  • 1 (3 to 4 pound) chicken, cut up and skin removed, if desired
  • 3 potatoes, peeled and cut into large pieces
  • 1 onion, coarsely chopped
  • 2 stalks of celery, chopped into 1" chunks
  • 2 cups baby or regular carrots
  • 1 cup chicken broth
  • salt and pepper to taste
  • paprika
Directions
  • Preheat oven to 350º F.
  • Place all vegetables in prepared baking dish and season to taste. Place cut up chicken parts on top of vegetables and pour broth over the top. Sprinkle chicken with paprika.
  • Cover tightly with aluminum foil and bake 1½ hours. Remove foil during the last 3 minutes of baking.
  • Serve hot.

    Any of your favorite vegetables in any amount will work with this recipe.

  • 1 can cream style sweet corn (15 ounce can)
  • 1/2 cup cornstarch
  • 1/2 cup sugar
  • 1/8 teaspoon salt
  • 1 coconut milk plus water to make 2 cup. (13.5 fluid ounce )
  • 1 5 fluid ounce can evaporated milk (small)
Directions
Mix corn, cornstarch, sugar and salt together in a large, deep saucepan. Add coconut milk and evaporated milk slowly, mixing well. Cook to boiling, stirring constantly. Continue cooking for a few minutes until a cooked flavor is obtained and mixture is thick.

While hot, pour into a greased platter or 13x9 inch pan and allow to set. Cut into squares or diamond shapes.

Top with toasted coconut flakes (spread thinly on a pan and bake at 350°F. until browned).

  • 1 packet dry onion soup mix
Directions
  • Lightly brown both sides of the pork chops in a nonstick skillet using a small amount of oil. Brown the chops for approximately 3 minutes on each side.
  • Place the pork chops into a 5-quart slow cooker.
  • Mix the chicken broth and soup mix until well blended and then pour over the pork chops.
  • Place the cover on the slow cooker and turn the heat on low. Cook for 6 to 8 hours.
  • When done, remove the pork chops and serve with potatoes or rice.

  • Preheat the oven to 375°F. Butter the bottom and sides of the baking dish.
  • Place the sliced apples in the bottom of the baking dish and spread out evenly.
  • Combine all the remaining ingredients together in another bowl and mix until well blended. The mixture should have a crumbly texture.
  • Sprinkle the crumbly mixture evenly over the apples. Place in the oven and bake for 30 minutes or until apples are tender when poked and the topping is golden brown and crispy.
  • Remove from the oven and serve while warm. Serve with a scoop of ice cream for an extra delicious treat.

  • 1 pound lean ground beef
  • 1 tablespoon oil
  • 1 large onion
  • 2 cloves garlic (optional)
  • 1 pound potatoes
  • 1 pound green beans, fresh, frozen or canned
  • 1 tablespoon Worcestershire sauce
  • salt and pepper
Directions
  • Heat oil in skillet. When hot, crumble in the ground beef. Salt and pepper lightly and cook without stirring until meat browns a bit.
  • While meat cooks, chop onion (and garlic, if using). Add to skillet and stir in.
  • Peel or scrub potatoes, cut in half the long way. Put potatoes cut side down and slice thinly (or grate coarsely). Prepare beans, if using fresh. If frozen or canned, just add to skillet along with potatoes. Mix Worcestershire sauce with 1/2 cup water, stir into skillet ingredients, and cover. Reduce heat to medium-low and cook until potatoes and beans are tender, about 15 - 20 minutes. Taste for seasoning and serve hot.

  • 6 slices bacon, cooked, crumbled
  • 1/3 cup almonds, sliced or slivered. toasted
  • 1/4 cup sesame seeds, toasted
  • 3/4 cup chow mein noodles (optional)
Directions
In a jar with a tight fitting lid, combine oil, sugar, vinegar, salt and pepper. Shake well. Chill for 1 hour.

Just before serving combine lettuce, bacon with toasted almonds and sesame seeds in a large bowl. Add dressing and toss. Top with chow mein noodles, if desired.

  • 1 2/3 cups flour

  • 1 1/2 teaspoons baking powder

  • 2 1/2 sticks unsalted butter, softened
  • 1 1/4 cups brown sugar, packed
  • 1 cup white sugar plus 2 tablespoons
  • 1 egg
  • 2 egg yolks
  • 2 teaspoons vanilla
  • 3 cups chocolate chips
Directions
In a large mixing bowl, sift all dry ingredients together.

In a separate mixing bowl, cream butter and sugars together until light and fluffy.

Add eggs, one at a time, beating well after each addition.

Add vanilla and mix until incorporated.

Combine dry and wet ingredients. Don't over mix.

Add chocolate chips.

Cover with plastic wrap and allow to sit in the fridge overnight or up to 3 days.

When ready to bake, preheat oven to 350 degrees F.

To get the cookies just the right size, use a standard cookie scooper, then divide that amount in half. Place cookie dough balls evenly onto a baking sheet. Bake for 8-10 minutes, or until barely done. You want to under-baked these cookies slightly so they turn out soft and gooey.

  • 15 pounds turkey
  • 1 orange - cut into wedges - more for garnish if desired
  • 1 lemon - cut into wedges - more for garnish if desired
  • 1 onion cut into wedges
  • 6 sprigs fresh rosemary
  • 6 sprigs fresh sage
  • 6 sprigs fresh oregano
  • 6 sprigs fresh lemon thyme
  • 7 tablespoons butter unsalted
  • 2 tablespoons Herbs de Provence
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons salt and pepper
  • 6 cups chicken broth
  • 1/3 cup flour
Directions
  • Preheat oven to 400°. Position the rack on the lowest third of the oven.
  • Rinse turkey, pull out neck and giblets and pat dry with paper towels. Place turkey on the rack set inside the roasting pan.
  • Place orange, lemon and onions wedges and 2 sprigs of each herb into the cavity of the turkey.
  • Tie turkey legs together unless already done by the manufacturer.
  • In a small saucepan, melt 2 tablespoons of butter, with herbs de provence, oil and 1 1/2 teaspoons each of salt and pepper.
  • Brush or rub the mixture all over the turkey and between the breast meat and skin.
  • Note: All the above prep can be done up to a day ahead. Cover and refrigerate until ready to bake - bring the bird back to room temperature before baking.
  • Cover turkey with tin foil, roast in oven for 20 minutes.
  • Pour 3 cups of broth into the pan and scrape up any bits from the bottom of the pan in order to make the gravy.
  • Add in the remaining sprigs of herbs.
  • Roast turkey for 40 more minutes.
  • Reduce heat to 350°.
  • Remove foil from turkey, pour one more cup of broth into the pan and continue roasting until the meat thermometer reaches 165-175° or juices run clear in the thickest part of the thigh when pierced. Approximately 1 1/2 hours more.
  • Transfer turkey to a platter when finished baking. Tent with foil and let stand for 30 minutes before carving.
GRAVY:
  • Spoon off any fat from the pan juices.
  • Add enough broth (1-2 cups) to the pan juices to measure a total of 4 cups.
  • Melt remaining butter in a heavy saucepan; add flour and whisk for one minute; whisk into the broth and pan juices.
  • Simmer until the gravy thickens, approximately 10 minutes, whisking often.

  • 4 pounds sweet potatoes peeled and sliced 1/4 inch thick
  • 1 cup water
  • 4 tablespoons unsalted, melted butter
  • 2 tablespoons spiced rum - or bourbon
  • salt and pepper to taste
  • 1 cup fresh cranberries
  • 1/3 cup brown sugar
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon cinnamon
Directions
  • Preheat oven to 350°.
  • Grease a large round or oval baking dish.
  • Arrange sliced potatoes in concentric circles in the baking dish, overlapping them slightly.
  • Pour 1/2 cup water over the potatoes, cover with foil and bake for 40 minutes or until tender.
  • Increase oven to 425°.
  • In a small saucepan, melt butter with the rum.
  • Spoon mixture over the potatoes, season with salt and pepper, leave uncovered and bake for approximately 25 minutes more.
  • Baste the potatoes with the mixture halfway through the cook time.
  • The mixture will get absorbed while cooking.
  • Meanwhile, in another saucepan, combine the cranberries, 1/2 cup water, and brown sugar.
  • Boil over medium heat until the cranberries start to burst. (Approximately 10 minutes)
  • Drain the cranberries, reserving the liquid, in a separate bowl.
  • Stir in the cayenne and cinnamon into the reserved liquid and spoon 1/2 of the mixture over the potatoes after the rum mixture has been absorbed.
  • Bake another 20 minutes, pouring the rest of the liquid over the potatoes after 10 minutes.
  • Bake until most of the liquid has been absorbed.
  • During the last 5 minutes, scatter cooked cranberries on top.
  • Serve hot or warm.

  • Remove blemishes and scrub potatoes. Slice them into quarters and place in a large sauce pan. Add water to pan until potatoes are covered.
  • Bring to a boil. Reduce heat, cover and continue cooking 20 minutes, or until potatoes are tender. Remove from heat, drain and peel off skins.
  • Place potatoes in a large bowl. Add butter and beat with an electric mixer. Gradually add the milk and garlic juice. Beat potatoes until they reach desired consistency, adding milk, if needed. Season with salt and pepper to taste.
  • Serve immediately.

  • 1/4 cup gingersnaps - finely crushed
  • 2 tablespoons pecans - finely chopped
  • 1 tablespoon flour
  • 1 tablespoon powdered sugar
  • 2 tablespoons butter or margarine - melted
  • 16 ounces cream cheese - softened
  • 1 cup sugar
  • 4 eggs
  • 15 ounces canned pumpkin
  • 1/4 cup milk
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 cups cool whip
  • Toasted pecans for garnish
Directions
  • In a medium bowl, combine the graham crackers, gingersnaps, pecans, flour, powdered sugar and butter.
  • Press evenly in the bottom of a 9 inch spring form pan; set aside.
  • In a large mixing bowl, cream the cheese and sugar with an electric mixer until fluffy.
  • Add 3 eggs all at once, mix on low speed just until combined.
  • Place one cup of the cream cheese mixture in a medium bowl and add to that the pumpkin, 1 egg, milk, cinnamon, ginger and nutmeg.
  • Beat on low, just until combined.
  • Pour pumpkin mixture into the prepared springform pan.
  • Top with the remaining cream cheese mixture.
  • With a knife, gently swirl through the layers to marble.
  • Place springform in a shallow baking pan. (Do not make this a water bath, the baking pan is only to help catch any drippings.)
  • Bake in a 350° oven for 65 minutes or until the center appears to be set when shaken.
  • Cool on a wire rack for 15 minutes.
  • Loosen the crust from the sides and cool for an additional 30 minutes.
  • Remove sides of the pan.
  • Cool completely.
  • Cover and chill for at least 4 hours before serving.
  • Spread cool whip on the top and sprinkle with roasted pecans.

  • Preheat the oven to 350 degrees F. Grease the bottom and sides of a 9 x 13 casserole dish.
  • Spread the mashed potatoes evenly in the bottom of the casserole.
  • Spread pieces of turkey and dressing over the mashed potatoes, using only half of each; then drizzle half the gravy over the turkey and dressing.
  • Sprinkle with pepper and add the other half of the turkey and dressing; drizzle with the remaining gravy.
  • Cover with foil and bake for 45 - 60 minutes.

  • Preheat oven to 350°.
  • Combine all cake ingredients in a large mixing bowl.
  • Mix on low speed for 30 seconds, then on medium speed for 4 minutes.
  • Pour into a greased and floured 10 inch bundt pan.
  • Bake for 50-55 minutes.
  • Cool in the pan for 15 minutes before inverting the cake onto a wire rack or plate to cool completely.
  • For glaze, mix powdered sugar and milk together until smooth.
  • Drizzle over cooled cake and allow to set before serving.

  • 8 10 inch corn tortillas
  • 1 1/2 pounds leftover turkey, cut into strips
  • shredded cheese of choice
  • sour cream
  • salsa
Directions
  • Heat tortillas in the microwave for 30 seconds.
  • Wrap them in foil and place in a 200 degrees F oven to keep them warm.
  • Use leftover turkey from the holidays and cut into strips.
  • Reheat the turkey in the microwave or oven until warmed through.
  • Place turkey strips into warmed tortillas.
  • Top with shredded cheese and fold in half to form a taco.
  • Serve with lime wedges, sour cream and salsa of choice.

  • 2 pounds red potatoes - washed and quartered
  • 3 sprigs fresh rosemary - stemmed and chopped
  • 1/3 cup olive oil
  • salt and pepper to taste
Directions
  • Place all of the ingredients, except the potatoes, in a mixing bowl. Stir to combine.
  • Add the potatoes and stir until all of the potatoes are covered with the oil mixture.
  • Heat the grill to medium.
  • Place the potatoes in a vegetable grill rack or you can place a piece of tin foil directly on the grill and grill the potatoes on top of that. If using tin foil, be sure to spray it with a nonstick cooking spray before placing it on the grill.
  • Grill for 20 minutes, stirring occasionally.

  • 1 package vanilla instant pudding
  • 2 cups cold milk
  • 1 package Oreo Cookies, Crushed
  • 1 cool whip (12 ounce) (large)
Directions
  • Mix the instant pudding and the milk together.
  • Crush the Oreos; stir into the pudding.
  • Fold in the Cool Whip. Refrigerate until thoroughly chilled prior to serving.
Note: Do not crush the Oreos too fine. If they are crushed too fine the salad will be mushy. (But it will still be very tasty!)
