rolls on sheet and brush with oil. Bake until golden brown (about 15 minutes). Serve with sauce.
    FREEZING:
  • Prepare egg rolls as directed above. Freeze in a single layer until firm. Transfer to freezer bags. Can be frozen for up to 3 months. No need to thaw before baking or frying.

  • In a large bowl, combine coleslaw and green onions. Add almond mixture and combine.
  • In a jar or small bowl, combine oil, sugar, vinegar, black pepper, soy sauce and seasoning packet from the ramen noodle mix. Whisk until thoroughly blended.
  • Just before serving, pour dressing over salad; toss to coat evenly. Serve immediately.

  • 1 package peanut butter chips, 12 oz.
  • 1 can sweetened condensed milk
  • 1 package miniature marshmallows, 10 oz.

Directions
  • Add the margarine and peanut butter chips to a medium sauce pan and heat until they have melted together. Stir as they are melting to combine evenly.
  • Remove from the heat and add sweetened condensed milk. Stir until well blended.
  • Stir the miniature marshmallows into the mixture.
  • Divide the jar of peanuts into thirds and evenly spread 1/3 on the bottom of the baking pan.
  • Stir 1/3 into the mixture above.
  • Spread mixture on top of the peanuts in the bottom of the baking pan. Carefully press the mixture evenly into the pan.
  • Sprinkle the remaining peanuts on top. After they are evenly distributed, press them slightly into the bar mixture so they stick to the bars.
  • Place in the refrigerator to store. To serve, cut into bars that are approximately 1" x 2 1/2" in size.

  • 24 Brussels sprouts
  • 2 tablespoons olive oil, divided

Wash the Brussel sprouts well, trim the stem ends and remove any raggy outer leaves, then cut in half from stem. Toss in half of the olive oil, salt and pepper.

Heat olive oil in a large skillet over medium heat, place the Brussels sprouts in the pan flat side down, cover and cook for about 5 minutes. Test for doneness and cook a few more minutes, if needed.

Once tender, uncover, turn up the heat, and cook until the flat sides are deep brown and caramelized. Toss then to get some browning on the rounded side.

Add the cheese and toss once more.

  • In a small saucepan, warm refried beans over medium-low heat.
  • In a small bowl, mash avocados. Stir salt, lemon pepper and 1/2 teaspoon garlic powder into mashed avocados. Set aside.
  • Heat a large skillet to medium heat. Stir in beef, bell pepper and onion. Cook, stirring occasionally, until beef is done to your likeness, about 7 minutes; stir in cilantro.
  • Layer the tortilla chips along the bottom of a large baking dish. Spread refried beans evenly over each chip. Sprinkle cheese over beans, then spread meat mixture evenly on top.
  • Bake in preheated oven until cheese and beans are bubbly, about 20 minutes. Remove from oven, and top with sour cream and guacamole. Sprinkle lettuce, tomatoes and jalapenos on top.

  • 24 cups skinned and chopped tomatoes
  • 4 cups chopped onions
  • 4 cups chopped green peppers
  • 2 jalapeno peppers - add more for hotter salsa
  • 6 cloves garlic, minced
  • 5 tablespoons salt
  • 1 tablespoon pepper
  • 2 tablespoons chili powder
  • 1 cup vinegar
  • 2 cans tomato paste - 6 oz. can
Directions
  • Remove the skins and chop the tomatoes.
  • Chop the onions, green peppers, and jalapenos into small pieces. Be sure to remove the seeds from the jalapenos before chopping.
  • Mince the garlic cloves.
  • Place these vegetables and all the rest of the ingredients into a large pot.
  • Cook over medium high heat until the salsa mixture comes to a full rolling boil.
  • While the salsa is cooking, prepare canning lids and rings by placing in a saucepan, covering with water, and bring water to a simmer. Once lids have come to a simmer, turn heat off but leave saucepan with lids on the burner and allow lids to remain in the hot water until ready to use.
  • After the salsa comes to a full boil carefully pour the hot salsa into canning jars.
  • Wipe any salsa off the rim of the jar that might have spilled when filling the jars; seal with canning lids and rings.
  • Set the jars aside and allow the salsa to cool completely. The jars should seal while they are cooling.

  • 2 to 3 large avocados, ripened
  • 2 tablespoons onions, minced or grated
  • 1 clove garlic, minced or pressed
  • 1 teaspoon chili powder (or minced jalapeño pepper)
  • 1 large tomato, diced
  • 1 tablespoon fresh lime juice
  • salt and pepper to taste
  • 2 tablespoons cilantro leaves, chopped
Directions
  • In a medium bowl, combine onion, garlic, chili powder (or fresh jalapeño pepper), and diced tomato.
  • With a sharp knife, cut avocados in half, removing the pit. Spoon out the flesh into above mixture. Use a fork to mash the avocado into mixture. Add lime juice, cilantro, and season with salt and pepper to taste.
  • Cover with plastic wrap, laying the plastic wrap directly on the guacamole to prevent discoloration. Refrigerate until serving time. (This only keeps a couple of hours before discoloring so prepare shortly before serving.)
  •  Garnish with additional cilantro sprigs.

  • 1/2 cup water
  • 1 1/2 cups sugar

  • TO MAKE THE SYRUP: The lemons should be room temperature or warmer before the juice is removed. This will make it easier to squeeze the juice from the fruit.  Juice 3 to 4 lemons to produce 1 1/2 cups of lemon juice.  Set juice aside.
  • In a sauce pan, bring 1/2 cup of water to a boil and then add 1 1/2 cup of sugar. Continue to cook over medium low heat until sugar has completely dissolved.
  • Remove from the heat and add the fresh lemon juice. Stir to mix thoroughly and then allow the mixture to cool.
  • The lemon syrup can be stored in the refrigerator until needed or it can be mixed with water to produce lemonade.
  • TO MAKE THE LEMONADE: add lemon syrup to 4 1/2 cups of water. Taste to test for sweetness. If necessary, add a little more water. Refrigerate until chilled or serve over ice.
  • To make a single serving, add 1/3 cup of syrup to 3/4 cup of water.

  • To make glaze, bring pear nectar to simmer in large, non-stick skillet over medium-high heat. Add sugar, soy sauce, vinegar, ginger root, and cayenne. Stir until sugar is dissolved and sauce begins to simmer. Add pears and stir to coat. Cook, basting pears frequently, until pears are barely tender, 4 minutes. Mix remaining 2 tablespoons of pear nectar with cornstarch and stir into pear mixture. Simmer until sauce thickens slightly. Transfer to bowl and set aside. Wipe out skillet.
  • Combine flour, thyme, pepper, and salt on plate. Dredge chops in flour mixture, coating all sides and shaking off excess.
  • Using same pan, heat olive oil over medium-high heat and swirl to coat pan. Add pork chops and brown on each side, turning once, about 4 minutes per side. Turn heat to low and pour pear mixture over top, cover, and cook until chops and internal temperature on a thermometer reads 160 degrees F and pears are tender, about 5 minutes. Serve immediately.

  • 1 winter squash, about 1 1/2 lbs, preferably a smooth-skinned type such as butternut
  • 3 tablespoons olive oil, divided
  • 1 onion
  • 2 cloves garlic, or more
  • 1 teaspoon dried oregano
  • 1/3 cup dry wine
  • 2 cups vegetable or chicken stock, or combination of stock and water
  • 1 cup arborio rice (substitute other short or medium-grain rice)
  • salt and pepper
Directions
  • Peel, seed and dice squash into 1/2 inch cubes (should have about 3 cups). Dice onion, mince garlic.
  • In a large skillet, heat 2 tablespoons oil. When hot, add squash cubes in a single layer and cook, stirring occasionally, until tender. Salt and pepper lightly.
  • Heat stock and water in a small container and keep warm (microwave works well for this).
  • In a saucepan, heat 1 tablespoon oil and cook onion, garlic and oregano over low heat for 5 minutes, adjusting heat as necessary so garlic doesn't burn.
  • Add rice, stirring to coat well with oil. Raise heat to medium, add wine and stir until absorbed, 3 - 4 minutes.
  • Begin adding warm stock, about 1/2 cup at a time, stirring with each addition until liquid is nearly all absorbed before adding more. Continue until rice is tender (stock should be used up, or nearly so). Add salt and pepper to taste. Stir in squash cubes. Serve immediately.

  • 1 box chocolate cake mix - favorite kind
  • 1 package french vanilla instant pudding
  • 1 package chocolate instant pudding
  • 1 cup sour cream
  • 1 cup applesauce
  • 4 eggs
  • 1/2 cup warmed coffee
  • 2 cups semi-sweet chocolate chips
  • 2 cups chocolate/white chocolate chips
  • 3 tablespoons margarine
  • 3 tablespoons milk or half-n-half
  • 1 canister ready made frosting - German chocolate or regular chocolate
Directions
  • Preheat oven to 350°F.
  • In mixer bowl, mix together cake mix, pudding mixes, sour cream, applesauce, eggs and coffee. Mix until combined. Remove bowl from mixer, stir in chocolate chips.
  • Pour batter into greased/floured pan or pans.
  • Bake for 50 minutes in a bundt pan or until toothpick inserted into the center comes out clean.
  • For bundt, cool in pan completely before turning out on serving plate. For cake rounds, invert onto wire rack to cool. When cooled, place 1st round top side up on serving platter, spread frosting over entire top. Place 2nd round on top of frosted one, top side up. Pour melted* chocolate chips over top, allowing to drizzle over sides. Dust with powdered sugar if desired. For bundt, drizzle melted chips over the top and dust with powdered sugar.
*Melt chocolate chips and margarine in microwave on high for 30-40 seconds. Stir to combine, add milk to desired consistency and use immediately.
