  • 1 pound crab meat, squeeze out any excess liquid
  • 1/2 cup bread crumbs, divided
  • 3 eggs
  • 1 tablespoon light mayonnaise
  • 3/4 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 3 tablespoons cilantro, fresh, minced
  • 1 tablespoon (to 2 tablespoons) vegetable oil
  • garnish: cilantro sprigs
  • garnish: lime wedges
Directions
  • In a large bowl, combine crab meat, 1/4 cup bread crumbs, 1 slightly beaten egg, mayonnaise, Worcestershire sauce, salt, pepper and 3 tablespoons fresh cilantro. Form mixture into patties.
  • Beat 2 eggs. Place eggs in a shallow pan or plate. Pour 1/4 cup of bread crumbs onto a plate. Dip each patty into beaten egg, covering both sides, and then cover with bread crumbs.
  • Add 1 to 2 tablespoons of oil to a large skillet. Over medium high heat, cook patties for approximately 3 to 4 minutes on each side. Serve hot.
  • Garnish with fresh lime wedges and cilantro sprigs.

  • 1/4 cup butter
  • 1/2 cup celery - chopped
  • 1/4 cup green onions - chopped
  • 1 cup long grain and wild rice - or just long grain rice
  • 1 cup orange juice - more if needed
  • 1 teaspoon salt
  • 1 orange - peeled and cut into small pieces
  • 1/4 cup almonds - toasted and slivered
  • 1 cup water
Directions
  • In saucepan, over medium heat, cook celery and green onions in butter until tender (4-5 minutes).
  • Add rice and cook another 4-5 minutes, stirring frequently.
  • Add orange juice, salt and one cup water.
  • Heat to boiling.
  • Reduce heat and cover, simmering the rice for approximately 30 minutes if just using long grain rice, until the liquid is absorbed and rice is tender.
  • If using long grain and wild rice mixture cook for approximately 45 minutes. If all liquid is absorbed before the rice is done, add another 1/2 cup of orange juice.
  • Continue simmering until rice is tender.
  • Shut off heat, gently stir in orange pieces and almonds.

  • Clean asparagus under running water. Snap the cut ends from the asparagus. They will snap at the first node which will eliminate the toughest part of the stalk.
  • Add two inches of water to an asparagus steamer, along with the salt, and boil. Add asparagus to the basket and lower into the boiling water. Remove asparagus from steamer when the tips are just tender.
  • Allow water to drain and serve while warm.

  • PIE CRUST:
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup shortening (chilled)
  • 1/2 cup cold butter or margarine
  • Ice water (6 to 8 tablespoons)
  • FILLING:
  • 1 can apricot pie filling
  • 1 tablespoon sugar (optional)

PIE CRUST:

  • In a large bowl, mix the flour and salt together. Cut butter into 1/4 inch slices. Using a pastry blender, cut the chilled shortening and butter into the flour and salt mixture until it forms coarse crumbs. The crumbs should resemble tiny split peas. Sprinkle the flour and fat mixture with 4 tbsp. of ice water. Gently mix, using a fork. If the crust seems dry, add more water, one tablespoon at a time. Only add enough water to make the dough hold together when a small piece is pinched between the fingers. Mix dough gently and quickly. Gather dough to form a ball, but do not overwork it.
  • Cut the dough in two to form two balls, one slightly larger than the other. Place the smaller ball of dough, which will be used as the top crust, in the refrigerator. Flatten the larger ball of dough into a 4 to 6 inch disk and place on a cool floured surface. Starting in the center, roll the crust outward. After every couple of rolls, rotate the rolling angle about 45° until you have rolled all around the crust. Always start rolling from the middle.
  • Check crust frequently to see if it is sticking to the surface. If it begins to stick, dust lightly with flour. Do not use any more flour than necessary. Roll crust until it is approximately 1/8 inch thick and 2 inches larger in diameter than an inverted pie plate.
  • Transfer the crust by partially rolling the crust around the rolling pin and gently lifting the crust on the pie plate. Be careful to center over the plate without stretching the dough. Once it is properly placed, unroll the crust from the rolling pin. Gently press the crust against the bottom and side of the pie plate. Trim the edges to about 1/2 inch, fold the overhang under so the crust is flush with the edge of the pie plate and flute the edges.
  • Place in the refrigerator while rolling out the top crust.
  • Prepare the filling for the pie before rolling out the top crust so that the filling is ready when the top crust is done. Roll out the smaller ball of dough in the same manner as the larger ball. Roll this dough out to approximately 1/8 inch thick and 10 inches in diameter.
  • Remove the bottom crust from the refrigerator and place filling in the crust. Moisten the edge of the crust with water and then center the top crust over the filled bottom crust. Transfer the top crust in the same manner as the bottom crust. Trim the overhang so that it is just slightly larger than the bottom crust. Fold the top overhang slightly over the bottom and then turn both under so they are flush with the edge of the pie plate. Flute edges as desired. Make slits in the top crust or poke several times with a fork to allow steam to escape when baking.
  • Bake according to the recipe used for filling. The crust should be golden brown when done.


  • FILLING:

  • Add the pie filling after the bottom crust has been placed in the pie plate. Spread out evenly and then sprinkle the sugar over the top of the filling. The sugar can be eliminated, if preferred.
  • Place the top crust on the pie and finish as directed. After cutting slits in top crust for venting, brush the crust with egg white.
  • Place in an oven preheated to 375°F and bake for 45 minutes or until crust is golden brown.

    • 5 pounds roast beef
    • 1 packet dry onion soup mix
    • 1 tablespoon black pepper - more to taste
    • 1/4 cup concentrated beef soup base
    • 3 cups cheddar cheese shredded
    • water - as much as needed
    • 10 hoagie buns - use 1/2 of bun for each sandwich
    Directions
    • If using oven instead of crockpot, preheat oven to 350° F.
    • Place 5 to 6 pounds of roast beef in a Dutch oven or crockpot. In a bowl mix together dry soup, black pepper and concentrated beef soup base. Pour soup mixture over roast. Add water to Dutch oven to cover half of the roast. Omit water, if using a crockpot.
    • Oven bake a minimum of 4 hours, or for a crockpot, set temperature on high for 20 minutes, then cook on low 8 to 10 hours. Meat is finished cooking when it pulls apart easily. Allow meat to cool, then shred.
    • Skim any excess fat from remaining juices. Place meat into juices and reheat for serving.
    • Grate cheddar cheese into strips. Add shredded cheese over the top of the meat and heat briefly to melt the cheese, or if the meat is sufficiently hot, allow cheese to melt over hot meat.

    • 1 pound ground beef
    • 1 egg, beaten
    • 1/2 cup bread or cracker crumbs, very finely crumbled
    • 2 teaspoons oil or butter
    • 1 tablespoon cornstarch
    • 1 teaspoon Worcestershire sauce
    • 1 cup milk (substitute water, if preferred)
    • salt and pepper
    Directions
    • Mix meat, egg, crumbs, 1/2 teaspoon salt and 1/4 teaspoon pepper. Shape into ovals or rectangles about 3/4" thick.
    • Heat a skillet large enough to hold steaks in a single layer, and film with oil. When hot, add meat and cook about 4 minutes, turn and cook to desired doneness, 8 - 10 minutes total cooking time.
    • While meat cooks, mix cornstarch and 1 tablespoon water to a smooth paste. Add Worcestershire sauce and milk.
    • When meat is done, remove to a platter. Pour or spoon off all but about 1 tablespoon fat from the pan, leaving any browned bits. Add milk mixture and cook, stirring constantly, until thickened, 1 - 2 minutes. Add salt and pepper to taste. Spoon gravy over meat and serve hot. Good with potatoes, noodles or rice.

    • In small bowl combine soy sauce, vinegar and sugar.
    • In large skillet heat olive oil over medium heat. Add cabbage, carrots, garlic and ginger. Season with salt and pepper; cook, tossing vegetables until tender (about 3 5 minutes).
    • Raise heat to high, add pork and soy mixture. Cook until pork is no longer pink, 7-10 minutes.
    • Remove from heat, transfer to bowl to cool.
    • Lay wrappers flat on work surface and assemble one at a time.
      DEEP FRYING:
    • Heat 6 cups of vegetable oil until it reaches 250° F. Cook in batches of 4, fry until golden brown, turning accasionally. Drain on paper towels. Serve with sauce.
      BAKING:
    • Preheat oven to 400° F, lightly oil a baking sheet, place egg rolls on sheet and brush with oil. Bake until golden brown (about 15 minutes). Serve with sauce.
      FREEZING:
    • Prepare egg rolls as directed above. Freeze in a single layer until firm. Transfer to freezer bags. Can be frozen for up to 3 months. No need to thaw before baking or frying.

    • 1/4 cup yogurt - plain, lowfat or regular

    • Sift together the flour, baking powder and salt; set aside.
    • With a mixer, combine the 1 cup of yogurt, sugar, eggs, vanilla, oil and lemon zest.
    • Add in the dry ingredients and mix just until combined.
    • Pour into a greased loaf pan and place in a 350°F preheated oven for 45 minutes or until a toothpick inserted in the center of the cake comes out clean.
    • Allow the cake to cool slightly in the pan.
    • Remove the cake from the pan and place onto a serving platter.
    • In a small saucepan, heat the orange marmalade just until melted and then stir in the 1/4 cup of yogurt.
    • Remove from the heat and allow to cool slightly. Then just slowly pour the marmalade mixture over the cake and allow it to pool around the bottom of the cake.
    • Store covered in the refrigerator.

    • 1 pound chicken breasts
    • 1 tablespoon garlic, minced
    • 1 package gnocchi (potato dumplings)
    • 1 cup milk
    • 1 can condensed cream of chicken or mushroom soup
    • 1 can mushrooms, drained
    • 1/4 cup shredded cheese
    • 1/4 cup Parmesan Cheese
    • 2 tablespoons roasted red peppers, diced
    • 2 teaspoons dried dill
    • 2 teaspoons garlic powder
    Directions
    In a medium heated skillet, melt butter.

    Salt and pepper chicken on both sides. Add chicken and garlic to skillet. When browned on both sides and cooked through, take out of pan and set aside.

    Turn heat down to medium low. Add milk, soup, mushrooms, cheese, red peppers, dill and garlic powder to the pan the chicken was cooked in. Scrape up the browned bits on the bottom of the skillet.

    While making cream sauce, cook gnocchi according to package directions.

    Dice or shred the chicken.

    When the gnocchi is finished cooking, drain and add gnocchi and chicken to the creamed mixture. Heat through, stirring occasionally.

    • 1 pound broccoli, rinsed and trimmed
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1/2 teaspoon kosher salt

    • 1/4 cup Parmesan cheese, grated
    Directions
    Preheat oven to 425°.

    Cut broccoli into bite size pieces. Place broccoli in a mixing bowl and toss with olive oil, garlic, salt and pepper. Set aside.

    Spread Panko bread crumbs into 9x13" metal cake pan. Place in oven for 2 minutes or until lightly toasted.

    Remove crumbs from oven and add to broccoli mixture. Toss to combine. Return mixture to cake pan and place in oven, roasting until broccoli is tender, approximately 8-10 minutes.

    Remove from heat, toss with cheese and serve.

    • 2 1/2 pounds pork roast
    • 2 tablespoons Dijon mustard
    • 1 tablespoon stone ground mustard
    • 1 tablespoon honey
    • 1 clove garlic, minced
    • 1 teaspoon dried thyme
    • 1 teaspoon dried rosemary
    • 6 slices bacon
    Directions
    Preheat the oven to 350 degrees F.

    In a small bowl, mix together the Dijon mustard, stone ground mustard, honey, garlic, thyme and rosemary.

    Place pork in a baking pan. Spread the honey mustard mixture all over the pork. Starting at one end of the pork, arrange the bacon slices over the pork, slightly overlapping one after the other. The pork should be covered entirely with bacon. Tuck the ends of the bacon underneath the pork.

    Place the pan in the oven and roast for 50-55 minutes until a meat thermometer reads 160 degrees F in the center.

    Remove pan from the oven and allow the meat to rest for 10 minutes.

    Slice the pork into 1/4-inch thick slices. Arrange slices on a platter and serve.

    • 1 1/2 tablespoons unsalted butter, divided
    • 1 tablespoon olive oil
    • 2 garlic cloves, sliced thin (large)
    • 1/2 pound Brussels sprouts, trimmed, halved
    • 2 tablespoons pine nuts
    • salt and pepper, to taste
    Directions
    Melt 1 tablespoon butter with oil in a heavy skillet over moderate heat. Add garlic and cook, stirring, until pale golden, about 3 minutes. Using a slotted spoon, transfer to small bowl.

    Reduce heat to low. Arrange sprouts cut side down in one layer in skillet. Sprinkle with pine nuts and salt to taste. Cook uncovered, without turning, until crisp-tender and golden brown on cut sides, about 10-15 minutes.

    Transfer sprouts to a plate with brown sides up. Leave the pine nuts in the pan.

    Add the remaining 1/2 tablespoon butter to the pan and cook nuts over moderate heat, stirring until pale golden, about a minute.

    Stir in the garlic from earlier, then spoon over the sprouts. Season with freshly ground pepper.

    • 1 package refrigerated sugar cookie dough - 16.5 oz.
    • 2 cups semi-sweet chocolate chips
    • 3 cups chopped pecans
    • 1/2 cup butter
    • 1 jar caramel topping - 12.25 oz
    • 1/2 cup brown sugar
    • 1 cup graham cracker crumbs
    Directions
    • Preheat the oven to 350° F.
    • Press the sugar cookie dough into the bottom of an ungreased 9 x 13 pan.
    • Sprinkle half the chocolate chips and chopped pecans over the sugar cookie dough. Press the chocolate chips and pecans into the dough lightly.
    • Melt the butter over medium-high heat in a heavy saucepan. Add the caramel topping, brown sugar, and graham cracker crumbs to the melted butter and stir to combine.
    • Bring mixture to a boil, stirring continuously.
    • Pour this mixture over the crust and spread out evenly.
    • Sprinkle the remaining chocolate chips and pecans over the top of the caramel topping layer.
    • Bake for 25 to 35. The bars are done when the edges are golden brown and the pecans are slightly toasted.
    • Remove from the oven and place on a cooling rack.
    • Allow the bars to cool for 30 minutes; then loosen them from the sides of the pan only. Leave them in the pan to cool completely before cutting.
