Irish Honey Mustard Chicken and Vegetables Recipe
Ingredients
  • 1/4 cup honey
  • 1 tablespoon coarse-ground mustard (sometimes called Country Dijon)
  • 1/2 tablespoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter, divided
  • 1 package (1 pound) Gold n Plump® Extra Tender Boneless Skinless Split Chicken Breasts
  • 1 pound (about 8) small red potatoes, quartered
  • 3 carrots, peeled and cut into 3/4-inch chunks
  • 1 onion, cut into 1-inch wedges
Directions
  • Combine honey, mustard, salt and pepper in small bowl; set aside.
  • Melt 1 tablespoon of butter in large skillet over medium-high heat. Add chicken; cook for about 4 minutes on each side until the chicken is lightly browned. Transfer chicken to a plate.
  • Melt remaining 1 tablespoon butter in the same skillet. Add vegetables; cook, stirring occasionally for 6 to 8 minutes, or until lightly browned.
  • Place chicken breasts on top of the vegetables. Pour the honey mixture over the chicken and vegetables. Cover; reduce heat to low and cook, stirring the vegetables once, for about 10 to 12 minutes, or until vegetables are tender and chicken is thoroughly cooked.

Ingredients
  • 2 1/4 cups white flour (more if needed)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 cup buttermilk
  • 2 tablespoons butter (melted)
  • 2 tablespoons honey
  • 1 egg
Directions
  • Preheat oven to 350º F.
  • In a large bowl, mix together baking soda, salt, and baking powder.
  • In a small bowl, whisk together milk, butter, honey and egg. Stir liquid ingredients into flour mixture until thoroughly combined. Dough should hold a formed shape--if not, gradually add a little flour until you can shape the dough into a mound 6" around.
  • Place dough on baking sheet that has been covered with parchment paper. Spray parchment paper with cooking oil. Take a sharp knife and make an X on the top of dough.
  • Bake 45 minutes, or until the bottom sounds hollow when thumped.
  • Cool slightly before serving.


Note: The bread is best when eaten the day it is made. Serve it with butter and honey.

  • 1 can crushed pineapple (large can)
  • 1 3 oz. package of instant pistachio pudding
  • 1 8 oz. container of whipped topping
  • 2 cups minature marshmallows
Directions
  • Empty the can of pineapple into a medium size bowl. Do not drain.
  • Sprinkle the package of pudding mix over the pineapple and stir to mix thoroughly. Allow this mixture to sit for about 5 minutes so it thickens a little.
  • Fold in the whipped topping and marshmallows. Fold in until the pudding and pineapple mixture is evenly mixed with the whipped topping. Do not over stir.
  • Place in the refrigerator until ready to serve. This salad keeps well in the refrigerator for 2 or 3 days.

  • 1/4 cup butter or margarine
  • 2 squares semi-sweet chocolate - 1 oz. squares
  • 3/4 cup sugar
  • 2 cups Rice Krispies
  • 1 quart mint chip or peppermint ice cream (or enough to fill the pie plate)
Directions
  • Butter the bottom and sides of a pie plate; set aside.
  • Melt the butter and chocolate together in a saucepan large enough to hold the Rice Krispies when added. Heat the butter and chocolate to a boil and then add the sugar.
  • Remove from the heat and add the Rice Krispies; stir until evenly coated.
  • Reserve 1/2 cup of the Rice Krispie mixture for the top and then pour the remaining into the buttered pie plate; pat firmly into the bottom and on the sides.
  • Place the Rice Krispie lined pie plate into the freezer until frozen.
  • Once the crust is frozen, allow the ice cream to thaw slightly so that it is soft enough to spread out. When it has thawed enough, remove the crust from the freezer, add the ice cream, and spread it out evenly into the crust.
  • Sprinkle the reserved Rice Krispie mixture evenly over the top of the pie. Place the pie into the freezer until it is firm.
  • To serve, remove from the freezer a few minutes before serving so it is easier to cut.

Corned Beef Brisket Recipe

  • 4 pounds corned beef brisket (including spice packet)
  • 2 pounds potatoes, unpeeled
  • 3 cups carrots, peeled
  • 2 heads cabbage
  • 1 stick butter, unsalted
  • 2 cans Guinness beer (16 ounce cans)
Directions
Place corned beef into a slow cooker and sprinkle with spice packet.

Cut potatoes and carrots and add to slow cooker. Then, pour one can Guinness over ingredients, cover and cook on low for 8 hours.

One half hour before corned beef is ready, cut cabbage into wedges and add to large pot of water, bring to boil and cook for 10 minutes; drain cabbage.

In a large deep fry pan, melt butter. Add cabbage to butter and pour your second can of Guinness on top. Cook until most of liquid has cooked off, stirring frequently so as not to burn cabbage.

Once corned beef is cooked, remove from slow cooker and place onto cutting board. The beef should fall apart and not need to be sliced. Then add your cabbage, with the butter/beer liquid to Slow Cooker mixing with potatoes and carrots. Dish out beef into bowls and cover with cabbage potatoes and carrots.

  • SALAD:
  • 1 head iceberg lettuce
  • 1 head romaine lettuce
  • 2 packages ramen noodles (do not use flavor packet)
  • 1/2 cup slivered almonds
  • 7 slices bacon, crumbled
  • 7 green onions diced (optional)
  • DRESSING:
  • 3/4 cup canola oil
  • 3 tablespoons red wine vinegar
  • 1/2 cup sugar
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
Directions
  • Tear both types of lettuce into bite size pieces and toss together; set aside.
  • Fry bacon until crispy and then crumble into pieces.
  • Heat butter in the bottom of a skillet over medium heat and then add the noodles and slivered almonds; cook until lightly browned. Spread the noodles and almonds out on paper towels to drain excess butter.
DRESSING:
  • Combine all ingredients for dressing in a separate bowl and whisk to mix well. Whisk again just before adding to the salad.
  • Just before serving add the bacon, noodles, and almonds to the lettuce.
  • Pour some of the dressing (do not use all the dressing) over the salad and then toss to coat evenly. Continue to add more dressing until the salad is coated to your taste.
  • Serve immediately.

St. Patricks Day Pistachio Cake Recipe

Directions
Place all cake ingredients in a bowl and mix on medium high until mixture is smooth and fluffy, approximately 2-3 minutes. Pour into 2 greased and floured 8-inch round cake pans. Follow cake baking instructions; cool;

For frosting, beat pudding and milk on medium high until smooth, approximately 2-3 minutes. Fold in whipped topping until evenly blended.

After cake is cooled, spread frosting evenly and sprinkle with chopped pistachios for garnish.

NOTE: If you want the frosting more green, add food coloring to desired color.

  • Cook the noodles until al dente over medium-high heat. Remove from heat, drain, and rinse with cold water to stop it from continuing to cook.
  • Preheat the oven to 350°F. Butter the bottom and sides of the baking dish.
  • In a large bowl, combine the noodles, soup, and corned beef. Stir until evenly mixed.
  • Pour this mixture into the prepared baking dish.
  • Cut 4 ounces of Velveeta® cheese into slices. Break the slices into small pieces and place evenly on top of the other ingredients in the baking dish.
  • Poke the pieces of cheese down into the noodle mixture.
  • Place in the preheated oven, uncovered. Bake for 1 hour, remove from the oven and top with the French fried onions.
  • Place the hotdish back in the oven for 5 minutes or until the French fried onions have browned.
  • Remove from the oven and serve immediately.

  • 1 1/2 pounds ground beef
  • 8 ounces taco sauce

  • Cook shells; rinse in cold water and set aside.
  • Cook ground beef until no longer pink.
  • Add 1/2 taco sauce, cream cheese, chili powder, and 3/4 cup Mexican cheese.
  • Stuff shells with mixture and place in a greased 9 x 13 baking pan.
  • Drizzle remaining half taco sauce on top.
  • Bake at 350° for 35 minutes. Uncover, spread 3/4 of remaining cheese over top and then bake for 10 more minutes.
  • Sprinkle last bits of cheese over final dish. Serve immediately.

  • 3 cups water
  • 2 cups (uncooked) long grain white rice
  • 1 tablespoon chicken base (or 3 chicken bullion cubes)
  • 1 cup bell pepper, diced (red, yellow, green, or any combo you like)
  • 1/2 onion, diced small
  • 1 medium tomato, diced small
  • 1/4 cup fresh cilantro, finely diced
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons butter
  • 1 teaspoon kosher salt (to taste)
  • 2 tablespoons lime juice (to taste)
Directions
  • Preheat oven to 425 degrees F.
  • In a Dutch oven, add the water, rice, chicken base, vegetables, seasonings and butter, except the salt and lime juice. Bring the water to a boil stirring very little.
  • Cover the pan and place it in the preheated oven for 15-20 minutes, or until almost all of the water is absorbed.
  • Remove the pan from the oven but leave it covered and sitting for 5 minutes.
  • In a small bowl, combine the salt and lime juice.
  • Remove the lid long enough to stir in the salt and lime juice; recover the pan and let sit another 5 minutes.
  • Serve and enjoy.

  • 1/2 cup wild rice

  • 2 cups half & half

Directions
  • In a Dutch oven or soup pot combine the broth and water. Add the rice and onion; cook according to directions on the package of rice. (Bring to boil, reduce heat, cover and simmer for 45 minutes or as stated on package.)
  • In a separate pan, melt the butter; stir in flour and seasoning. Stirring constantly, cook for approximately 1 minute until smooth and bubbling.
  • Gradually stir in half & half and cook until slightly thickened; stir constantly.
  • Once slightly thickened, slowly add half & half mixture into the rice mixture, stirring constantly.
  • After adding in all the half & half mixture, add the remaining ingredients.
  • Continue to heat slowly but do not bring to a boil; stir frequently.
  • Add cheese and stir in as it melts. If desired, you can add more or less cheese than stated.

  • 3 pounds tenderized round steak
  • 3/4 cup flour
  • 1/2 teaspoon salt

  • 1 can cream of mushroom soup
  • Water (or milk)
Directions
  • Remove most of the excess fat from the tenderized round steak and cut the steak into serving size pieces. If using round steak that is not tenderized, pound it with a tenderizing mallet.
  • Mix the flour, salt, and pepper together in a shallow bowl.
  • Heat about a tablespoon of the margarine in the skillet over medium to medium-high heat until sizzling.
  • Dredge the steak pieces in the flour and place in the skillet. Only add enough pieces to cover the bottom without crowding.
  • Cook until nicely browned on both sides. Remove from the skillet and place on a plate. Set them aside and fill the skillet with more steak pieces. Continue this process until all the pieces have been browned. You will have to add more margarine in between each batch and maybe a little just before turning each batch. You may end up needing a little more than a 1/4 cup of margarine.
  • Once all the pieces have been browned, place all the browned steak pieces back in the skillet. Pieces will have to be layered.
  • Spread the can of cream of mushroom soup over the top of the steak, cover, and heat until soup is bubbling around the edges. Then turn the heat down to a simmer and allow it to cook, covered, for 45 to 60 minutes.
  • Once the steak is done, remove it from the pan, scraping off some of the soup from its surface back into the pan. Place the steak on a serving platter.
  • Once the steak has been removed, add a little water (or milk) to the skillet, being careful not to add too much or it will thin the gravy too much. Mix it into the soup, scraping the sides and bottom to blend the flavorful piece into the gravy. Bring to a boil and then remove from the heat and pour into a serving bowl.
  • Serve the gravy over mashed potatoes (homemade or instant), along with the tenderized round steak.
Note: If you would like more gravy you can add more milk or water and then thicken it with a flour and water thickener. Season as needed with salt and pepper.

Ingredients
  • 5 pounds potatoes
  • 1 teaspoon Salt
  • 1 cup half and half, warmed
  • 1/2 cup butter
Directions
  • Peel and slice potatoes; cut into cubes. Put potatoes in saucepan, and pour in enough water to barely cover them. Bring to a boil, and turn heat down to medium. When potatoes are tender, drain well and put them back into the saucepan.
  • Add the butter and warm half and half. Mix with potato masher or electric mixer until smooth and creamy. Salt to taste.
Note:Milk could be substituted for the half and half if desired.

  • 1 bunch broccoli
  • 1 onion (medium)
  • 2 tablespoons olive oil or butter
  • 3 cloves garlic
  • salt and pepper to taste
  • red pepper flakes to taste
Directions
  • Preheat oven to 400 degrees F.
  • Cut broccoli into bite size pieces. Spray large casserole dish with cooking spray.
  • Dice onion and garlic. Place broccoli, onion, and garlic into casserole dish.
  • Drizzle olive oil (or butter) over the top. Sprinkle with salt and pepper and red pepper flakes.
  • Bake in preheated oven for 25 minutes.

  • 1 package yellow cake mix
  • 8 ounces sour cream
  • 2/3 cup oil
  • 4 eggs
  • FILLING:
  • 1 cup brown sugar, packed
  • 3 teaspoons cinnamon
  • GLAZE:
  • 3 cups powdered sugar
  • 2/3 cup milk
  • 2 teaspoons vanilla
Directions
Mix cake ingredients in mixer and pour 1/2 batter in 9x13 pan sprayed with Pam.

In a small bowl combine filling ingredients, brown sugar and cinnmon. Top cake with filling and pour or spread remaining batter over top.

Bake at 350 degrees for 45 minutes.

Poke holes in cake and pour glaze over top while cake is still hot.
