  • 8 pounds roasting chicken
  • 1 pound carrots - peeled and left whole
  • 2 pounds red potatoes - scrubbed and cut in half
  • 2 onions, white or yellow - peeled and quartered
  • 1 tablespoon salt (use extra for inside bird if desired)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika (add more directly on bird before baking if desired)
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon coarse ground black pepper
  • 1 tablespoon whole basil
  • 2 tablespoons extra virgin olive oil (may use less if desired)
Directions
  • Preheat oven to 350° F. Lightly spray bottom of roasting pan with a cooking spray.
  • Rinse chicken with cold water, pat dry and remove giblets. Place on a roasting rack in a large roasting pan, breast side up. Lightly salt the inside cavity of the chicken and secure the legs together with a string to avoid drying out while baking.
  • To make the savory baste, mix together salt, paprika, garlic & onion powder.  Add lemon juice. Stir in pepper, basil and the olive oil. Blend all ingredients well. Cover the breast and legs of the chicken with this mixture. Also use the savory baste on the carrots, potatoes, and onions that you place next to the chicken in the roasting pan.
  • Bake chicken uncovered about 25 minutes per pound, or until the meat thermometer reaches 180 degrees and the juices run clear. The pan may need to be covered the last 45 minutes if the chicken gets too brown.

  • 1 cup heavy whipping cream
  • 2 tablespoons sugar

Directions
Preheat oven to 350 degrees F.

Combine cookie crumbs, pecans and melted butter; press evenly into the bottom of a greased 9-inch spring form pan. Stand up whole cookies around edge of pan, rounded side of cookie against pan. Bake 10 minutes; cool completely on a wire rack.

In a small saucepan, combine bananas, lemon juice and brown sugar. Cook over medium heat until sugar dissolves. Remove from heat.

Beat cream cheese with an electric mixer until light and fluffy. Beat in sugar. Add eggs, 1 at a time, mixing well after each addition. Beat in vanilla. Gently stir in mixture.

Pour mixture over prepared crust. Bake for 45-55 minutes until center is set.

Cool completely, then refrigerate, not covered, for at least 6 hours.

Before serving, prepare whipped cream. Beat whipping cream on low until bubbles start to form, 20 to 30 seconds. Increase to medium speed and beat until it begins to thicken; then beat on high. Just before it reaches the soft peak stage, add the sugar and vanilla; continue to beat on high until stiff peaks form.

  • Approximately 1 hour before serving, remove the cover and pull the chicken apart in small pieces or shred.
  • Tear the refrigerator biscuit dough into pieces and place it on top of the chicken mixture in the slow cooker.

Directions
In a bowl, cream butter and brown sugar until light and fluffy. Beat in cream and egg.

In a separate bowl, combine dry ingredients and add to creamed mixture. Fold in the apples, chips and nuts.

Drop by teaspoonfuls onto greased or lined baking sheet. Bake at 350 degrees 12-15 minutes.

NOTE: Be sure that the apple pieces are small. They are very good with or without the glaze!

For Glaze, in a bowl, mix together all ingredients. If too thick, add more cream to get the right consistency. Drizzle over cookies. I make half of the glaze recipe and only frost half of the cookies.

Add cabbage, soy sauce, water and black pepper. Cover and reduce heat to medium-low. Cook about 10 minutes or until veggies are tender.

  • 1/4 cup green olives, sliced
  • 1 cup mozzarella cheese

Directions
Preheat oven to 350 degrees. Cook pasta according to package; Drain. In a large skillet, brown ground beef with onion until no longer pink; Drain. Stir in seasonings, tomato sauce, water, olives and pasta. Place in 8x11 pan. Cover with cheese and pepperoni. Bake for 30-40 minutes or until cheese is golden brown.

  • 1/2 cup Caesar dressing (favorite bottled brand)
  • 1/2 cup shredded Parmesan cheese (divided)
  • 2 cups Caesar-flavored croutons
Directions
  • In a large bowl, break romaine lettuce into small pieces. Sprinkle with 1/2 cup shredded Parmesan cheese.
  • Start with about 1/4 cup of your favorite bottled Caesar salad dressing (light or regular) and pour over the lettuce. Toss until lettuce is evenly coated. Determine if there is enough dressing on the lettuce to your liking. If not, add one or two more tablespoons and toss again. Repeat if necessary.
  • Add one to two cups of Caesar-flavored croutons and toss mixture to distribute evenly.
  • Sprinkle the top with more shredded Parmesan cheese and serve. If not serving immediately, place in the refrigerator. This salad can be mixed a little in advance but I wouldn't mix it up more than two hours before serving to make sure lettuce stays fresh and crisp.

  • FROSTING:

  • 8 ounces cream cheese - room temperature
  • 3 1/2 cups powdered sugar
  • 1 teaspoon vanilla

CAKE:
  • Grease and flour a 9 x 13 cake pan. Preheat oven to 275 degrees F.
  • Mix the mashed bananas and lemon juice together in a small bowl and set aside.
  • In another bowl, combine the flour, baking soda, and salt.
  • In a large mixing bowl, cream the butter and sugar together.
  • Beat eggs into the butter and sugar mixture one at a time. Beat in vanilla.
  • Mix in the flour a little at a time, alternating with the buttermilk.
  • Stir in the mashed bananas and then pour batter into the prepared cake pan.
  • Bake for approximately 1 hour and 20 minutes. Start checking for doneness after about 1 hour by poking the center of the cake with a toothpick. When it comes out clean, the cake is done. Baking times may vary so check with a toothpick to be sure the cake is baked properly.
FROSTING:
  • Combine the cream cheese and butter in a mixing bowl and beat until well blended.
  • Add in the powdered sugar and vanilla and beat until creamy smooth.
  • If the consistency of the cream cheese frosting is too thin, add a little more powdered sugar, starting with one or two tablespoons at a time until it is the desired consistency.
  • Spread frosting on the cake evenly.

Spicy Salmon Fillets Recipe

Ingredients
  • 4 salmon fillets, about 6 oz. each
  • 1/2 cup flour or fine cornmeal (use cornmeal for a gluten-free version)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano, finely crumbled
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (or to taste)
  • 2 tablespoons butter, oil, or a mixture of the two
Directions
  • Mix the cornmeal or flour (use cornmeal for a gluten-free version), paprika, salt, pepper, garlic powder, and oregano on a plate. Reserve half of the seasoning mixture; use the other half to pat onto one side of each fillet.
  • Heat the oil or butter (or mixture of the two) in skillet large enough to hold the fillets in a single layer.
  • Place the fillets, seasoned side down, into the pan.
  • Pat the remaining seasoning onto the top side of each fillet.
  • Allow a cooking time of 8 minutes for each inch of thickness. Carefully turn the fillets when half cooked.
  • Remove the fillets from the pan when the fish becomes opaque. Serve hot.

  • 1 bunch asparagus
  • 1 tablespoon olive oil
  • 2 teaspoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon sesame seeds (optional)
Directions
Clean asparagus. Line small baking sheet with foil.

Spread asparagus spears in a single layer on baking sheet. Drizzle with olive oil and balsamic vinegar; sprinkle with salt, pepper, garlic powder. Toss spears to coat. Make sure spears are in single layer again, sprinkle with sesame seeds, if desired.

Bake at 350 degrees for about 10 minutes until tender crisp, or until desired doneness.

NOTE: These can also be sautéed in skillet with same seasonings.

  • 2 tablespoons butter
  • 1 cup rice
  • 2 tablespoons McCormick® Perfect Pinch® Parmesan Herb Seasoning
  • 1/2 teaspoon McCormick® Parsley Flakes
  • 2 cups chicken broth
  • 2 tablespoons sliced almonds, lightly toasted
Directions
1. Melt butter in medium saucepan on medium heat. Add rice; cook and stir 3 minutes.

2. Stir in 1 tablespoon of the Seasoning and chicken broth. Bring to boil. Reduce heat to low; cover and simmer 20 minutes or until rice is tender. Remove from heat.

3. Stir in remaining 1 tablespoon Seasoning and almonds.Test Kitchen Tip: Prepare as directed, using 1/2 teaspoon McCormick® Garlic Powder and 1/4 teaspoon McCormick® Ground Black Pepper in place of Seasoning. Add 2 tablespoons grated Parmesan cheese with almonds.

Prepare as directed. Stir 1 cup frozen peas and 3 slices bacon, cooked and crumbled, into rice during last 5 minutes of cooking.

  • 1/2 cup water
  • 1 tablespoon finely shredded orange peel
  • 1 tablespoon sugar
  • 1 teaspoon freshly grated ginger
  • 1/2 cup orange liqueur
  • 1/3 cup juice from 1 medium orange (approximately 1/3 cup)
  • 1/4 cup honey
  • 6 cups to 8 cups fresh fruit of your choice, cut into large bite sized pieces
  • Fruit suggestions: Melons, kiwis, pears, apples, grapes, mangos, oranges, strawberries.
Directions
  • Combine water, orange peel, sugar and ginger in a small pan.
  • Bring mixture to a boil. Boil for 45 seconds.
  • Reduce heat to low, cover and continue cooking 4 to 5 minutes.
  • Uncover, turn off heat and add orange liqueur, honey and orange juice. Allow to cool.
  • Place prepared fruit into a 10 cup container. Pour cooled orange juice mixture over prepared fruit.
  • Cover and refrigerate overnight or a minimum of 2 hours.
  • Serve chilled or at room temperature. Garnish as desired with a sprig of mint, an edible flower or something similar.

Chocolate Cheesecake Brownies Recipe

Ingredients
  • 1 package fudge brownie mix (13-inch x 9-inch pan size)
  • 8 ounces cream cheese , softened
  • 6 tablespoons butter , softened
  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 eggs , lightly beaten
  • 1 can chocolate frosting
Directions
  • Preheat oven to 350 degrees F. Grease a 13x9 inch pan.
  • Prepare brownie mix batter according to package directions. Spread 2 cups into prepared pan; set aside.
  • In a small bowl, beat the cream cheese, butter, sugar, flour and vanilla until smooth. Add eggs; beat on low speed until combined.
  • Spread evenly over brownie batter. Top with remaining brownie batter. Cut through batter with a knife to swirl.
  • Bake for 28-32 minutes or until a toothpick inserted near the center comes out with moist crumbs.
  • Cool completely on a wire rack. Spread frosting over brownies.
