Grilled Roast Beef Recipe

This simple grilled beef roast recipe can be enjoyed as the main entree for your meal or use it to make an assortment of different sandwiches and wraps. It is perfect for a backyard barbecue on Memorial Day, Father's Day, or the 4th of July.
Grilled Roast Beef Recipe

Ingredients
  • to 3 pound beef roast
  • cooking oil
  • Salt and pepper to taste
Directions
  • Turn grill on high and allow to heat up for 15 to 20 minutes.
  • Rub the roast with oil. Season to taste with salt and pepper on both sides. Other seasoning can be added if desired.
  • When grill is heat, place the roast over the direct heat and sear each side for 4 to 5 minutes.
  • Once seared, move to an area of indirect heat by leaving one side on medium-high heat and turning off the other side on a gas grill. Place the roast on the side that is turned off. On charcoal grill hot coals should be moved to one area and the roast should be place over the area where there are no coals.
  • Cover the grill and allow the roast to cook for about 1 hour for a medium rare 2-3 lb. roast. The temperature of the grill should be around 400° F. Check for doneness with a meat thermometer. For medium rare - 145°, medium - 160°, and well done - 170°. Cook for approximately 1 1/2 for medium and 2 hours for well done.
  • Be sure to check for doneness often because timing can vary depending on roast size and heat of the grill. If you don't have a thermometer for checking doneness you will have to cut into the roast close to the middle and check for desired doneness.
  • Roast should be removed from the grill when it is approximately 5° below desired temperature and then be allowed to set for 15 minutes before carving. In this time the temperature will rise approximately another 5°.
  • Carve and serve as desired.

  • 4 potatoes, washed
  • 1/2 onion, small, sliced
  • 4 cloves garlic (optional)
  • 4 tablespoons butter
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon black pepper
Directions
Preheat oven to 375 degrees. Slice potatoes thinly but not all the way through, leaving slices attached at the bottom.

Place each potato on a square of foil that will cover entire potato. Stuff some onion in between the slices and a clove of garlic, if desired. Place a pat of butter and seasonings on each potato. Wrap tin foil around entire potato.

Bake for 40-45 minutes. Great on the grill, too.


Easy Grilled Asparagus Recipe

Quick and tasty side dish to go with any meal. Asparagus is best in the spring when it is in season, but nowadays you can pick it up at the grocery store any time of the year. If you don't want to fire up the grill, roast them in the oven at 400 degrees F.

Melt butter and add garlic to the hot butter. Pour over the asparagus. Sprinkle with salt & pepper. Fold edges of foil in to seal and make a pouch.

Grill on indirect heat for 10 minutes or until tender.

  • 1 1/2 cups salad dressing
  • 1/4 cup milk
  • 1/2 teaspoon prepared mustard
  • 1/2 teaspoon onion salt

  • 1 tablespoon sugar
  • 6 hard boiled eggs - cooled and peeled
Directions
  • Cook the macaroni as directed on package; drain and rinse with cold water to stop it from cooking more.
  • While macaroni is cooking, mix the salad dressing, milk, onion salt, pepper, and sugar together; stir until well mixed.
  • Remove the yolks from the eggs and put in a separate bowl; set the whites aside.
  • Mash the yolks and then add to the dressing mixture. Stir until well mixed.
  • Slice the egg whites with an egg slicer and add to the dressing and egg yolk mixture. If you don't have an egg slicer just slice them into pieces with a knife.
  • Add the macaroni and stir the entire mixture together until evenly mixed.
  • Refrigerate until ready to serve.
Note: This salad can be made a day ahead of time. If salad seems a little dry you can add a little more salad dressing to moisten.

  • 1/3 cup evaporated milk (not sweetened condensed)
  • 3/4 cup butter melted
  • 1 cup nuts chopped (walnuts or pecans)

  • 14 ounces caramel topping - the thicker the texture the better
Directions
  • Preheat oven to 350º F.
  • In a large bowl, combine evaporated milk, melted butter, German chocolate cake mix, and chopped nuts. Stir with a spoon to form a doughy mixture.
  • Grease cake pan and press 1/2 of the dough into bottom of pan. Bake for 6 minutes.
  • Remove pan from oven and immediately sprinkle chocolate chips over baked dough. Pour caramel syrup over the top of the chocolate chips and crumble the remining 1/2 of uncooked cake dough over the caramel topping.
  • Bake for 18 minutes more. Let cool completely before cutting. It is best to refrigerate the entire pan of bars to keep it cool before serving so that the caramel doesn't become runny at room temperature.

Take cut up chicken and lay pieces on the rice and sauce. Sprinkle with dry onion soup mix. Cover with foil securely. Bake in 325 degrees F. oven for 2 1/2 hours.

  • To serve, spoon 1/2 cup mixture into serving glass, then fill with carbonated beverage.
  • Note: If slush is frozen, let stand at room temperature for at least an hour. Diet or sugar free ingredients are fine in this recipe.
  • For adult flavor: add vodka or gin if desired.

Note: This recipe makes a large salad so be sure to use a large serving bowl. This salad can also be made up the day before serving. It will keep nice in the refrigerator.

  • 1 cup milk
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 cup half and half
  • 1/2 tablespoon vanilla extract
  • 2 cups chilled whipping cream
  • 2 cups chocolate cream filled cookie pieces
Directions
  • Pour the milk into a heavy saucepan. Over medium heat bring the milk to a gentle simmer (approximately 175° F) or until it begins to bubble around the edges.
  • Remove from the heat. Then, add the sugar and salt and stir the scalded milk until sugar and salt are completely dissolved. Add half and half, vanilla, and whipping cream and stir until well blended.
  • Pour the mixture into a bowl and allow to cool to room temperature.
  • Once it has cooled, cover with plastic wrap and allow it to age in the refrigerator for at least 4 hours (or up to 24 hours). This aging process will produce ice cream with more body and a smoother texture. While the ice cream mixture is chilling in the refrigerator, break cookies into small bite size pieces. Place the pieces in a bowl or measuring cup and set aside until needed. After aging (chilling) the mixture, remove from the refrigerator and stir the mixture. The ice cream is now ready for the freezing process.
  • Follow the ice cream maker's instruction manual on the freezing process.
  • When the ice cream has thickened, but is still too soft to scoop, add the cookie pieces and stir until they are evenly distributed. Or, add the cookie pieces and start the ice cream maker churning again to stir them into the ice cream. Some makers have an opening in the top that is used to add flavorings as the ice cream is churning.
  • Once the pieces are mixed in, scrape the ice cream into another container with an airtight cover. Be sure to leave at least 1/2 inch head space for expansion. Place the ice cream in the freezer for several hours to harden before serving.

  • 1 1/2 pounds boneless pork sirloin cut into 1 inch cubes

    • 1/8 teaspoon salt
    • 1 can crushed pineapple - 8 oz.

    • Peel the sweet potatoes and then cut into 1/4" slices. The sweet potatoes darken quickly so you want to slice them just before using. Placing them in a bowl of cold water will help stop the darkening.
    • Melt the margarine in the bottom of a skillet over medium heat. Add the slice sweet potatoes.
    • Cook until browned on one side. Turn and then cover and cook for 5 minutes, turning the heat down to low.
    • Turn the potatoes and brown the other side over medium heat. Cover, turn heat on low, and cook for another 5 minutes or until the potatoes are tender. Do not overcook or the potatoes will become so soft.
    • Sprinkle with salt, add the pineapple and maple syrup to the sweet potatoes. Cook over medium heat until everything is heated thoroughly.
    • Serve immediately

    • 4 boneless rib-eye or New York strip steaks or filets mignons (12 ounce )
    • 2 tablespoons canola or olive oil
    • Kosher salt and freshly ground black pepper

    Twenty minutes before grilling, remove the steaks from the refrigerator and let sit, covered, at room temperature. Heat your trill to high. Brush the steaks on both sides with oil and season liberally with salt and pepper. Place the steaks on the grill and let cook until golden brown and slightly charred, 4 - 5 minute4s. Turn the steaks over and continue grilling for 5 to 6 minutes for medium-rare (an internal temperature of 135 degrees F), 7 to 8 minutes for medium (140 degrees F), or 9 to 10 minutes for medium-well (150 degrees F). Remove the steaks to a cutting board or platter, tent loosely with foil, and let rest for 5 minutes before serving.

    Use 2 large pieces of aluminum foil and set them out on the counter. Slice potatoes thin and divide between the 2 pieces of aluminum. Chop or slice onion and set on top of potatoes. Top with several pats of butter. Top with any seasonings you like, I use garlic salt, fresh ground black pepper, and Johnny's Seasoning Salt.

    Seal the edges by rolling and pinching the foil the long way, then roll the sides to seal.

    Grill on medium heat or over a campfire for about 45 minutes. Check them after 30 minutes.

    Directions
    • Preheat oven to 400 degrees F.
    • In a medium saucepan, melt butter and sauté the onion until tender but not brown, for approximately 5 minutes.
    • Remove the pan from the heat and add the muffin mix, milk, sour cream, chiles and then the egg. (Do not add the egg first or it will scramble in the hot onion mixture.) Then add half of the cheese, salt and dill.
    • Stir to combine and pour into prepared muffin tins.
    • Sprinkle the remaining cheese on top of each.
    • Bake muffins for 18-20 minutes or until a toothpick inserted into the center comes out clean.
    • Allow to cool slightly before removing them from the tins.
    *Note: These can also be made into a bread when baked in an 8x8 baking pan instead of muffin tins.

    Ingredients
    • 2 3/4 cups cake flour
    • 1 1/2 cups sugar
    • 3 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 12 tablespoons unsalted butter at room temperature and cut into chuncks
    • 3/4 cup milk
    • 1 1/2 teaspoons vanilla extract
    • 4 eggs - large sized and at room temperature
    • 3 cups whipping cream
    • 5 tablespoons sugar
    • 1 1/2 tablespoons vanilla extract
    • 1 cup raspberries - frozen or fresh
    • 2 cups strawberries - fresh and hulled
    • 2 tablespoons sugar
    • 1 lemon - zested
    • 2 cups strawberries - fresh, hulled and sliced for between layers and on top
    Directions
    • To make the cake, preheat oven to 350° F.
    • Lightly coat the cake pans with non stick cooking spray.
    • Sift the cake flour, sugar, baking powder and salt into a large mixing bowl.
    • Add softened chunks of butter and mix on low for 20-30 seconds. The mixture should be lumpy.
    • Add the milk and vanilla extract. Mix on medium speed to thoroughly blend the ingredients.
    • Scrape down the sides of the bowl and add in the eggs ones at a time making sure to combine well before adding each egg.
    • Divide the batter evenly between the two pans.
    • Bake until the cakes are golden brown and a toothpick inserted into the center comes out clean, approximately 30-35 minutes.
    • Set the pans on a cooling rack and allow them to completely cool. Run a knife around the edge of each and invert the cakes onto the racks.
    • With a serrated knife, cut each round cake in half horizontally through the center so that you end up with four rounds.
    • To make the whipped cream center, pour the whipping cream into a medium mixing bowl.
    • Whip on medium speed for two minutes then go up to high until the cream thickens.
    • Add the sugar and vanilla.
    • Continue whipping until soft peaks form.
    • Puree the fruit in a food processor along with two tablespoons of sugar and the lemon zest.
    • Gently fold the fruit puree into the whipped cream.
    • Place one of the bottom cakes onto a cake platter.
    • Top with approximatley one cup of the whipped cream and spread evenly. Arrange 1/2 cup of sliced strawberries around the edge of the cake
    • Place the second layer on top of that and continue layers of cake, whipped cream and strawberry slices until all four layers are finished.
    • Top with sliced strawberries.
