  • Chicken legs
  • Canola oil
  • Butter - melted
  • Salt and pepper to taste
Directions
  • Preheat the grill. Coat the surface of the chicken legs with canola oil.
  • Place the chicken legs on the preheated grill. Baste the legs with melted butter and then season to taste with salt and pepper.
  • Grill the legs until they begin to brown on the first side. Turn and baste with butter again.
  • Continue to grill and turn the legs as each side browns. Baste with melted butter after each turn.
  • Once the legs are nicely browned, check for doneness. Poke with a fork and if juices run clear (not pink) they should be done. You can also check with a thermometer. It should read 175° F. when done and then be allowed to set for 10 to 15 minutes. The temperature should rise to 180° F. after setting.

  • 6 potatoes
  • 6 tablespoons butter or margarine
  • 1 onion - sliced
  • Salt and pepper to taste
Directions
  • Peel the potatoes and cut into slices that are no more than 1/4 inch thick. Note: you do not have to peel the potatoes if you prefer the skins left on.
  • Lay out four large pieces of foil. Make sure the foil will be big enough to seal the potatoes properly. If you are not using heavy duty foil you may want to double layer the foil.
  • Divide the potatoes slices out evenly onto the four pieces of foil.
  • Dab each pile of potatoes with 1 1/2 tbsp. of butter.
  • Lay onion slices on top of the potatoes; salt and pepper to taste.
  • Wrap potatoes and onions in the foil, making sure all sides are sealed tightly.
  • Place on a preheated grill on medium heat. Cook for approximately 40 to 45 minutes or until the potatoes are tender when poked with a fork. Turn once or twice during the grilling time.

  • DRESSING:
  • 1 cup mayonnaise
  • 2 tablespoons sugar
  • 1 1/2 tablespoons vinegar
  • 1 teaspoon celery seed
  • 1 teaspoon mustard, ground
  • 1/2 teaspoon seasoning salt
Directions
  • Peel and slice the cucumbers. Mix with the coleslaw mix.
  • Combine all the dressing ingredients and stir until well blended.
  • Pour part of the dressing over the cabbage and cucumbers and toss to coat. Continue to add dressing until the coleslaw is coated to your satisfaction. You may not use all of the dressing, depending on your preference.
  • Refrigerate to chill before serving. Toss lightly before serving.

  • 18 pasta shells - jumbo
  • 1 1/2 pounds ground beef
  • 8 ounces taco sauce
  • 3 ounces cream cheese
  • 2 teaspoons chili powder
  • 1 cup Mexican cheese
Directions
  • Cook shells; rinse in cold water and set aside.
  • Cook ground beef until no longer pink.
  • Add 1/2 taco sauce, cream cheese, chili powder, and 3/4 cup Mexican cheese.
  • Stuff shells with mixture and place in a greased 9 x 13 baking pan.
  • Drizzle remaining half taco sauce on top.
  • Bake at 350° for 35 minutes. Uncover, spread 3/4 of remaining cheese over top and then bake for 10 more minutes.
  • Sprinkle last bits of cheese over final dish. Serve immediately.

  • 3 tomatoes
  • 2 cups chicken stock
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 carrot, finely diced
  • 1 clove garlic, minced
  • 2 cups medium-grain rice
  • 2 teaspoons salt
  • 1 bay leaf
  • 1 Serrano chili, whole
  • 1/4 cup frozen peas, thawed (optional)
Directions
Cut the tomatoes in half, and remove the seeds. Add the tomatoes and 2 cups of stock to a blender and puree. Strain into a bowl and reserve the liquid. Add enough extra stock to make 4 cups of liquid.

In a large saucepan, heat the oil over medium-high heat. Add the onion and carrots and sauté for 4 minutes until the onion is translucent.

dd the garlic and sauté for 1 minute.

Stir in the rice and cook until slightly toasted, about 3 minutes.

Add the tomato stock mixture, stir and bring to a boil.

Add the salt, bay leaf, and Serrano chili. Reduce the heat, cover and simmer until the rice is tender, about 20 minutes.

Remove the pan from heat. If desired, scatter the peas over the top of the rice, cover and let the rice stand 5 minutes.

Fluff with a fork, transfer to a serving bowl.

NOTE: If you want a deeper colored rice, stir in 2 Tablespoons of tomato paste when adding the salt, bay leaf and chili.

Directions
  • Combine corn mix and onion.
  • Combine the remaining ingredients and add to the corn bread mixture just until moistened.
  • Pour into greased 9 x 13 pan.
  • Bake at 350° F for 50 to 55 minutes or until lightly browned.
  • Serve warm.

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8-10 minutes or until al dente; drain and rinse with cold water.

In a large bowl, combine all ingredients, ending with the salad dressing. Toss to coat and refrigerate until ready to serve.

Bring water to a boil on stovetop, season with sugar and salt if desired. Place corn in boiling water and boil for 8-10 minutes.

Serve boiled corn with prepared butter.

Directions
  • Preheat oven to 425°. Lightly grease large baking sheet.
  • Unroll pizza dough and transfer to prepared baking sheet. Press dough into a 12x9 rectangle.
  • Brush dough with melted butter.
  • In small bowl, mix cheese, Italian seasoning, garlic powder and sprinkle over dough.
  • Using a sharp knife, cut dough crosswise into 12 1 inch strips. Then cut lengthwise to make 24 strips. Bake at 425° for 10-15 minutes.
Note: The dough can be baked without cutting into strips. Strips can then be cut after it comes out of the oven.

  • 2/3 cup sugar
  • 3 tablespoons all-purpose flour

  • 4 baking apples, peeled, diced
  • TOPPING:
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1/3 cup oatmeal
  • 1 teaspoon cinnamon
  • 1/4 cup butter, softened
  • 1/4 cup caramel topping
Directions
Unroll pastry onto baking sheet or pizza pan.

Combine sugar, flour and cinnamon in a bowl. Add apples and toss. Arrange the apples to cover the pastry, leaving 1/2 inch around the edge.

For the topping, combine the flour, brown sugar, oatmeal, cinnamon and butter. Using a fork, combine to form a coarse crumb. Sprinkle over apples.

Bake at 375° for 35-40 minutes or until apples are tender and crust is golden brown. Remove from the oven and immediately drizzle with the caramel topping.

Serve warm with ice cream if desired.

Place under broiler for 6-8 minutes or until cheese is melted and bread is lightly browned.

  • 1 package fresh mint leaves (.75 ounce pkg)
  • 1/2 cup sugar
  • 1/2 cup water
  • 2 oranges
  • 2 lemons
  • 2 limes
  • 5 cups chilled lemon-lime soda
Directions
Tear six mint leaves in half and place in pitcher or punch bowl. Set aside.

Combine sugar and water in microwave-safe bowl. Finely chop remaining mint leaves and add to sugar water. Zest the orange, one of the limes and one of the lemons. Add zest to mint and sugar water mixture. Microwave 2-3 minutes or until sugar dissolves.

Slice 1 orange, lemons and limes in half. Reserve 1 orange, 1 lemon half and 1 lime half.

Juice reserved lemon and limes halves and orange. Add juices to pitcher or punch bowl.

Pour mint/sugar water mixture through strainer into pitcher or punch bowl, discarding the chopped mint. Carefully add soda to avoid overflow.

Place sliced fruit into pitcher or punch bowl. Stir well, serve over ice.

NOTE: For an adult version, add citrus rum.

  • 1/2 pound ground pork sausage
  • 4 cups cabbage, chopped
  • 1 carrot, shredded
  • 1 cup mushrooms, chopped (optional)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 3 tablespoons soy sauce
  • 1 package egg roll wrappers
  • 1/4 cup cold water
  • 1 tablespoon cornstarch
Directions
Cook pork sausage until no longer pink; drain and set aside.

Stir fry vegetables, garlic and ginger with sesame oil just until tender. Remove from heat and add pork sausage and soy sauce.

In a small bowl, combine water and cornstarch. Mix well.

Lay out one egg roll wrap with a corner pointed toward you. Place about 1/4 cup of filling on egg roll wrap and fold corner up over the mixture. Fold left and right corners toward the center and continue to roll. Brush a bit of cornstarch mixture on the final corner to help seal the egg roll. Place egg rolls into heated oil and fry, turning occasionally, until golden brown. Remove from oil and drain on paper towels or rack, then they are ready to enjoy!

NOTE: These egg rolls could also be baked in a 450 degree F oven for 20 minutes. Spray with cooking spray before putting in the oven fro a crispy wrapper.

  • 1/4 teaspoon McCormick® Red Pepper, Crushed
  • 1 teaspoon cornstarch
  • 2 tablespoons oil, divided
  • 1 medium onion, sliced thin
  • 1 cup diagonally sliced carrots
  • 2 cups broccoli florets
  • 2 cups sugar snap peas
  • 1 large red bell pepper, cut into strips
  • 2 teaspoons McCormick® Sesame Seed
Directions

1. Mix water, soy sauce and seasonings in small bowl. Stir in cornstarch until smooth. Set aside.

2. Heat 1 tablespoon of the oil in wok or large deep skillet on medium-high heat. Add onion and carrots; stir fry 2 minutes. Add remaining 1 tablespoon oil and remaining vegetables; stir fry 5 to 7 minutes or until vegetables are tender-crisp.

3. Stir soy sauce mixture. Add to skillet. Stirring constantly, bring to boil on medium heat and boil 1 minute. Sprinkle with sesame seed before serving. Serve over rice, if desired.

How to toast sesame seed: Heat a small skillet on medium heat. Add sesame seed; cook and stir about 2 minutes or until fragrant and golden brown. Immediately pour out of hot pan to avoid over-toasting.

 

Variation: Use McCormick° Gourmet Collection Black Sesame Seed or a combination of both sesame seeds.


Peppered Rib Eye Steaks Recipe

Grill steaks, turning once, over medium heat, 12 to 14 minutes for rare, 14 to 18 minutes for medium, and 18 to 22 minutes for well done.

VARIATION: You could also broil in the oven but the time will be less.

Oven Roasted Cauliflower Recipe

Ingredients
  • 1 head cauliflower - large
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 3 cloves garlic - minced
  • 2 tablespoons parsley flakes
Directions
  • Preheat oven to 450 degrees F.
  • Break cauliflower into large bite-size pieces and place in a large bowl.
  • In a small bowl, combine the oil, paprika, and salt; drizzle over the cauliflower.
  • Toss thoroughly to coat the cauliflower as evenly as possible.
  • In a separate bowl, combine the minced garlic with the parsley flakes and set aside.
  • Spread cauliflower out on a 10 x 15 x 1 baking sheet and place in the preheated oven, uncovered.
  • Bake for 10 minutes and then remove from the oven and add the minced garlic and parsley flakes; stir into cauliflower to mix evenly.
  • Place back in the oven for an additional 10 to 15 minutes or until the cauliflower is crisp tender and lightly browned. Stir once or twice through the cooking time.
  • When cauliflower is done, remove from the oven and serve immediately.

  • 6 potatoes, baked
  • 1/2 cup sour cream
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon black pepper
  • salt, to taste
  • 2 tablespoons milk (optional)
  • 3/4 cup shredded cheddar cheese, divided
  • 1 tablespoon fresh chives, finely chopped (optional)
Directions
Bake potatoes as directed; let stand about 10 minutes.

Cut a lengthwise slice off the top of each baked potato; discard skin from slices and place pulp in a bowl. Scoop pulp out of potatoes; add pulp to the bowl.

Mash the potato pulp with a potato masher or an electric mixer on low speed. Add sour cream, garlic salt and pepper; beat until smooth. If necessary, stir in milk to reach desired consistency. Season to taste with salt and additional pepper. Stir in 1/2 cup of the cheddar cheese and chives, if desired. Divide the mashed potato mixture evenly among the potato shells. Place in a 2-quart baking dish.

Bake, uncovered, in a 425 F oven for 20-25 minutes or until light brown. Sprinkle with remaining cheese. Bake for 2-3 minutes more or until cheese melts.

  • DRESSING:
  • 1/3 cup white vinegar
  • 1/4 cup sugar
  • 1 tablespoon chopped red onion
  • 2 teaspoons poppy seeds
  • 1 teaspoon ground mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • dash Worcestershire sauce
  • 1 cup canola oil
  • SALAD:
  • 2 full hearts of Romaine
  • 1 cup Swiss cheese
  • 2/3 cup slivered almonds or 3/4 cup of cashews
  • 1 cup blueberries
Directions
  • Whisk all the dressing ingredients, except the oil, together in a small bowl until thoroughly mixed; gradually whisk in the oil and set dressing aside.
  • Tear romaine lettuce into bite size pieces and combine with the cheese, nuts, and blueberries.
  • Just before serving, toss with the dressing. Add dressing gradually until the salad is coated to your liking. You may not want to use all of the dressing.

Ingredients
  • 2/3 cup evaporated milk
  • 2/3 cup sugar
  • 2 egg yokes
  • 1/3 cup shortening
  • 1 1/3 cups coconut
  • 1 teaspoon vanilla
Directions
  • Combine evaporated milk, sugar, egg yokes, and shortening in a saucepan.
  • Over medium heat, bring the mixture to a full boil. Stir while cooking.
  • After mixture comes to a full boil remove it from the heat and add the coconut and vanilla. Stir until well mixed.
  • Spread over cooled cake. Store covered at room temperature.
