  • 3 tablespoons sesame oil, divided
  • 1 pound sea scallops, patted dry with paper towels
  • sea salt
  • black pepper
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, finely diced
  • 1/3 cup orange juice
  • 3/4 tablespoon soy sauce
  • 1/2 teaspoon orange zest
Directions
Heat 2 Tablespoons sesame oil in large skillet over medium-high heat. Sprinkle scallops with salt and pepper.

Working in batches, add scallops to skillet in single layer; sauté until brown on outside and just opaque in center, about 2 minutes per side.

Transfer scallops to plate, leaving drippings in pan.

Add garlic and remaining sesame oil to drippings in skillet; stir 30 seconds. Add ginger, orange juice, soy sauce and orange peel. Boil until sauce thickens to syrup, stirring frequently, about 2 minutes.

Pour sauce over scallops and serve.

1. Mix oil, orange juice, vinegar, sugar, ginger and salt in small bowl until well blended.

2. Mix Napa cabbage, bell pepper, snow peas and pear in large bowl. Add dressing; toss to coat well. Cover.

3. Refrigerate 1 hour or until ready to serve. Sprinkle with sesame seed before serving.To Toast Sesame Seed: Heat small skillet on medium heat. Add sesame seed; cook and stir 2 minutes or until golden brown and fragrant. Immediately pour out of hot pan to avoid over-toasting.

  • 1 1/2 quarts ice cream - softened, any flavor
Directions
  • Preheat oven to 400°.
  • Grease a 15x10 jelly roll pan and line it with either parchment or wax paper.
  • Grease and flour the paper.
  • Lay out a tea towel and sprinkle with powdered sugar.
  • In a small bowl, combine first 4 ingredients. Stir to combine.
  • In a medium bowl, beat eggs, gradually add sugar, continue to beat. Stir in water.
  • Gradually add dry ingredients while continuing to stir. Add vanilla.
  • Spread evenly into prepared pan.
  • Bake for 12 minutes or until the cake springs back when touched.
  • Loosen the cake and turn out onto the prepared towel. Carefully peel off the paper.
  • Roll the cake and the towel up together, starting with the narrow end.
  • Cool on a wire rack.
  • Unroll and spread 1 quart of slightly softened ice cream. Roll back up.
  • Wrap in aluminum foil and freeze.
  • Serve with heated chocolate sauce.

  • Preheat oven to 400°F.
  • In medium skillet, cook the bacon, onion and rosemary until bacon is crisp (5-7 minutes)
  • Remove with slotted spoon to drain on paper towel.
  • In large bowl sift together flour, baking powder, sugar and salt.
  • Cut in the butter with fork or pastry cutter. Add in cheeses and pepper. Work until lumps start to come together.
  • Add the bacon, onion, rosemary mixture.
  • Add the 1 cup + 2 Tablespoons heavy cream.
  • Work together to form sticky dough.
  • Turn out onto floured surface, knead and pat until it comes together.
  • Divide in half and form into 2 large circles, about 7 inches in diameter and 3/4 inch thick. Cut each into 8 wedges.
  • Transfer to large baking sheet lined with silpat or parchment paper. Make sure there is a little space between scones.
  • Brush tops of scones lightly with cream or milk. Bake 20-25 minutes.
  • Serve warm.

  • GLAZE:

  • Preheat oven to 350° F. Grease the bottom and sides of a 9 x 13 baking dish.
  • Beat the cream cheese until smooth. Then add the sugar, vanilla and egg; beat until smooth.
  • Open one tube of crescent rolls and lay then out flat in the baking dish. Gently spread them out to cover the bottom completely, sealing the seams as you go.
  • Spread the cream cheese mixture on top of the crescent layer. Spread out evenly.
  • Open the second tube of crescent rolls and carefully spread out over the cream cheese layer, sealing the seams as you go.
  • Brush the top with the egg white and then bake in the preheated oven for 35 minutes or until golden brown on top.
  • Remove from the oven and allow to cool for 20 minutes. While cooling, mix the glaze ingredients together until well mixed.
  • After the pastry has cooled for 20 minutes, drizzle the glaze over the top. The pastry is then ready to serve warm or it can be allowed to cool completely if desired.

Meanwhile, in a skillet brown beef; drain.

Stir in gravy mix, water and garlic salt, bring to a boil.

Reduce heat to medium and cook 5 minutes.

Stir in half of the cheese. Pour on top of potatoes.

Reduce oven to 350 degrees F. Bake, uncovered, for 15 minutes.

Sprinkle with remaining cheese and bake 5 minutes more.

Wrap bread in foil, leaving top partially uncovered. Bake until heated through, about 15 minutes.

  • 6 cups white bread cubes, dried (approximately 1/2 lb.)
  • 6 cups wheat, rye, whole grain, or wild rice bread cubes, dried (approximately 1/2 lb.)
  • 1 pound ground pork sausage
  • 3/4 cup margarine
  • 1/2 cup finely chopped onion
  • 2 cups chopped celery (4 to 5 stalks)
  • 1 teaspoon sage
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 eggs
  • 2 cups turkey/chicken broth or stock
Directions
  • If using your own bread to make cubes, have them cut and dried before beginning stuffing preparation. Store bought stuffing mix can also be used.
  • Fry ground sausage and crumble into small pieces. Drain grease and set crumbled sausage aside.
  • Melt the butter in a pan and add the onions and celery. Cook until onions begin to soften and turn a light golden brown. The celery should still be slightly crunchy.
  • Remove from the heat and add the sage, salt and pepper to the celery mixture.
  • Combine the bread cubes, sausage, and the onion and celery mixture in a large bowl. Stir until the ingredients are well mixed.
  • Add the broth or stock gradually to the stuffing mixture. Only add enough liquid to moisten the stuffing enough for it to hold together. Begin by adding 1 cup or less.
  • When adding liquid, remember that the eggs still need to be added, which will add a little moisture also. Taste test the stuffing to see if it is properly seasoned before adding the eggs.
  • Add more seasoning if necessary and then add the beaten eggs and stir until they are well distributed.
  • If necessary, more liquid can be added after the eggs are added to further moisten the stuffing.
  • Butter the bottom and sides of a baking dish and place the stuffing in the dish.
  • Lightly pat the stuffing in the dish and cover with foil. Bake at 350° F for 45 minutes. Remove the foil for the last 20 minutes of cooking time. Be sure the stuffing reaches 165°F before serving.

  • 1 1/2 pounds pork top loin roast, trimmed of external fat
  • 1 cup panko
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 egg yolk beaten
  • 2 tablespoons Dijon-style mustard
  • 1 1/2 teaspoons fresh thyme, chopped
Directions
  • Heat oven to 350 degrees F.
  • Place panko on large dinner plate; set aside. Pat surface of pork dry with paper towels; sprinkle with salt and pepper. Combine egg yolk, mustard and thyme in pie plate. Roll pork roast in mustard mixture, spreading mixture evenly on surface. Then roll mustard-coated roast in panko, patting panko on roast to evenly cover.
  • Place roast on rack in shallow roasting pan. Roast, uncovered, in heated oven for 1 hour or until an instant-read thermometer inserted near center reads 155 degrees F. Loosely cover pork with foil. Let rest for 5 minutes.
  • Transfer pork roast to carving board; Cut half of the pork roast into 1/2-inch-thick slices to serve. Cool remaining piece of roast at room temperature for up to 1 hour. Loosely cover and refrigerate for sandwiches.

  • 4 sweet potatoes - approx. 2 lbs.
  • 4 tablespoons margarine
  • 1/8 teaspoon salt
  • 1 can crushed pineapple - 8 oz.
  • 2 tablespoons maple syrup
Directions
  • Peel the sweet potatoes and then cut into 1/4" slices. The sweet potatoes darken quickly so you want to slice them just before using. Placing them in a bowl of cold water will help stop the darkening.
  • Melt the margarine in the bottom of a skillet over medium heat. Add the slice sweet potatoes.
  • Cook until browned on one side. Turn and then cover and cook for 5 minutes, turning the heat down to low.
  • Turn the potatoes and brown the other side over medium heat. Cover, turn heat on low, and cook for another 5 minutes or until the potatoes are tender. Do not overcook or the potatoes will become so soft.
  • Sprinkle with salt, add the pineapple and maple syrup to the sweet potatoes. Cook over medium heat until everything is heated thoroughly.
  • Serve immediately

  • 1 head cauliflower, trimmed and cut into large florets
  • 4 cloves garlic, minced
  • 4 1/2 tablespoons olive oil - divided

  • 2 teaspoons fresh lemon juice
  • 3 tablespoons pine nuts, toasted (optional)
Directions
Preheat oven to 450 degrees.

On a rimmed baking sheet, toss the cauliflower with the garlic, 3 tablespoons olive oil, 2 teaspoons salt and black pepper. Spread into a single layer and roast, stirring twice, until the cauliflower is tender and the garlic is lightly browned, 20-25 minutes.

Transfer the cauliflower to a large bowl. Add the remaining olive oil, lemon juice and pine nuts, if desired. Sprinkle with 1/2 teaspoon salt, toss well and serve hot or warm.

  • MAPLE GLAZE:

  • 2 1/2 tablespoons maple syrup
Directions
  • Preheat the oven to 350 degrees F. Grease a 9 x 13 baking pan.
  • Add all the cake ingredients, except the butter, to a large mixing bowl; beat until all ingredients are evenly mix together.
  • Add the melted butter and slowly stir it into the batter; pour into the greased baking pan.
  • Mix all the topping ingredients together; beat until well combined.
  • Drop the topping by teaspoons evenly over the batter. Using a table knife, swirl the topping back and forth through the batter.
  • Bake in preheated oven for 30 to 35 minutes.
  • Prepare the glaze with the cake is baking. Stir all ingredients together until smooth.
  • When the cake is done, remove from the oven and place on a cooling rack. Drizzle the glaze evenly over the warm cake.
  • Allow cake to cool before serving.
