  • Heat oven to 425 degrees F.
  • Peel the potatoes and cut into 1/4 to 3/8 inch slices, being careful not to cut completely through the bottom of the potato.
  • Place potatoes in a 13 x 9 x 2 baking pan. Brush each potato with butter and sprinkle with salt.
  • Bake 40 to 45 minutes or until tender and golden brown, basting occasionally with butter.

  • 1 can cream of mushroom soup (10 3/4 oz can)
  • 3/4 cup milk
  • 2 3/4 ounces french-fried onions, divided
  • 1/8 teaspoon pepper
Directions
Combine green beans, soup, milk, pepper and 1/2 of the onions; gently stir together to mix well.

Spread mixture in a 1 1/2 to 2 quart ovenproof casserole dish. Bake at 350° F for 25 minutes.

Top with remaining onions. Bake 5 minutes more.

NOTE: You may substitute 18 ounces frozen cut green beans, thawed and drained.

  • 2 cups hot water
  • 1 can crushed pineapple (20 oz.), drained
  • 3 cans mandarin oranges (15 oz.), drained
  • 4 cups orange crush soda (equals 32 oz.)
  • TOPPING:
  • 1/2 cup milk
  • 1 package instant vanilla pudding
  • 8 ounces cream cheese
  • 8 ounces Cool Whip
Directions
  • Pour both packages of jello in a large serving bowl. Add 2 C hot water and let cool.
  • Add fruit and soda; set aside in the refrigerator to gel.
  • Once the jello has fully set, mix all topping ingredients together and smooth over the salad.
Note: This recipe makes a large salad so be sure to use a large serving bowl. This salad can also be made up the day before serving. It will keep nice in the refrigerator.

  • 1 tube food coloring

Directions
Preheat oven to package directions. Grease and flour 3 8-inch cake pans.

Prepare cake according to package directions.

Separate evenly into 3 bowls. Using the food coloring, tint each bowl differently.

Bake according to package directions; allow to cool.

Remove from pans and slice tops off cakes so they are all level.

Place bottom layer onto cake plate. Frost top with frosting. Repeat with each layer.

NOTE: Use your creativity in coloring the layers. Either tint one bowl lighter and each one getting darker after that, or each bowl a different color.

  • 2 pounds ground beef
  • 1 tablespoon dried minced onions
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can chicken and rice soup
  • 1 can vegetable beef soup
  • 1 can water
  • 6 carrots, peeled and sliced into rounds and half moons
  • 6 medium potatoes, peeled and sliced
Directions
  • Brown the ground beef in a roaster on the stovetop. Use a pan that can also be used in the oven. Add the minced onions, salt, and pepper while browning the ground beef.
  • Cook the ground beef until the bottom of the pan has some nice browned areas and the meat has started to get some well brown pieces but do not burn.
  • Drain the grease from the meat and return to the burner and add all of the remaining ingredients. Cover the pan and continue to cook over medium-low heat on the stovetop or place in an oven preheated to 350 degrees F. If placing in the oven, heat on the stovetop until it begins to boil before placing in the oven.
  • Cook until carrots and potatoes are tender, approximately 60 minutes.

  • taco seasoning to taste
  • 1 cup Cheddar cheese - shredded
  • 2 packages Pillsbury Crescent Rolls
Directions
  • Brown hamburger. Drain. Add taco seasoning to taste. Melt 1 cup shredded cheese in the meat mixture.
  • Open packages of crescent rolls, lay them around the baking stone with the wide ends (end opposite from the points) along the outer edge of the round baking stone and the narrow points meeting in the center.
  • Place all 16 crescent rolls on the baking stone. When they are all on the stone will be completely covered.
  • Put a spoonful of meat mixture on each crescent roll. Roll crescent rolls back up (with meat mixture inside).
  • As you get a crescent rolled up, place it on the outer edge of the baking stone. Place all of the crescents on the baking stone. You may have to squeeze them together a little to get them to all fit.
  • Bake at 350 until rolls are browned.
  • Add all your favorite taco fixings: lettuce, cheese, tomatoes, onion, black olives, sour cream, taco sauce.

  • 3 tomatoes
  • 2 cups chicken stock
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 carrot, finely diced
  • 1 clove garlic, minced
  • 2 cups medium-grain rice
  • 2 teaspoons salt
  • 1 bay leaf
  • 1 Serrano chili, whole
  • 1/4 cup frozen peas, thawed (optional)
Directions
Cut the tomatoes in half, and remove the seeds. Add the tomatoes and 2 cups of stock to a blender and puree. Strain into a bowl and reserve the liquid. Add enough extra stock to make 4 cups of liquid.

In a large saucepan, heat the oil over medium-high heat. Add the onion and carrots and sauté for 4 minutes until the onion is translucent.

dd the garlic and sauté for 1 minute.

Stir in the rice and cook until slightly toasted, about 3 minutes.

Add the tomato stock mixture, stir and bring to a boil.

Add the salt, bay leaf, and Serrano chili. Reduce the heat, cover and simmer until the rice is tender, about 20 minutes.

Remove the pan from heat. If desired, scatter the peas over the top of the rice, cover and let the rice stand 5 minutes.

Fluff with a fork, transfer to a serving bowl.

NOTE: If you want a deeper colored rice, stir in 2 Tablespoons of tomato paste when adding the salt, bay leaf and chili.

  • 18 flour tortillas, 8 inch
  • 1/2 cup sugar
  • 2 teaspoons cinnamon

  • Heat oil to 375° F. in an electric skillet.
  • While oil is heating, cut tortillas into in half with a scissors; then cut each half into 1-inch wide strips.
  • Mix the cinnamon and sugar together; set aside.
  • When oil is preheated heated, begin frying the tortillas. Place enough tortilla strips to be frying just a single layer; don't overcrowd them.
  • Fry until lightly browned on one side and then flip them over to lightly brown the other side. Watch carefully because they cook fairly quickly.
  • When they are browned on both sides, remove and drain on paper towels.
  • Sprinkle with cinnamon and sugar mixture as soon as removed from the oil; then start frying the next batch.
  • Continue until all the tortilla strips are fried and coated with cinnamon and sugar.
Note: The finished chips cool fairly quickly and then can be stacked in a bowl or container to make room for more chips as they get done.

Ingredients
  • 2 cups raw white rice
  • 4 teaspoons chicken bouillon granules (or 4 bouillon cubes)
  • 3 1/2 cups water
  • 2 tablespoons butter
Directions
  • Use 1/2 tbsp. of the butter to coat the bottom and walls of the crock from a 2 or 3 quart slow cooker.
  • Add the rice to the buttered crock. Cut the remaining butter into slices and place on top of the rice.
  • Boil the water, add the bouillon to it, and stir until it is dissolved. Pour bouillon over the rice. Note: Canned chicken broth can be used in place of the chicken bouillon or water if desired. If using broth or water, add 1 teaspoon of salt.
  • Cover the slow cooker and turn it on low. Allow the rice to cook for 1 1/2 hours and then lift the lid and gently stir, but do not over stir. Stir only enough to turn rice over from top to bottom.
  • Replace the cover and cook another hour on low. Note: The rice does not have to be stirred if you are not there to do it but it will help the rice cook a little more evenly.
  • Taste the rice to see if it is done. The texture should be tender, if not, allow the rice to cook longer. If done, serve while warm. If left in the crock with the slow cooker turned off, the rice will stay warm for 1 to 2 hours.

Heat up the broiler. Use a broiling pan and cover with aluminum foil.

Cut the broccoli into florets. Place broccoli on prepared pan. Pour the olive oil on the broccoli. Sprinkle with garlic salt, pepper and Parmesan cheese. Mix until everything is coated. Put in the oven in the top rack for 8-12 minutes.

NOTE: The cheese has to melt and the broccoli gets a bright green color. If you like, keep it in the oven for few extra minutes until starts getting light brown and the broccoli will get crunchy.

Mix sugar, sour cream, butter and eggs on low for 1 minute.

Beat bananas and vanilla into sugar mix for 30 seconds.

Beat remaining ingredients into banana mix for 1 minute. Spread into a greased 15 1/2x10 1/2 inch pan.

Bake for 20-22 minutes at 375 degrees F.

For glaze, mix ingredients. Beat until smooth. Spread onto bars when cooled.

  • 2 tablespoons olive or canola oil
  • 1 onion
  • 1 pepper
  • 2 cloves garlic, or more if preferred
  • 1/4 cup chopped jalapeno pepper (optional)
  • 1 pound ground meat (beef, lamb or turkey)
  • 2 cups tomato pieces, canned or fresh, with juice
  • 2 cups corn kernels, fresh, canned or frozen
  • 1/2 cup broth, water or wine
  • 1 teaspoon chili powder, or to taste
  • 1 cup corn meal
  • 1 cup grated cheese (cheddar, jack, or any kind that melts well)
  • salt
Directions
  • Chop onion, garlic and pepper(s). Heat oil and cook onion, garlic and pepper until softened-- about 5 minutes. Mix meat with 3/4 teaspoon salt, crumble and add to pan. Cook and stir until meat is done.
  • Add tomatoes, corn, broth and chile powder. Simmer together while preparing the corn meal.
  • Preheat oven to 350° F.
  • Bring 2 cups water to a boil; slowly add corn meal, stirring vigorously to prevent lumping. (Mixture will be quite thick.) Add 1/2 teaspoon salt, or to taste.
  • Stir corn meal mixture into other ingredients.  Sprinkle cheese over the top and bake about 30 minutes.
  • TIP: if you use an oven-proof skillet to prepare ingredients, bake the pie in it and save cleaning up an extra dish.

  • 1 pound fresh carrots
  • 1/4 cup vegetable oil
  • salt (to taste)
  • pepper (to taste)
Directions
  • Preheat oven to 400 degrees F.
  • Clean and peel carrots. Cut carrots in half lengthwise and then cut into 1 1/2 to 2 inch long pieces. Place carrots on a baking sheet and lightly coat with vegetable oil.  Season the carrots with salt and pepper to taste.
  • Bake in the oven for 20 to 30 minutes until carrots are tender-crisp and lightly browned.
  • Serve while hot.

  • 2 cups crushed pretzels
  • 3/4 cup sugar
  • 3/4 cup butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 8 ounces frozen whipped topping, thawed
  • 1 can cherry pie filling, 21 oz. can
Directions
  • Mix the pretzel, sugar and melted butter together; reserve 1/2 cup of mixture and set aside.
  • Pour into a 9 x 13 baking dish. Press evenly into the bottom.
  • Place the cream cheese and powdered sugar in a mixing bowl; beat until smooth. Fold in the whipped cream.
  • Spread half over the pretzel crust. Spread the pie filling over the cream cheese and then spread the other half of cream cheese over the pie filling.
  • Sprinkle the reserved pretzels over the top of the dessert. Cover and refrigerate for 4 hours or overnight.
