  • 15 pounds smoked ham, on the bone
  • GLAZE:
  • 1 1/2 cups orange marmalade
  • 1 cup dijon mustard
  • 1 1/2 cups firmly packed brown sugar
  • 1 generous teaspoon ground clove
Directions
Preheat oven to 300°. Trim skin and excess fat from ham and place in pan. Score with a sharp knife, making a crosshatch design over it. Roast for 2 hours.

Make glaze by combining marmalade, mustard, sugar, and clove. At the 2 hour mark, remove ham from oven and brush the entire surface with glaze. Increase oven temperature to 350 and return ham to oven. Cook another 1 1/2 hours, brushing with more glaze at least 3 times.

Allow ham to rest for about 30 minutes before carving.

  • 5 large Yukon Gold potatoes
  • 4 tablespoons butter or margarine
  • 1 small onion, minced
  • 4 tablespoons flour
  • 1 teaspoon salt
  • 2 1/2 cups milk
  • 2 cups shredded Colby Jack cheese
  • paprika
Directions
  • Preheat the oven to 375°F.
  • Peel the potatoes and slice into 1/8 inch or less thick slices. Cover with cold water and set aside while preparing the sauce.
  • Heat the butter until hot in a saucepan over medium heat. Add the onions and cook until they are tender and starting to brown, approximately 5 minutes.
  • Stir in the flour and salt; cook for about 1 minute.
  • Gradually stir in the milk. Continue to stir as the mixture cooks. Cook until the mixture just comes to a boil and has thickened.
  • Remove from the heat and add 1/2 cup of the shredded cheese. Stir until it is all melted.
  • Drain the potatoes and pat dry with paper towels.
  • Layer half of the potato slices in the bottom of a 3 quart baking dish.
  • Spread have of the sauce over the potatoes and then sprinkle with half of the remaining shredded cheese.
  • Layer the other half of the potatoes on top of the sauce and cheese.
  • Spread the remaining sauce over the potatoes and sprinkle the remaining cheese on top of the sauce.
  • Sprinkle the top with paprika.
  • Cover the dish with foil and place it in the preheated oven. Bake for 1 1/2 hours covered.
  • Remove the foil and test for doneness. If the potatoes are close to being done when poked with a fork, leave the foil off and bake for another 15 to 20 minutes uncovered.
  • If the potatoes do not feel close to being done, cover them back up and bake for another 15 to 20 minutes before baking uncovered.

  • 1 loaf French bread
  • 1 bunch asparagus
  • 5 eggs
  • 2 1/2 cups half and half (can use whole milk)
  • 2 teaspoons salt
  • Pepper to taste
  • 1/2 teaspoon finely chopped fresh tarragon
  • 1 tablespoon chopped chives
  • 8 ounces grated cheese (Monterey Jack, Cheddar, Swiss, or any other you prefer)
Directions
  • Preheat the oven to 350 degrees F. Grease a large casserole dish.
  • Cut the French bread into 1 1/2 inch slices and lay out on a large baking sheet. Place in the oven for about 10 minutes to dry out the bread. It should be dry to the touch but not browned.
  • Cook the asparagus just until crisp tender - do not overcook. Rinse in cold water to stop cooking.
  • Whisk the eggs, half & half, salt, pepper, tarragon, and chives together in a large bowl.
  • Place the French bread slices on the bottom of the greased casserole dish.
  • Spread the asparagus evenly over the bread slices and sprinkle the cheese over the top.
  • Pour the egg and half & half mixture over the top of the bread, asparagus, and cheese.
  • Push bread slices down to submerge them in the mixture if they aren't covered by it.
  • Allow the dish to set for about half an hour so the bread will soak up the mixture. This dish can also be made the night before serving. Cover the casserole dish and refrigerate it overnight.
  • Bake for 40 to 45 minutes in the pre-heated oven. The bread pudding should be puffed up and browned. Allow it to set for 10 minutes before serving it.

  • 1/4 cup grated Parmesan (optional)
Directions
Preheat oven to 425°.

Cut broccoli florets into bite size pieces. Place broccoli in mixing bowl and add remaining ingredients except cheese. Mix well. Spread on a jelly roll pan or cookie sheet and bake for 8-10 minutes.

Remove from oven and toss with the cheese, if desired. Serve immediately.

  • 1 dash pepper
  • 1 tablespoon parsley

  • 1 dash Tabasco sauce
Directions
Melt sugar over medium heat. Add almonds to coat. Remove and let cool.

Toss lettuce with oranges and cooled almonds.

For the dressing, mix all ingredients and shake or stir well.

Add dressing to salad, to taste, and toss. Serve immediately.

  • 12 ounces whipped topping, thawed
  • 20 ounces pineapple chunks, drained
  • 22 ounces mandarin oranges, drained

Directions
  • In a large bowl, mix together the pudding mix and the buttermilk. Fold in the whipped topping.
  • Gently add the fruit except for the bananas. Chill in refrigerator at least 2 hours.
  • Slice the bananas and crush cookies; stir in just before serving.

  • 4 eggs
  • 1/2 cup margarine - softened
  • 1 can mandarin oranges - small can (reserve juice)
  • 1 teaspoon vanilla
  • FROSTING:
  • 1 package instant vanilla pudding - 3 oz. package
  • 20 ounces crushed pineapple - drained (reserve juice)
  • 1/2 cup powdered sugar
  • 8 ounces whipped topping
Directions
CAKE:
  • Preheat oven to 350°F. Grease and flour the bottom and sides of a 9 x 13 cake pan.
  • Combine the cake mix, eggs, margarine, and juice from mandarin oranges; beat for 4 minutes.
  • Add mandarin oranges and vanilla; beat until oranges are in small pieces.
  • Pour into the prepared cake pan and bake at 350°F for 30 to 40 minutes or until when poked with a toothpick, it comes out clean.
  • Allow to cool completely before frosting.

FROSTING:
  • Combine the pudding mix with the juice from the crushed pineapple. Stir the mixture until evenly mixed; then allow it to sit until it thickens slightly.
  • Add the powdered sugar and drained pineapple; stir to mix.
  • Fold in the whipped topping.
  • Spread on the cake. Keep refrigerated until ready to serve.

  • 1/2 cup warm water
  • 1/2 cup butter or margarine
  • 2 cups milk
  • 2 eggs, beaten

  • 6 cups flour
Directions
  • Dissolve yeast in warm water; let stand until foamy, for about 10 minutes.
  • Heat butter in milk until butter melts; cool.
  • In a large bowl, beat eggs .
  • Add sugar, salt, yeast mixture and cooled milk mixture
  • Add enough flour until dough is stiff enough to stir with a spoon. Cover and let rise until double in size, approximately 1 hour.
  • Punch down and raise the second time.
  • Roll out to 1/4 inch thick. Cut into circles with a tea cup. Lightly butter 1/2 of the circle, fold in half and pinch edges together. Melt shortening on baking sheet. Dip the top of the roll in grease from pan, turn over and set the bottom of the roll on greased pan.
  • Cover and let rise for 1 hour or until doubled in size.
  • Uncover and bake at 400° for 12 minutes or until light brown.
  • Spread butter on top for rolls.

  • 1/4 teaspoon pepper
  • 2 tablespoons dried minced onion flakes
Directions
  • Brown ground beef along with the dried minced onion flakes in skillet and drain grease.
  • Prepare macaroni as directed on package.
  • In a large bowl, mix ground beef, macaroni, soup, salt and pepper. Gently fold in corn (or peas).
  • Spoon mixture into baking dish and top with cheese.
  • Bake covered with foil for 1 hour at 350 degrees F. Freezes well.

  • 2 heads romaine lettuce
  • tomato - medium, drain excess juice
  • 2 stalks celery - medium in size
  • 1 carrot - large, or 2 small
  • 1/2 can black beans - rinsed and drained
  • 1 cup corn
  • 1/2 cup salsa
  • 3 tablespoons sour cream - regular or low-fat
  • 3 tablespoons ranch dressing - regular or low-fat
Directions
  • Tear lettuce into bite size pieces and put in a large bowl. Add the chopped tomato, celery, and carrots. Toss lightly.
  • Add the corn and beans; toss to evenly distribute.
  • Combine the salsa, sour cream, and salad dressing in a small bowl.
  • Drizzle half to three-quarters of the mixture over the salad and gently toss to evenly coat. Add remaining dressing mixture if desired, depending on how much dressing you prefer.
  • Serve immediately with extra salsa and taco sauce on the side for those who prefer the extra flavor.

  • 4 cups cinnamon toast cereal
  • 6 scoops vanilla ice cream (1/2 cup each)
  • oil for deep fat fryer
Directions
  • Crush cereal into very small pieces and place onto a cookie sheet. Using your hands, roll approximately 1 cup of ice cream shaped like a ball through the cereal. Make sure the ice cream is completely coated with the cereal. Place ice cream onto a jelly roll pan. Cover with plastic wrap and freeze for 2 hours, or until firm. (They can also be frozen overnight ,if needed.)
  • Heat oil in deep fat fryer. With a metal slotted spoon, lower each ice cream ball individually into the hot grease for approximately 5-10 seconds. You don't want the ice cream to melt, but do want the cereal to turn light brown.
  • Place into serving bowls. Top with non-dairy whipped topping and a cherry or any other sundae toppings that you desire.

Ingredients
  • 1 pizza crust or tube of Italian bread
  • 3 tablespoons butter
  • 1 teaspoon minced garlic (add more garlic as desired)
  • 2 cups Mozzarella cheese
  • 1 cup Parmesan cheese
  • 1 jar pizza sauce or marinara
Directions
  • Preheat oven to 400 degrees F. Spray pizza stone or pan with cooking spray.
  • Spread pizza crust or Italian bread out on the pizza stone or pan.
  • Mix the butter and garlic together; spread over the crust.
  • Sprinkle half the Mozzarella cheese over the garlic butter, then the Parmesan cheese, and then the remainder of the Mozzarella cheese.
  • Place in the preheated oven and bake for 15 to 20 minutes or until the cheese has started to brown nicely.
  • Serve with pizza sauce or marinara sauce.

  • 1 package vanilla instant pudding (3 ounce box)

Directions
  • Crush the Oreos cookies, leaving them fairly chunky. If they are crushed too fine the salad will become mushy. Set cookies aside.
  • Mix the pudding with the milk. Whisk until mixture thickens.
  • Fold in the Cool Whip and then add the crushed Oreos. Stir just enough to distribute cookies evenly.
  • Crush a couple of more Oreo cookies and sprinkle them over the top.

Ingredients
  • 1 boneless pork loin
  • 8 cloves garlic
  • 1 tablespoon fresh rosemary leaves, finely chopped
  • 1 tablespoon fresh thyme leaves, finely chopped
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • salt and pepper, to taste
  • 4 ounces pancetta or bacon
  • 1 1/2 cups chicken broth
  • 1 1/2 cups dry white wine
Directions
Cut the pork loin in horizontally but not all the way through so you can open like a book.

Blend garlic, rosemary, thyme, mustard and oil in a small food processor, scraping down the sides of the bowl occasionally, until the garlic is minced.

Sprinkle cut side of the pork loin generously with salt & pepper. Spread with the mustard. Sprinkle with the herb mixture. Close the loin up.

Wrap the pancetta or bacon slices around the pork. Tie with kitchen twine so the pancetta or bacon will stay in place. Cover & refrigerate at least 1 hour & up to 1 day.

Preheat oven 400. Pour 1/2 cup of broth & 1/2 cup of wine into the roasting pan. Add more broth & wine to the pan juices every 20 minutes. Roast the pork until a meat thermometer inserted into the center reaches 145 degrees for medium rare, about an hour.

NOTE: This could also be grilled over indirect heat, for about the same amount of time.

  • 6 potatoes (medium)
  • 1 pint sour Cream
  • 1/4 cup butter
  • 1 can cream of chicken soup
  • 1/3 cup chopped green onions or other onions
  • 1 1/2 cups cheese
  • 1/2 - 1/3 cup crushed cornflakes
  • 2 tablespoons butter
Directions
  • Preheat oven to 350.
  • Cook potatoes, peel when cooled. Grate or dice them. Or peel, dice and then cook them.
  • Place in 9 x 13 baking dish. Heat the 1/4 c butter until melted and add soup, sour cream, onions and cheese. Mix well. Pour mixture over potatoes.
  • Combine 1/2 - 1/3 c crushed cornflakes with 2-3 tbsp butter and sprinkled over potatoes.
  • Bake for 45 min.

  • Peel sweet potatoes and cut into large chunks. Place in a saucepan, add water and bring to a boil. Cover and boil gently until the potatoes are just tender when poked with a fork, do not overcook.
  • When done, drain the sweet potatoes and place them in a baking dish. Preheat the oven to 350 degrees F.
  • Slice butter into thin slabs and place randomly on top of the sweet potatoes, getting the butter distributed as possible.
  • Sprinkle the brown sugar evenly over the top of the sweet potatoes and butter.
  • Place in the preheated oven and bake for approximately 30 to 40 minutes. Remove from the oven and sprinkle marshmallows on top.
  • Return to the oven and bake for an additional 10 to 15 minutes or until the marshmallows have puffed up and begun to melt.
  • Remove from the oven and serve.
