  • 1 tablespoon butter
  • 1 cup fresh mushrooms, chopped
  • 1/4 cup onion , chopped
  • 4 garlic cloves , minced
  • 1 tablespoon lemon juice
  • 1/4 cup fresh rosemary , minced
  • 1/3 cup grated Romano cheese
  • 1 egg yolk
  • 3/4 teaspoon pepper
  • 1 teaspoon salt
  • 3 pounds pork loin
  • 1/4 cup Dijon mustard
Directions
  • For filling, in saute pan cook mushrooms and onion in butter over medium-low heat until tender, stirring frequently. Add garlic and cook 1 minute more. Remove from heat, stir in lemon juice, rosemary, egg yolk and cheese; set aside.
  • Butterfly the pork loin by cutting through roast horizontally to within 1/4-inch of the other side. Do not cut all the way through. Open out and pound to roughly a 6x8-inch rectangle.
  • Spread filling evenly onto meat. Season with the salt and pepper. Roll up lengthwise; tie with kitchen string at 1 to 2 inch intervals to secure.
  • Rub Dijon mustard over the pork loin. Place it in shallow pan and roast in a 350 degrees F. oven for 45 to 50 minutes or until internal temperature reaches 155 degrees F.
  • Remove from oven, let rest for 10 minutes. Remove string and slice to serve.

Golden Scalloped Potatoes Recipe

  • 5 large Yukon Gold potatoes
  • 4 tablespoons butter or margarine
  • 1 small onion, minced
  • 4 tablespoons flour
  • 1 teaspoon salt
  • 2 1/2 cups milk
  • 2 cups shredded Colby Jack cheese
  • paprika
Directions
  • Preheat the oven to 375°F.
  • Peel the potatoes and slice into 1/8 inch or less thick slices. Cover with cold water and set aside while preparing the sauce.
  • Heat the butter until hot in a saucepan over medium heat. Add the onions and cook until they are tender and starting to brown, approximately 5 minutes.
  • Stir in the flour and salt; cook for about 1 minute.
  • Gradually stir in the milk. Continue to stir as the mixture cooks. Cook until the mixture just comes to a boil and has thickened.
  • Remove from the heat and add 1/2 cup of the shredded cheese. Stir until it is all melted.
  • Drain the potatoes and pat dry with paper towels.
  • Layer half of the potato slices in the bottom of a 3 quart baking dish.
  • Spread have of the sauce over the potatoes and then sprinkle with half of the remaining shredded cheese.
  • Layer the other half of the potatoes on top of the sauce and cheese.
  • Spread the remaining sauce over the potatoes and sprinkle the remaining cheese on top of the sauce.
  • Sprinkle the top with paprika.
  • Cover the dish with foil and place it in the preheated oven. Bake for 1 1/2 hours covered.
  • Remove the foil and test for doneness. If the potatoes are close to being done when poked with a fork, leave the foil off and bake for another 15 to 20 minutes uncovered.
  • If the potatoes do not feel close to being done, cover them back up and bake for another 15 to 20 minutes before baking uncovered.

Directions
Preheat oven to 425°.

Cut broccoli into bite size pieces. Place broccoli in a mixing bowl and toss with olive oil, garlic, salt and pepper. Set aside.

Spread Panko bread crumbs into 9x13" metal cake pan. Place in oven for 2 minutes or until lightly toasted.

Remove crumbs from oven and add to broccoli mixture. Toss to combine. Return mixture to cake pan and place in oven, roasting until broccoli is tender, approximately 8-10 minutes.

Remove from heat, toss with cheese and serve.

  • 1 cauliflower head, trimmed with florets separated and cut into bite sized pieces
  • 49 ounces chicken broth
  • 1/2 lemon
  • 4 tablespoons olive oil
  • 1 onion - chopped
  • 2 carrots - diced
  • 2 stalks celery - with tops, finely chopped
  • 8 mushrooms - sliced (Optional)
  • 2 tablespoons flour
  • 1 teaspoon Beau Monde seasoning
  • 1 teaspoon rosemary - fresh, chopped
  • salt and pepper - to taste
Directions
  • Bring chicken broth to boil in stock pot or large sauce pan.
  • Drop in florets and lemon. Cover and simmer until florets are tender, about 5-6 minutes.
  • Remove lemon. Turn heat to low.
  • In skillet, heat oil over medium heat. Saute onion, carrots, celery and mushrooms until onions are soft.
  • Whisk in the flour.
  • Whisk in 2 ladles full of the cauliflower broth. Stir until smooth and thickened.
  • Add all back into cauliflower soup.
  • Add seasonings.
  • Cover and simmer 15 minutes.
  • Serve hot.
  • Use an immersion blender or food processor if you would like a smoother soup.

  • 5 pounds boneless, skinless chicken
  • 1 packet dry onion soup mix
  • 1 tablespoon 1 to 2 tablespoons black pepper
  • 1/4 cup chicken soup base
  • water
  • 20 hamburger buns
Directions
  • If using oven instead of crockpot, preheat to 350° F.
  • Place 5 to 6 pounds of chicken in a Dutch oven or crockpot.
  • In a bowl, mix together dry soup, black pepper and concentrated chicken soup base. Pour soup base mixture over chicken. Add water to pan to cover half of the chicken. Omit water, if using a crockpot.
  • Oven bake a minimum of 4 hours, or in a crock pot, set temperature on high for 20 minutes, then cook on low 8 to 10 hours. Chicken is finished cooking when it pulls apart easily. Allow meat to cool, then shred.
  • Skim any excess fat off of remaining juices. Place chicken into remaining juices and reheat for serving.
  • Top with onions, lettuce, or any desired garnish.

  • Use a wire whisk to mix all dry in a bowl. Set aside.
  • With a mixer, cream butter and sugar until light and fluffy. Add eggs and vanilla. Mix well. Slowly add the dry ingredients until all is incorporated and forms a nice dough. Chill for at least 1 hour.
  • Preheat oven to 350° F.
  • Roll the dough to the desired thickness and cut into desired shapes with cookie cutters.
  • Bake cookies on an ungreased cookie sheet for 8-10 minutes, or until the edges are just turning brown. Transfer the cookies to a cooling rack. Decorate as desired.

  • BARBECUE SAUCE:
  • 1/2 cup ketchup
  • 2 tablespoons whiskey
  • 1 tablespoon steak sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic - chopped
  • 1 pinch salt and pepper
  • STEAKS:
  • 4 New York Strip steaks - one inch thick
  • 3 cloves garlic
  • 1/2 teaspoon Kosher salt
  • 3 tablespoons olive oil
  • 1 tablespoon fresh rosemary - finely chopped
  • 2 teaspoons fresh ground black pepper

SAUCE:
  • In a saucepan, whisk all the sauce ingredients with 1/2 cup of water.
  • Bring to a bowl over medium high heat then reduce heat and simmer for 10-18 minutes, stirring occasionally.
NEW YORK STRIP:
  • Trim the exterior fat from the steaks if desired. Allow the steaks to stand at room temperature for 20 minutes before grilling.
  • Rough chop garlic on a cutting board and then sprinkle it with salt.
  • Using the sharp edge and flat side of a knife blade, crush the garlic and salt together to create a paste.
  • In a small bowl, mix the garlic paste with the oil, rosemary and pepper.
  • Smear the mixture evenly all over the steaks.
  • Grill over direct heat until cooked to desired doneness, turning once.
  • Six minutes for medium rare, eight minutes for medium, etc.
  • Remove from the grill and allow to rest for 5 minutes before serving.
  • Serve with barbecue sauce.

  • 1 head Romaine lettuce (large head)
  • 1 can anchovies, minced
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce

  • 1/3 cup extra virgin olive oil
  • 1/4 teaspoon black pepper
  • 1/2 cup Parmesan Cheese
  • 1 cup croutons
Directions
Cut romaine into bite-sized pieces.

Drain anchovies, reserving oil from the can. Mince and combine anchovies and garlic in a large bowl, mash with the back of the wooden spoon, stir in Worcestershire sauce and the juice of one lemon. Add olive oil to reserved anchovy oil to make 1/3 cup combined oil; whisk into anchovy-garlic-lemon mixture. Toss with Romaine lettuce.

Toast croutons just before tossing with salad and just before serving. Serve with freshly shaved Parmesan cheese and plenty of ground black pepper.

Brown beef, drain well. Stir in soups and pour into a 9 x 13 inch baking dish. Arrange fries on top. Bake uncovered at 350° for 50 - 55 minutes or until fries are golden brown. Top with shredded cheddar cheese.

  • 4 boxes or 2 large boxes of jello gelatin (small boxes)
  • 2 1/2 cups boiling water (do not add cold water)
Directions
Stir boiling water into gelatin. Dissolve completely.

Pour mixture slowly into 13 x 9 inch pan, lightly coated with cooking spray. Chill at least 3 hours. Jigglers will be firm after 1 hour, but may be difficult to remove from pan.

To cut Jigglers dip bottom of pan in warm water for 15 seconds to loosen gelatin. Cut shapes with cookie cutters all the way through the gelatin. Lift from the pan with index finger or metal spatula.

  • 1 large sweet onion, finely chopped
  • 2 medium zucchini, unpeeled and diced

  • 2 jalapeno peppers, seeded and minced
  • 2 cloves garlic, minced
  • 7 ounces canned corn, drained
  • 1 teaspoon ground cumin (adjust to taste)
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground thyme
  • 3/4 teaspoon salt (adjust to taste)
  • 1/4 teaspoon coarse ground black pepper (adjust to taste)
  • 2 cups cooked rice
  • 19 ounces canned black beans, drained
Directions
  • Prepare rice according to directions on box.
  • In a large skillet, cook sliced sausage* over high heat until browned, stirring several times to avoid burning.
  • Remove sausage from pan and add oil, onions, zucchini, peppers, garlic, corn, and dry seasonings. Cook for 5 to 7 minutes over medium heat, stirring frequently.
  • Add cooked rice and the beans, continuing to cook until all ingredients are hot.
  • Remove from heat and add sausage. Season to taste and serve.

 

 

            *Alternative: If turkey kielbasa is unavailable, use smoked sausage or precooked polish sausage.

  • Lay the wrapper with a point towards you, fill from point to point going across the wrapper. Roll up the bottom point over the top of the filling. Fold in the sides and continue to wrap up to the other point.
  • You can either steam them in the top of a steamer basket or fry them in 1 cup of canola oil until nicely browned, flip and brown the other side for approximatley 3-5 minutes each side. If you are going to steam them, lay lettuce leaves out to cover the bottom on the steamer so the rolls won't stick.

  • 1 pound lean turkey sausage, cut into 1-inch pieces
  • 2 bell peppers, coarsely chopped
  • 2 yellow onions, coarsely chopped
  • 1 can (14 1/2 ounces) diced tomatoes
  • 1 cup sliced celery
  • 2 pounds chicken thighs, skin removed
  • 1 package McCormick® Slow Cookers Savory Pot Roast Seasoning
  • 1 cup water
  • 1/4 teaspoon McCormick® Red Pepper, Ground
  • 1/2 pound large shrimp, peeled and deveined
  • 1 1/2 cups instant rice
Directions

1. Place sausage, bell peppers, onions, tomatoes and celery in slow cooker. Top with chicken.

2. Mix Seasoning, water and red pepper until blended. Pour over chicken. Cover.

3. Cook 8 hours on LOW or 4 hours on HIGH.

4. Gently stir in shrimp and rice. Cover. Cook 15 to 20 minutes longer on HIGH or until shrimp turn pink and rice is tender.

Slow Cooker Tip: For best results, do not remove cover during cooking.

  • 2/3 cup cornmeal - yellow
  • 2/3 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/3 cup onion - finely diced
  • 1/8 teaspoon black pepper - ground
  • 1/2 cup milk - fat free (skim)
  • 1 teaspoon cider vinegar
  • 2 tablespoons vegetable oil
  • 3 egg whites - lightly beaten
  • non stick vegetable oil cooking spray
Directions
  • Preheat oven to 425° F.
  • Combine the first eight ingredients in a medium mixing bowl.
  • In a small bowl combine the vinegar in with the milk.
  • Add the milk mixture, oil and eggs whites to the dry ingredients just until the corn meal is moistened - do not over stir.
  • Spray muffin tin with non-stick cooking spray.
  • Spoon the batter evenly, placing one tablespoonful into each muffin tin.
  • Bake for 12-15 minutes or until the hush puppies are lightly browned.
  • Remove immediately from the tins.

Ingredients
  • 6 tablespoons butter
  • 1/2 cup brown sugar, firmly packed
  • 1/2 teaspoon ground cinnamon
  • 4 bananas, halved lengthwise
  • 1/2 cup banana-flavored liqueur
  • 3/4 cup rum
  • 1 pint vanilla ice cream
Directions
Melt butter in skillet or chafing dish.

Add sugar and cinnamon. Cook over medium heat until bubbly.

Add bananas; heat for 3-4 minutes, basting constantly with syrup.

Combine liqueur and rum in a small long-handled pan; heat just until warm. Ignite with a long match, and pour over bananas.

Baste bananas with sauce until flames die down.

Serve immediately over ice cream.
