Directions
Line a 10x15" pan with foil.

In large bowl stir together butter, garlic, Parmesan cheese and seasonings. Add potato wedges and stir to thoroughly coat.

Place wedges on prepared baking pan. Bake uncovered in 425 degree oven for 30 minutes or until tender.

Directions
  • Preheat the grill to medium heat and brush the grates with oil.
  • Wash the peaches; then cut them in half.
  • Remove the pit from each peach. You may have to use a spoon to pry under the pit and loosen it.
  • Brush the cut side of the peaches with olive oil.
  • Place the peaches on the grill cut side down.
  • Grill for 3-5 minutes or until the peaches start to soften and show nice grill marks.
  • Serve each peach with a scoop of ice cream and a drizzle of honey.

  • 1 loaf French bread, sliced

  • 2 Heirloom tomatoes, chunked
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, sliced
  • 2 red, green or yellow bell peppers, seeded, cubed
  • 1/2 red onion, thinly sliced
  • 20 basil leaves, coarsely chopped
  • 3 tablespoons capers, drained
  • VINAIGRETTE:
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoons champagne vinegar
  • 1/2 cup olive oil
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon freshly ground black pepper
Directions
Heat stove-top grill. Brush bread with olive oil, sprinkle with salt. Grill for 5-8 minutes on each side, until nicely browned.

Meanwhile, in a small bowl whisk vinaigrette ingredients together.

In a large bowl, mix the tomatoes, cucumber, peppers, red onion, basil, and capers. Toss with enough vinaigrette to moisten. Season liberally with salt and pepper and arrange the vegetables on a platter.

Drizzle the bread with remaining vinaigrette and add to the platter. Serve immediately or allow the salad to sit for about 1/2 hour for the flavors to blend.

  • 1 1/2 cups fresh lemon juice, 3 to 4 lemons
  • 1/2 cup water
  • 1 1/2 cups sugar

  • TO MAKE THE SYRUP: The lemons should be room temperature or warmer before the juice is removed. This will make it easier to squeeze the juice from the fruit.  Juice 3 to 4 lemons to produce 1 1/2 cups of lemon juice.  Set juice aside.
  • In a sauce pan, bring 1/2 cup of water to a boil and then add 1 1/2 cup of sugar. Continue to cook over medium low heat until sugar has completely dissolved.
  • Remove from the heat and add the fresh lemon juice. Stir to mix thoroughly and then allow the mixture to cool.
  • The lemon syrup can be stored in the refrigerator until needed or it can be mixed with water to produce lemonade.
  • TO MAKE THE LEMONADE: add lemon syrup to 4 1/2 cups of water. Taste to test for sweetness. If necessary, add a little more water. Refrigerate until chilled or serve over ice.
  • To make a single serving, add 1/3 cup of syrup to 3/4 cup of water.

Directions
Slice beef into very thin strips.

Stir-fry beef in nonstick skillet until browned and juices evaporate.

Add onions, peppers and broccoli, if desired. Then add cornstarch mixture. Cook, stirring constantly until mixture boils and thickens.

  • 2 1/2 cups vegetable stock (canned)

Directions
  • Rinse 1-1/2 cups long-grain white rice in cold water; then soak the rice in cold water for 30 minutes and drain well.
  • In a large saucepan or covered skillet, heat 2 to 3 tablespoons olive oil over medium-high heat. Add 1/4 cup finely chopped white or yellow onions to the pan and saute quickly (1 to 2 minutes).
  • To the onions, add 2 cloves of minced garlic and cook for an additional 30 seconds.
  • Add the 1-1/2 cups of soaked and drained long-grain white rice and stir-fry for about 3 minutes.
  • Pour in 2-1/2 cups water or vegetable stock and bring to a boil.
  • Reduce the heat to low, cover the pan, and simmer for 15 to 18 minutes or until the rice has absorbed the liquid. Do not stir the rice during the cooking time. Leave the pan covered and do not check the rice until the suggested cooking time has elapsed.
  • Serve the rice immediately. Use the rice pilaf as a side dish; as a bed for grilled chicken, turkey, or fish; or as an accompaniment for stir-fried beef or pork dishes.

  • 1 can Golden Mushroom soup
  • 1/2 cup water

  • 1 tablespoon chili powder
  • 1 package fajita seasoning, divided
  • 12 tortillas (corn or flour), 5 or 6-inch dia.
  • 1 can Cheddar cheese soup
  • 1/4 cup milk
Directions
  • Prepare baking dish by lightly greasing the bottom and sides.
  • In a skillet, brown the ground beef and drain off the grease.
  • Add the mushroom soup, water, oregano, chili powder, and half the package of fajita seasoning to the ground beef and stir to mix well.
  • Bring this mixture to a boil; reduce the heat to low and allow to simmer for 5 minutes. Remove from heat.
  • Cover the bottom of the baking dish with the tortillas. Tortillas can overlap slightly but tear them in half or pieces cover the bottom the best you can. A little overlap is good.
  • Spread 1 cup of the meat mixture over the tortillas, spreading out as evenly as possible to cover the tortillas.
  • Continue to add layers of tortillas and 1 cup of the meat mixture until you have 4 layers of tortillas. The top layer should be just tortillas without any meat on top.
  • Mix together the cheddar cheese soup, milk, and the remaining half package of fajita seasoning; stir together until smooth and well mixed. Spread over the top layer of tortillas.
  • Bake at 350° F. for 30 minutes. Remove from the oven and let stand for 10 minutes before serving.
  • Serve with all your favorite toppings, such as shredded lettuce, chopped tomatoes, green onions, black olives, sour cream, salsa, and guacamole.

  • Combine the salsa, sour cream, and salad dressing in a small bowl.
  • Drizzle half to three-quarters of the mixture over the salad and gently toss to evenly coat. Add remaining dressing mixture if desired, depending on how much dressing you prefer.
  • Serve immediately with extra salsa and taco sauce on the side for those who prefer the extra flavor.

  • 2 pounds ground beef
  • 2 tablespoons dried minced onions

  • 1 can tomato soup
  • 1 can tomato juice (46 oz.)
  • 2 tablespoons sugar
  • 2 tablespoons butter or margarine
  • 1 to 2 lbs. of vermicelli pasta (or thin spaghetti)
  • grated Parmesan cheese (optional)
Directions
  • Brown the ground beef in a large frying pan. Add the onions to the ground beef as it is cooking; salt and pepper to taste. Drain the grease but leave the meat in the pan that it is browned in.
  • Pour the tomato soup into the pan with the ground beef and then add the tomato juice. If all the juice doesn't fit, set it aside to add later. Stir until the soup and juice are well mixed.
  • Bring the mixture to a full boil and then turn down to a slow boil (a little more than a simmer). Add the sugar and butter; stir to distribute evenly.
  • Continue to cook the sauce. If there was tomato juice left in the can, add this juice as the sauce boils down. Continue to add the juice until you have added the entire can. The sauce is done when you have added all the juice and allowed it to boil slowly for at least 5 minutes. The longer it cooks the thicker it will become.
  • Cook the spaghetti while the spaghetti sauce is boiling. When the spaghetti is done the sauce should be ready. Drain the spaghetti but do not rinse. Serve immediately while the spaghetti is hot. If the spaghetti sets for a while it will begin to stick together. If this happens, just rinse it with hot water to loosen it up again.
  • We just have everyone fill their plates with spaghetti and add the amount of sauce they desire. We place the Parmesan cheese on the table for the ones who want to add it. The spaghetti and sauce are great served with garlic toast.

  • 1/3 cup sugar
  • 1 teaspoon mustard
  • 1 teaspoon soy sauce
  • 4 cloves garlic, minced
  • 1/2 teaspoon Salt
  • 1/4 cup water
  • 1/2 cup shredded Parmesan cheese
Directions
  • Tear the lettuce into bite size pieces and place in a bowl. Add the onion slices and Parmesan cheese (reserve a little cheese to sprinkle on top); toss to mix in with lettuce.
  • Blend the dressing ingredients together; pour over combined lettuce and onion. Top with croutons and reserved Parmesan cheese.

  • 1 loaf sourdough bread, unsliced
  • 1/2 cup butter
  • 1 teaspoon basil leaves, chopped
  • 1 clove garlic, minced
  • 8 ounces sharp Cheddar cheese, shredded
  • 8 ounces Monterey Jack cheese, shredded
Directions
Preheat oven to 350 degrees F. Spray a sheet of heavy-duty foil with non-stick cooking spray and set aside.

Slice bread into 1 1/2 inch slices, cutting to, but not through to the bottom of the loaf.

Slice bread again into 1 1/2 inch slices in opposite direction in the same manner, forming bread-sticks. Place loaf on prepared foil.

In small saucepan, melt butter over low heat, stir in basil and garlic.

Gently separate the bread with your fingers, then spoon the butter mixture in all of the seams, making sure it is evenly distributed among the whole loaf. Wrap the loaf up in the foil and place on a baking stone or directly on the oven rack and bake for 10 minutes.

Remove from the oven and increase the oven temperature to 425 degrees F.

Open the foil and sprinkle the shredded cheese on top of the bread. There will be a lot of cheese, so try to push down as much as you can in between all of the crevices in the bread. Leave the foil open and return it to the oven. Bake until the cheese is completely melted, bubbling and starting to brown on top, about 15 minutes.

Let stand for 5 minutes before serving. Dig in!

Directions
Place pork loin in slow cooker, cover with root beer and cook on low for 6-7 hours or until pork shreds easily, drain well.

  • 1 package frozen, cubed potatoes
  • 8 ounces sour cream
  • 1 package shredded cheddar cheese, divided
  • 1 can cream of mushroom or chicken soup
  • 1 stick butter, melted
Directions
In a 9x13 baking dish mix together potatoes, sour cream, soup and half the cheese. Mix in melted butter. Top with remaining cheese. Bake at 350 for 30 minutes.

VARIATION: Make it a one dish meal, add cubed ham and peas.

  • 2 packages jello (6 ounce packages)
  • 20 ounces crushed pineapple, undrained
  • 10 ounces frozen strawberries
  • 3 bananas, sliced
  • 1 package sour cream (16 ounce pkg)
Directions
Mix jello per package directions.

Stir in frozen berries, pineapple and bananas. Pour half the jello mixture in serving bowl. Chill until setup.

Top with sour cream and pour remaining jello mixture to top. Refrigerate for several hours.

Crispy Powdered Sugar Cookies Recipe

Ingredients
  • 2 cups Crisco
  • 2 cups powdered sugar
  • 2 eggs
  • 1 teaspoon cream of tartar
  • 1 teaspoon soda
  • 2 teaspoons vanilla
  • 4 cups flour
  • Granulated sugar
Directions
  • Cream the Crisco, powdered sugar, and eggs together until light and fluffy.
  • Add the remaining ingredients expect for the granulated sugar; mix well. Chill dough for one hour.
  • Make into small balls, the size of a walnut. Put on a cookie sheet. Press flat with a glass that has been greased and dipped in granulated sugar. Sprinkle additional sugar over each cookie.
  • Bake at 350° for 11 - 13 minutes, or until edges turn light brown.
