Ingredients
  • 1 whole chicken (4 lb )
  • 1 1/2 teaspoons salt
  • 2 teaspoons black pepper
  • 1 tablespoon garlic, minced
  • 1 tablespoon thyme leaves, chopped
  • 1/2 tablespoon sage leaves, chopped
  • 2 tablespoons parsley leaves, chopped (reserve stems)
  • 1/2 cup olive oil
  • 1 lemon, quartered
Directions
Preheat oven to 375°.

Wash the chicken and pat dry. Season well inside and out with the salt and pepper.

In a small bowl, combine the garlic, thyme, sage, parsley and olive oil. Rub the olive oil and herb blend into the cavity of the chicken as well as all over the exterior. Place the parsley stems in the cavity of the chicken, and squeeze each lemon quarter into the chicken and place the rind in as well. Place the bird in a roasting pan and put into the oven. Roast for about 1 hour, or until the chicken is golden brown, and the juices run clear.

Remove from the oven and let rest for 10 minutes before carving.

  • 24 Brussels sprouts
  • 2 tablespoons olive oil, divided
  • salt and pepper, to taste
  • 1/4 cup Parmesan cheese, grated
Directions
Wash the Brussel sprouts well, trim the stem ends and remove any raggy outer leaves, then cut in half from stem. Toss in half of the olive oil, salt and pepper.

Heat olive oil in a large skillet over medium heat, place the Brussels sprouts in the pan flat side down, cover and cook for about 5 minutes. Test for doneness and cook a few more minutes, if needed.

Once tender, uncover, turn up the heat, and cook until the flat sides are deep brown and caramelized. Toss then to get some browning on the rounded side.

Add the cheese and toss once more.

  • MANDARIN RING MOLD:
  • 3 packages orange gelatin (3 ounces each)
  • 2 1/4 cups boiling water (or choice of fruit juice)
  • 1 pint orange sherbet
  • 8 ounces frozen whipped topping, slightly thawed
  • 11 ounces mandarin oranges, drained
  • FRUIT SALAD:
  • 11 ounces mandarin oranges, drained
  • 13 ounces to 20 ounces of canned pineapple chunks or tropical fruit, drained*
  • 1 cup flaked coconut
  • 1 cup light sour cream
  • 1 cup miniature marshmallows (optional)
Directions
  • Mandarin Ring Mold: In a large bowl, dissolve gelatin in boiling water (or juice). Immediately stir in sherbet and whipped topping until well combined--the sherbet and whipped topping has dissolved.
  • Add drained oranges and pour into prepared mold.
  • Chill for several hours or overnight until firm.
  • Fruit Salad: Drain canned fruit and mix remaining ingredients together. Chill several hours.
  • Unmold mandarin ring onto a serving plate and fill center with fruit salad.

              *Any combination of canned fruit you desire.

  • 4 eggs
  • FILLING:
  • 1 cup brown sugar, packed
  • 3 teaspoons cinnamon

  • 3 cups powdered sugar
  • 2/3 cup milk
  • 2 teaspoons vanilla
Directions
Mix cake ingredients in mixer and pour 1/2 batter in 9x13 pan sprayed with Pam.

In a small bowl combine filling ingredients, brown sugar and cinnmon. Top cake with filling and pour or spread remaining batter over top.

Bake at 350 degrees for 45 minutes.

Poke holes in cake and pour glaze over top while cake is still hot.

  • 2 tablespoons brown sugar, packed
  • 1 teaspoon dry mustard
  • 2 bay leaves
  • 1 1/4 tablespoons hot sauce
  • Garlic, minced (optional)
Directions
  • Brown ground beef; drain.
  • Add onion to browned beef. Mix all ingredients together in a kettle. Cover and simmer on low for 1 hour.
  • Serve with cornbread, if desired.
OPTIONAL: If desired, add minced garlic along with the other ingredients. Add garlic to desired taste.

1. Mix flour, cinnamon, baking soda and salt in medium bowl. Set aside. Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in chocolate chips and walnuts. Refrigerate 1 hour.

2. Preheat oven to 375° F. Drop by by rounded tablespoons about 2 inches apart onto ungreased baking sheets.

3. Bake 8 to 10 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.

  • 1/2 pound round steak (rop round) cut into serving size pieces
  • 8 ounces can tomato sauce
  • 10 ounces seasoned diced tomatoes, drained
  • 1/2 cup sweet onion, chopped
  • 1/4 cup chopped celery
  • 1/4 cup red wine
  • 1 teaspoon kitchen bouquet
  • salt to taste
  • black pepper to taste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons water
Directions
  • In a large heavy skillet, brown onions, celery and steak pieces.
  • Place in dutch oven (or crock pot). Add tomato sauce, diced tomatoes, red wine and Kitchen Bouquet. Cook over medium heat for 3 hours - covered.
  • Thicken, if desired, at the end with 2 tablespoons flour blended with  2 tablespoons water; season with salt and pepper.
  • Serve over cooked noodles or rice.

  • 2 cups lettuce
  • 6 tablespoons mayonnaise
  • 3 teaspoons sugar
  • 3 dashes salt
  • 3 dashes pepper
  • 1 onion, diced
  • 1 can peas, drained
  • 1 cup cheese
  • 6 slices bacon, cooked, crumbled
Directions
Place 1/3 of lettuce in bowl.

Dot 2 Tablespoons of mayonnaise, top with 1/3 of onions, sprinkle 1 teaspoon sugar, 1 dash of salt and pepper. Add 1/3 of peas and cheese. Repeat layers twice. Don't toss.

Chill and toss just before serving. Sprinkle bacon on top.

Ingredients
  • 1 cup water
  • 1 tablespoon or 1 packet dry yeast
  • 1 cup white bread flour, more as needed
  • 1 cup whole wheat flour
  • 1/2 cup cornmeal
  • 1/2 cup rolled oats (oatmeal)
  • 1 teaspoon salt
  • 2 tablespoons honey
  • 3 tablespoons vegetable oil
Directions
  • Dissolve yeast in one cup of warm water. Let sit until proofed (foamy), about 10 minutes.
  • Add dry ingredients to the workbowl of food processor. Pulse a few times to blend.
  • Add honey and oil to proofed yeast. Pour into food processor and pulse with dry ingredients until dough makes a rough ball. Dough should be somewhat sticky. If it seems dry, add a tablespoon of water and pulse briefly.
  • Scrape dough out onto a lightly floured work surface and knead a few times, adding flour 1 tablespoon at a time if dough is too sticky to work with.
  • For the first rising: Put dough in greased bowl twice as big as dough ball (to accomodate risen dough), cover with a damp cloth, and let rise in a warm draft-free place until about doubled in size, about 1 hour. (To make a suitable place, microwave  1 glass of water 2 minutes on high and put the dough in the microwave with the heated water.)
  • For the second rising: When dough has about doubled, deflate it by pushing with your fist, fold it over on itself a few times, and allow to rise again for about 1/2 hour.
  • To shape loaves: Return dough to work surface and flatten with hands or rolling pin to remove any air bubbles. For a large loaf, shape the dough into an oblong. To make small loaves, divide dough in half and shape each half into a round or oblong loaf. On a baking sheet, sprinkle areas of cornmeal somewhat larger than the loaves. Center the loaves on the cornmeal areas, cover loosely with damp cloth, and let rise until about double. Preheat oven to 375° F.
  • Using a very sharp knife, razor etc., carefully (so loaf doesn't deflate and collapse) slash loaf tops with parallel or criss-cross lines. (This allows expansion as the bread bakes. You can skip this step; the bread will still bake just fine, but there may be irregular bulges in the crust.)
  • Bake in preheated oven until loaves sound hollow when tapped on the bottom, about 40 minutes. Cool on a rack before slicing.

Directions
  • In a mixing bowl, combine the ground beef, pepperoni, pizza sauce, Italian seasoning, garlic and onions.
  • Mix well to combine all of the ingredients.
  • Divide into four equal parts and pat into burgers.
  • Salt and pepper each burger to taste.
  • Fry the burgers in a large skillet or they can easily be grilled. Cook approximately 6 minutes on each side or until they reach the desired doneness.
  • Place a slice of mozzarella or provolone cheese on each right before they are finished cooking. Allow the cheese to completely melt over the burger.
  • Spread a tablespoon of pizza sauce on each bun. Place a burger on top with lettuce and tomato.

Melt butter in pan or dutch oven.

Break vermicelli in small pieces and add to pan and cook until golden brown, stirring constantly.

Add rice and stir until rice is well coated with butter.

Boil broth and add boiling broth to rice mixture. Season to taste. Cook, covered, over low heat until liquid is absorbed, about 25 minutes.

Stir lightly with fork. Let stand in warm place about 10 minutes before serving.

Cook broccoli.

Melt margarine and mix with crushed Ritz crackers. Spread crackers over broccoli mixture.

Bake covered at 325° for 25 minutes. The last 10 minutes, the dish should NOT be covered.

  • 1/2 cup carrot - shredded
  • 1 tablespoon fresh parsley - chopped

  • 1 teaspoon lemon pepper
  • 1 loaf Ciabatta bread - cut in half horizontally
  • 8 ounces Swiss cheese - sliced
Directions
  • Empty tuna into small bowl. Mix together with mayonnaise, radishes, and pickles. Set aside.
  • In other small bowl, mix together chopped cucumber, carrots, parsley, onion, and lemon pepper. Set aside.
  • Butter outside of bread, both top and bottom halves.
  • On bottom half of bread, place 1/2 the slices of Swiss cheese, then tuna mixture, then cucumber mixture, then rest of the Swiss cheese.
  • Put top half on sandwich. Wrap in large sheet of aluminum foil, sealing.
  • Place directly on preheated grill over medium heat.
  • Set a brick or heavy heatproof object on top of sandwich while cooking.
  • Turn sandwich over after 5-7 minutes and place brick on top again, grill another 5 minutes or until nicely browned and cheese is melted.
  • Serve warm.

  • 1 onion - medium, diced

  • 1 rosemary sprig, stemmed and chopped
  • 3 cups chicken broth - canned or homemade
  • 29 ounces tomato sauce
  • 29 ounces tomato - diced, with oregano, basil and garlic
  • 2 dashes of favorite hot sauce, more if desired
  • 1/4 cup honey
  • 1 tablespoon dill weed, dried
  • 1/2 teaspoon pepper
  • 1 teaspoon chili powder
Directions
  • In dutch oven, melt 5 1/2 tablespoons butter over medium heat. When melted, whisk in flour, continually whisking until smooth. Remove from heat.
  • In small skillet, melt the rest of the butter. Sauté the onion and garlic over medium heat for 2-3 minutes. Add the fresh basil and chopped rosemary. Sauté 2-3 more minutes.
  • Return dutch oven with flour mixture to medium heat on stove. Add in the onion mixture. Stir to combine. Slowly add chicken broth, 1 cup at a time, stirring continuously and allowing sauce to thicken slightly.
  • Continue adding broth until all is incorporated and thickened.
  • Begin adding the tomato sauce and diced tomatoes, stirring continuously, allowing mixture to thicken.
  • Season with hot sauce, honey, dill weed, pepper, chili powder. Stir to combine.
  • Serve hot with Italian popcorn or croutons.
NOTE: Can be made ahead; just reheat on low heat, stirring frequently.

  • 2/3 cup flour
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 4 pounds boneless beef short ribs or 4-6 pounds of bone in beef short ribs
  • oil
  • 1 large onion - chopped
  • 1 1/2 cups water or beef broth
  • 3/4 cup cider vinegar or red wine vinegar
  • 1/2 cup brown sugar
  • 1/2 cup chili sauce
  • 1/3 cup ketchup
  • 3 dashes Worcestershire sauce
  • 3 cloves garlic - minced
  • 2 tablespoons kitchen bouquet - if not using beef broth
Directions
  • Combine flour, salt and pepper in a container large enough to hold the ribs.
  • Roll the ribs in the flour mixture to coat.
  • Brown the meat in a small amount of oil in a skillet.
  • Transfer to a slow cooker.
  • Combine the remaining ingredients in the same skillet used to brown the meat.
  • Cook, stirring up the browned bits, until the mixture comes to a boil. Pour over the ribs.
  • Cover the slow cooker and cook on low for 8-9 hours.
  • Debone and serve.

  • 2 baking potatoes (large)
  • 2 tablespoons butter
  • 2 tablespoons milk
  • 1/8 teaspoon salt
  • 1 dash pepper
  • 1/2 cup shredded cheese
Directions
Heat oven 375°. Wash potatoes. Poke holes with fork.

Place on oven rack. Bake the potatoes for 1 hour or until tender; cool.

When potatoes cool enough to touch, cut lengthwise in half. Scoop out inside of potatoes and put in bowl. Set potato skins aside.

Increase oven to 400°. Mash potatoes in bowl, add milk, butter, salt, pepper and cheese. Put mashed potatoes back into potato skins. Put on cookie sheet and bake another 20 minutes.

  • 1 large onion, chopped
  • 4 stalks celery, chopped
  • 3/4 teaspoon liquid smoke (optional)
  • 2 tablespoons prepared mustard
  • 1/2 cup molasses
  • 1/2 cup brown sugar packed
  • 3/4 cup prepared barbecue sauce
  • 1/2 cup ketchup
Directions
  • In a large skillet, cook bacon until it is lightly browned. Add onion and celery and continue cooking until vegetables are soft; drain off excess grease.
  • Pour drained beans into slow cooker. Add bacon mixture and combine.
  • In a small bowl, combine mustard, molasses, liquid smoke, brown sugar, barbecue sauce, and ketchup. Stir into bean mixture.
  • Turn slow cooker on high for 4 hours or on low for 7 hours.

    Can be baked the day before to blend flavors and thicken mixture. Store in refrigerator and reheat before serving.

Raspberry Pretzel Dessert Recipe

Ingredients
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 1 1/2 cups pretzels, coarsely crushed
  • 8 ounces cream cheese, softened
  • 12 ounces whipped topping
  • 2 packages raspberry Jello (3.5 ounces each)
  • 2 cups hot water
  • 10 ounces raspberries, frozen
Directions
  • Mix pretzels, melted butter and 1/2 cup sugar.
  • Press into the bottom of a 9x13x2 baking pan and place in a 350° F. preheated oven. Bake for 10 minutes.
  • Mix cream cheese and remaining 1/2 cup sugar. Fold in whipped topping.
  • Spread on top of pretzel crust. Refrigerate.
  • Combine Jello with hot water. Stir until dissolved.
  • Fold in frozen raspberries.
  • Pour over cooled cream cheese mixture.
  • Refrigerate until ready to serve..
