  • 3 pounds whole chicken
  • salt and pepper, to taste
  • 2 tablespoons onion powder
  • 1/2 cup butter
  • 2 stalks celery, cut into sticks
Directions
Preheat oven to 350 degrees F.

Place chicken in a roasting pan and season generously inside and out with salt and pepper.

Sprinkle inside and out with onion powder.

Place 3 tablespoons butter in the chicken cavity along with the celery.

Arrange dollops of the remaining butter around the chicken's exterior and under the skin.

Bake uncovered 1 hour 15 minutes in the preheated oven, to a minimum internal temperature of 180 degrees F.

Remove from heat and baste with melted butter and drippings.

Cover with aluminum foil, and allow to rest about 30 minutes before serving.

Directions
Peel and quarter potatoes. Place in large pot and cover with cold water. Bring to a boil over high heat. Once they boil, turn heat down to medium-high to gently boil. When potatoes are fork tender, about 15-20 minutes, drain off water. Return potatoes to pan.

In a small saucepan, melt butter over low heat. Add cream. Sprinkle in the garlic powder, salt and pepper.

Add cream mixture to potatoes. Beat with mixer on high until potatoes are mashed and smooth.

  • Preheat oven to 350 degrees F.
  • Butter one 8x11-inch casserole dish.
  • In a medium sized mixing bowl, combine the creamed corn, eggs, 1/4 cup of the melted butter and 1/2 of the cracker crumbs; pour mixture into the prepared dish.
  • In a small bowl, mix the remaining melted butter, cracker crumbs, paprika and pepper.
  • Sprinkle crumb topping over casserole.
  • Bake for 30 to 40 minutes, until topping browns slightly and corn is bubbly around the edges.

  • 12 ounces frozen raspberries, thawed
  • 1/4 cup sugar, divided
  • 1 loaf pound cake
  • 1/4 cup mascarpone cheese
  • 1/4 teaspoon vanilla extract
  • 1/2 cup heavy cream, lightly whipped
  • 1/2 pint fresh raspberries
Directions
Puree raspberries with half the sugar.

Slice the cake. Cut into 1/2 inch cubes, if desired.

Divide cake in 4 lowball, wine, or martini glasses, or toss into bowls. Top with equal amounts of raspberry puree.

Gently blend the mascarpone with the vanilla extract and remaining sugar. Fold in the whipped cream and put a scoop of this mixture into each glass.

Finish with fresh berries and serve immediately or chill up to 4 hours.

  • 2 green bell pepper - medium
  • 1/2 cup finely chopped onion
  • 2 cans cream of mushroom soup
  • 1 cup chicken broth
  • 2 cans Rotel tomatoes & green chilies, undrained
  • 4 cups shredded cooked chicken (rotisserie chicken works well)
  • 18 tortillas - 6-inch
  • 3 cups Mexican cheese - shredded
Directions
  • Preheat the oven to 350° F. Grease the bottom and sides of a 9 x 13 baking dish.
  • In a medium skillet melt the margarine; when heated add the green peppers, and onion.
  • Cook the peppers and onions for about 5 minutes or until tender; stir occasionally while cooking.
  • Stir in broth, cream of mushroom soup, tomatoes and green chilies, and the shredded chicken. Stir together until evenly mixed.
  • Bring the mixture to a boil and remove from the heat.
  • Tear tortillas into bite-size pieces. Place one-third of the torn tortillas in the bottom of the greased baking dish. Then add one-third of the chicken mixture and one cup of cheese. Repeat the layers two more times, ending with cheese on the top.
  • Place in the preheated oven and bake for 45 minutes or until bubbly.
  • Serve with shredded lettuce and your favorite Mexican fixings.

  • 1 can tomato sauce (8 ounce can)

  • 1 can water (8 ounce cans)
  • salt & pepper, to taste
Directions
Saute onion and bell pepper in oil over medium heat until onions are clear.

Add rice, stirring continually until rice browns.

Add tomato sauce, tomatoes and water, stirring to combine. Season with salt and pepper. When it starts boiling remove from heat cover and let stand until rice is tender, approximately 10 minutes.

NOTE: For spicy spanish rice substitute diced tomatoes for Mexican stewed tomatoes.

  • 2 to 3 large avocados, ripened
  • 2 tablespoons onions, minced or grated
  • 1 clove garlic, minced or pressed
  • 1 teaspoon chili powder (or minced jalapeño pepper)
  • 1 large tomato, diced
  • 1 tablespoon fresh lime juice
  • salt and pepper to taste
  • 2 tablespoons cilantro leaves, chopped
Directions
  • In a medium bowl, combine onion, garlic, chili powder (or fresh jalapeño pepper), and diced tomato.
  • With a sharp knife, cut avocados in half, removing the pit. Spoon out the flesh into above mixture. Use a fork to mash the avocado into mixture. Add lime juice, cilantro, and season with salt and pepper to taste.
  • Cover with plastic wrap, laying the plastic wrap directly on the guacamole to prevent discoloration. Refrigerate until serving time. (This only keeps a couple of hours before discoloring so prepare shortly before serving.)
  •  Garnish with additional cilantro sprigs.

  • Gradually whisk in whole milk and cook until thickened.
  • Season with salt and pepper to taste and stir in cooked ground sausage. Reduce heat and simmer for 12-15 minutes.
NOTE: If gravy becomes too thick, stir in a little more milk. Makes about 3 1/2 cups.

  • SALAD:
  • 1 head iceberg lettuce
  • 1 head romaine lettuce
  • 2 packages ramen noodles (do not use flavor packet)
  • 1/2 cup slivered almonds
  • 7 slices bacon, crumbled
  • 7 green onions diced (optional)
  • DRESSING:
  • 3/4 cup canola oil
  • 3 tablespoons red wine vinegar
  • 1/2 cup sugar
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
Directions
  • Tear both types of lettuce into bite size pieces and toss together; set aside.
  • Fry bacon until crispy and then crumble into pieces.
  • Heat butter in the bottom of a skillet over medium heat and then add the noodles and slivered almonds; cook until lightly browned. Spread the noodles and almonds out on paper towels to drain excess butter.
DRESSING:
  • Combine all ingredients for dressing in a separate bowl and whisk to mix well. Whisk again just before adding to the salad.
  • Just before serving add the bacon, noodles, and almonds to the lettuce.
  • Pour some of the dressing (do not use all the dressing) over the salad and then toss to coat evenly. Continue to add more dressing until the salad is coated to your taste.
  • Serve immediately.

  • 6 ounces thin sliced ham - approximately 8 slices
  • 6 ounces salami - approximately 15 slices
  • 4 green onions - finely diced
  • 1/2 cup shredded parmesan cheese
  • 1 1/2 cups shredded swiss cheese
Directions
  • Unroll dough onto a greased baking sheet.
  • Place a layer of sliced ham on dough within a 1/2 inch of the edge.
  • Sprinkle evely with green onions and parmesan cheese.
  • Place a layer of thin sliced salami then sprinkle evenly with swiss cheese.
  • Roll up like a jelly roll starting on the long side.
  • Pinch the seam to seal and pinch the ends shut as well.
  • Roll so it is seam side down on the baking sheet.
  • With a knife, cut 8-10 1/4 inch deep slices across the top of the loaf approximately 1 inch long.
  • Bake at 350° for 25-30 minutes or until golden brown.
  • Cool slightly, serve warm.

  • Strawberry ice cream (or preferred flavor)
  • Heart -shaped sugar cookies (homemade or store bought)

  • Allow the ice cream to soften slightly by setting at room temperature for a short time. It is ready when it is easy to scoop. If the ice cream begins to soften too much while working with the cookies you may have to return it to the freezer for a time to firm up slightly.
  • Work with 4 to 6 cookies at a time. Place them top side down on a cookie sheet. Then scoop approximately 1/4 to 1/3 cup of ice cream on top of each. The amount you use will depend on the size of your cookies and how thick you want them to be. Note: You can bake your own cut out heart-shaped cookies or purchase them from your favorite bakery. The cookies can be decorated colored sugar or sprinkles if you prefer but you may want to avoid using frosted cookies because they would be harder to work with.
  • Once each cookie has been topped with ice cream, place a cookie on top of the ice cream with the right side facing up.
  • Gently press the cookies together to spread out the ice cream. If the ice cream squeezes out the sides, use the flat side of a knife or icing spatula to scrape off the excess ice cream from around the edges between the cookies.
  • Once you have the ice cream cleaned off the edges, place the cookies on a cookie sheet and place in the freezer until the ice cream has hardened.
  • Continue to work on your cookies in this manner until they are all prepared.
  • Once all the cookies have hardened in the freezer they can be wrapped individually in plastic and then stored in a container in the freezer or they could be layered in a container with a piece of wax paper in between the layers to keep them from sticking together.

  • DRESSING:

  • 1 dash pepper
  • 1 tablespoon parsley

  • 2 tablespoons balsamic vinegar

Directions
Melt sugar over medium heat. Add almonds to coat. Remove and let cool.

Toss lettuce with oranges and cooled almonds.

For the dressing, mix all ingredients and shake or stir well.

Ingredients
  • 4 ounces semi-sweet baking chocolate - 4 squares
  • 1/2 cup (1 stick) butter
  • 1 teaspoon vanilla extract
  • 1 cup confectioners' sugar
  • 2 eggs
  • 1 egg yolk
  • 6 tablespoons flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
Directions
  • Grease or butter 4 custard cups or soufflé dishes. Place on a baking sheet.
  • Microwave chocolate and butter together in a medium bowl for approximately 1 minute.
  • Take the chocolate mixture out of microwave and whisk until the chocolate is completely melted.
  • Whisk in vanilla and sugar until blended.
  • Lightly beat the eggs and egg yolk together and then whisk them into the chocolate.
  • Stir in the flour, cinnamon, nutmeg, and ginger.
  • Spoon evenly into the prepared dishes, filling each approximately 3/4 full.
  • Bake in a preheated oven at 425° for 10 minutes. The sides should be firm but the centers should be very soft.
  • Remove from the oven and let stand for 1 minute.
  • Run a table knife around the edges to loosen.
  • Invert onto a serving plate.
  • Sprinkle with confectioners' sugar or add a dollop of whip cream and strawberries.

  • 1 1/2 pounds ground beef
  • 1 onion, chopped
  • 3/4 cup dry bread crumbs
  • 1 tablespoon parsley
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1 teaspoon Worcestershire sauce
  • 1 egg
  • 1/4 cup milk
  • 3 tablespoons oil
  • 1 can beefy mushroom soup (10 1/4 ounce can)
Directions
Mix together ground beef, onion, bread crumbs, parsley, salt, pepper, Worcestershire, egg and milk. Shape into 6 oval patties.

In large skillet, brown patties in oil for about 6 minutes on each side.

Drain off excess fat. Add the soup with a little water. Simmer, covered, about 5 minutes or until done.

In a 9x13 baking dish mix together potatoes, sour cream, soup and half the cheese. Mix in melted butter. Top with remaining cheese. Bake at 350 for 30 minutes.

VARIATION: Make it a one dish meal, add cubed ham and peas.

Green Beans Sauteed with Garlic Recipe

Ingredients
  • 1 pound fresh green beans, ends snipped
  • 2 cups water
  • 1 tablespoon butter
  • 3 cloves garlic , minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
Directions
  • Bring the water to a boil in a large saucepan and add the fresh beans. Cover and simmer for about 5 minutes or just until the beans are a crisp-tender. Drain and set aside.
  • Melt the butter in the large skillet over medium heat. Saute the garlic in the butter until lightly browned.
  • Add the green beans and season with the salt and pepper. Saute for about 1 or 2 minutes or just until the beans are heated all the way through. The beans should be just slightly browned.
  • Serve immediately while hot.

Ingredients
  • 2 pounds cabbage
  • 3 carrots (medium size)
  • 1/4 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
Directions
  • Remove the wilted, discolored and thick outer leaves of the cabbage and cut the remaining head into quarters. Remove the hard inner core from each quarter.
  • Thinly shred the cabbage to produce approximately 8 cups. Shred carrots and set shredded cabbage and carrots aside.
  • Combine sour cream, mayonnaise, vinegar, sugar, salt, and pepper in a large bowl and whisk until well blended.
  • Add shredded cabbage and carrots. Toss until cabbage and carrots are evenly coated.
  • Let the coleslaw stand at room temperature, uncovered, until cabbage is wilted, approximately 25 to 30 minutes. Toss 1 or 2 times while it is standing.
  • After it is wilted, place in the refrigerator to chill.
  • The coleslaw can be made the day before and refrigerated until ready to use.(A sprinkle of paprika perks up the appearance of the slaw.)

  • CRUST:
  • 1 cup graham cracker crumbs
  • 1/2 cup chopped walnuts or pecans
  • 1 tablespoon sugar
  • 1/4 cup margarine, melted
  • CHEESECAKE:
  • 2 packages cream cheese, softened (8 ounce pkg)
  • 1 can sweetened condensed milk
  • 1/4 cup lemon juice
  • 3 eggs
  • 1/2 cup chocolate chips
  • 1 jar caramel topping
  • 1/2 cup walnuts or pecans, chopped
Directions
  • Mix cracker crumbs, sugar, nuts and margarine. Press into 9-inch spring form or cake pan. Set aside.
  • Blend cream cheese until creamy. Mix in sweetened condensed milk and lemon juice; then add eggs and mix. Pour over crust.
  • Sprinkle the chocolate chips over the cream cheese layer and allow them to sink.
  • Bake at 300° for 50-55 minutes.
  • Remove and drizzle caramel topping over the top and sprinkle with chopped nuts. Bake for additional five minutes. Remove, cool, and refrigerate.
